I am old school. I use lava rocks with my gas grill for flavor. The trend now is anti-lava rock because it is claimed that they are prone to bacteria growth, etc, making the food unhygienic which may cause illness. Grills reach a temperature of 300-400 degrees on average when grilling. At these temperatures bacteria and any germs you may be concerned about are destroyed. I wish they would come back with lava rock gas grills. The new gas grills are like cooking on your gas stove. But I drive a "1996 Buick station wagon" rather than a truck-like SUV, and my 95 yr old mother can still get into it :)

I use 6 or 7 firebricks, as found in wood stoves, on the center of my outdoor gas grill grate. They get preheated on high for 10 minutes on the covered 4 burner Brinkman grill, then I bake 16" home made pizzas on them on aluminum pizza pans (one at a time). It bakes them beautifully in about 10-12 minutes just like a professional pizza oven.

Cleaning those ceramic bricks would be good chance to use the little Harbor Freight wire brushes you just reviewed... 😛
