    Great video, Rus! Yes, really nice, looking toys there, man. I think I need one of those jerky slicers in my life. I’ve been pretty sick for the last five days, this is the first food video that I’ve been able to watch. Great job!

    Dang dude, I love that tumbler!!! Very thorough Rus on the "how to" make jerky or sausage!!!! Thanks for taking the time to explain the percentages, this recipe is pro and not for the Betty Crocker Cake mix viewers!!! Jerky looked fantastic!! Ps... I always think my jerky is going to get done sooner than it does also!!!!!!! hahaha

    I've been wanting to make jerky for a long time. These are excellent tips for those of us who would like to venture into making jerky. I got to stay that the instructor/teacher in you really came out in this video Rus. You made it easy to understand even for those of us that kill braincells everyday with our daily beer drinking!       Thanks Kevin! There were a few pieces I cut off of those thicker sections that I sliced with the grain just to compare and as expected they were pretty tough, but I'm glad I did most of them against the grain. So much better and doesn't kill the jaw muscles LOL. Thanks for watching!

    I just on a whim made some jerky a month or so ago out of a brisket flat. It turned out great. Honey powder? Hmm, Ill have to give that a shot next time. Looks amazing!

      Not tender like a good ribeye steak, but tender for jerky. Cutting across the grain makes all the difference and my preferred way. Some people like to cut with the grain, but that is super hard on my teeth and jaw muscles LOL. Thanks for watching Gail!

    Ok, let's clear up the ecoli issues. First most meat that you buy in the store has been handled numerous times by people, second the whole ecoli thing has started with the injection of human feces into crop land due to the amount of expansion into rual america. Also the huge growth of confinement hog farms and the amout of hog waste that getts sprayed into fields is amazing. Hog manure is loaded with ecoli. The crops that are feed to animals are loaded with ecoli. I raise my own feed and animals and am not worried. Yes you are correct with the finshing of the jerky. My problem is the EPA and the FDA won't solve the real problem. Make treatment plants do full filtration and own there own ground to inject the grit and byproducts. The other problem is the amount of septic tanks that that sewer pump guys have lyed to people about how often they need to pump there tanks do to them wanting to make money. I your tank is working properly you will never need to pump it. I can go on and on I have studied this for years and I know the facts.

      Yes I’ve researched this as well, and you are 100 percent correct about how cattle can get the pathogen. Even birds poop can cause E. coli problems in the field. Unfortunately since authorities won’t fix the issue, then people need to be aware of how to kill it in their food before eating it. That’s exactly why I included that into this video.       The jerky ends up being around 1/8” after it’s done. I don’t think I would want it any thinner than that. Thanks for watching Scotty

    Would you ever need to use that last step in any way when making jerky with a dehydrator?

      Actually yes. Certain pathogens can still become heat resistant by slowly coming up to temperature as they dehydrate. Better safe than sorry

    Been wondering where you have been.. I could eat that entire batch of jerky in one sitting! Do you have to do that final step as well if using a dehydrator?

      Yes, because a dehydrator brings the temp up very slowly similar to what I did in the smoker. I would advise you to. I'm still around but I did take a week off from my regular uploads. Thanks for watching!
