Love your videos. I did "regular" keto for several years, but couldn't manage all the meat. I am mostly vegan now, but interested in trying vegan keto. I have noticed that you don't always have protein at a meal. I would love a video about that, and your thoughts, experiences on protein and vegan keto.
There is some amount of protein in the bun as its made with almond and coconut flour. It may also contain vital wheat gluten which is also a protein. I haven't seen the recipe but there may also be flaxseeds in the bun too which are another source of protein.
I absolutely agree about celeriac and was so excited to see a new idea for it. I make a celeriac mash that is better than any mashed potatoe. Thanks for being so amazing!!!
If there is one thing I love about your channel is how you make vegetarian/vegan meals so simple and NOT scary LOL. I can't tell you how many times I've passed up certain foods at the market thinking I wasn't sure what to do with them yet here you prepare these foods in an approachable and easy way and celeriac has definitely been one of them. When I look upon my vegetarian ways from 20 years ago, I realize how much I missed out by not being more open-minded about certain foods (hello, konjac! lol). You inspire me, thank you!
Love celery root but never thought making it this way! I highly recommend grated celery root and a carrot mixed with some vegan mayo and chopped walnuts. It's a delicious salad!
Around here Celeriac or celery root is $4 a pound so I only buy it occasionally. I’ve made latkes at holiday time with it and they are delicious. I’ve also made celery root kugel with it. Really good. The hash browns looks delicious.

Wow! To use the celeriac as a way to make miniature hashbrowns is absolutely brilliant. Tomorrow I will attempt to make the crusty buns again. The first batch definitely didn't have enough water because they turned out hard. I will try and give it more water this time. Love your show, you are amazing with your ingredients. Yes, the water adjustment and the dough texture is the key with these buns. But once you work out the right amount for the flour you use it's a breath to make x
Celeriac is amazing and also makes really good hash browns mixed 50/50 with potatoes. It's surprisingly easy to grow in the garden, although it takes a long time to mature.

I adore celeriac! We have come to love it pureed even more than our beloved mashed potatoes. And you're right, when it is cooked properly, it has a lovely, subtle aroma and flavor. I'll have to try these hash browns next.

Thank you for the recipe. I just made the celeriac hash browns for lunch. They were super delicious. Celeriac can be hard to find in the US, but one grocery chain in my city carries it. The ones I bought were a little sad looking. Hopefully if I keep buying them the quality will become fresher.

Love your recipes. Have to try this, Stainless steel pans don’t stick if you do this. Heat your pan on high flame, put in which ever oil/butter/lard you are using and when melted coat the saucepan well and remove from the heat. When the pan has cooled a little add your food - if it sticks the pan is still too hot, then cook on low heat.
The frying pan can also be seasoned and made non stick by frying onions or leeks and wiping down rather than washing. It usually lasts a month or so depending on how many times the pan is used.
I love your videos and am wondering if you have any cook book recipes out please. I would love to collect your cook books and feel confident to continue with Keto for my health. Thank you!

Made these today, I'm not vegan but I don't eat meat. However, I have intolerences to wheat and nightshade vegetables and found these to be a very tasty alternative to potato hashbrowns. Thankyou.
It's also delicious raw, grated and mixed with homemade mayonnaise! "celery remoulade". By the way, is there any chance you could teach us how to possibly eat nattokinase? :)

Remoulade, that is a type of mayonnaise, with chopped, hard-boiled eggs and finely chopped capers, with, I believe, finely chopped pickled gurkens (wether salty or or delicate?) and it is a bit sweeter than mayonnaise? I do not use sugar in my homemade mayonnaise since over 30 years! And until now no-one has complained! Regards to all!
Ps. To my comment about REMOULADE. There is a salad using celeriac root, apple which is finely cut into small pieces, mayonnaise, and chopped walnuts. I think it is called WALDORF SALAD. I give a dash of lemon juice to avoid the celeriac and apple getting brown. I get all the ingredients ready in a bowl, with the dash of lemon juice. Then, grate the celeriac and mix with the ingredients. Then cut /grate (optional) the apple and toss this in the bowl. Not preparing everything avoids any ingredients getting unseeingly brown! I'm looking forward to trying this, looks delicious! I actually wanted to comment on something I've seen you do in past videos, which is to regularly call Truvia "erythritol", which is incorrect. Truvia does have erythritol in it, but its primary ingredient is stevia. Stevia is a plant while erythritol is a sugar alcohol, not the same! Calling Truvia a stevia/erythritol blend would be more accurate. I actually prefer the NOW brand "Better Stevia" which is organic and pure stevia.
This is my fave potato substitute, but it can be difficult to get your hands on them. I wish someone would give tips on making fries out of them, though. I have never been able to make really crispy homemade fries out of potatoes, and I'm wondering if it's possible with celeriac?

I make a keto pureed vegetable soup using fennel, zucchini and cauliflower along with leeks (ideally) or another aromatic. Roast sliced fennel, chunks of zucchini, sliced leeks (use the dark green parts too) and cauliflower florets. (Last time I used about 8 oz of each (fennel/cauli/zuke) plus maybe a half cup of the sliced leeks. Roast for at least 30 - 45 minutes (olive oil, salt, pepper). When tender, transfer to a pot large enough to hold all the veggies plus cover them with broth (veggie or chicken but I prefer veggie and I'm not vegan). Simmer gently, puree with an immersion blender or in a high speed blender (batches) until very smooth. Best flavor is after cooking, chilling overnight and reheating.
You can up the nutrition by blending in some tahini (so good!) and/or silken tofu, sprinkling pumpkin seeds on top, etc. - without adding appreciably to the carbs. Chunks of fresh ginger added to the pot (ending up in the puree) also make the final soup 😋
This recipe should work with all low carb root vegetables. Depends on what's available to you, jicama, rutabaga(swede), kohlrabi or even daikon radish should be fine.
Jicama has the texture of a crisp radish and is slightly translucent when sliced thinly. It is thin-skinned and looks like a round potato. Celeriac is the root of a specific type of celery--it's very rooty and gnarly until you trim it, and the skin is tough and thick. The inside is creamy white and has a texture that's more like a raw potato. You can cook and cream/puree a celeriac like you do with potatoes, but jicamas are more crispy and delicate and don't really soften when cooked.
They are different vegetables. Rutabaga is a Brassica napus originated as a hybrid between the cabbage and the turnip. Celeriac is the root of a certain type of celery, grown for it bulbous root system. They can be used interchangeably in recipes, but their flavors are quite different.

Great keto root vegetable! I often use Daikon, but have to try this. Celeriac "potato" pancakes seems like a good thing to try as well.
It's better than daikon, imo, very close to the taste and texture of an actual potato.

I've planted a whole heap of celeriac in my garden because I had difficulty finding it in the shops. Have to wait a bit but it will be worth it.

I will have to try this for my for my faux potato pancakes that I currently use cauliflower. This looks a lot more like a shredded potato.

It's stronger raw (though I like it), but it's very mild and mellow when cooked.

I saw celeriac fries may uears ago. You have to add seasonings to make it flavorful. There are many dishes you can make with this root vegetable.
