  • We take on a unique fusion, blending the classic elements of Hainanese chicken rice into a paella format. Our recipe uses garlic, ginger, and scallion to craft a distinctive sofrito, while separately cooking chicken breast and legs to ensure perfect texture and to develop a rich, gelatinous cooking liquid. True to Hainanese chicken rice, we complement our dish with three essential condiments: ginger and scallion sauce, hot sauce, and sweet soy sauce, each enhancing the flavour profile of this innovative dish.

    Great idea once again. Not sure about hainanese rice part since for me it is quite a refreshing bright and flavorful dish without much "fried" flavor but i like the idea of imparting other dishes into other dishes. I guess ill try to make some kind of kofta paella inspired by your videos.
