I had been gaining weight slowly without bread in my diet. All I can think of was I had allowed corn and potatoes back in my diet and maybe a piece of bread every few weeks or so. I saw your videos and then watched Sue Beckers video and decided to give this a try. I ordered the grain mill and a Bosch mixer. After my first, beautiful if I do say so myself, loaf of freshly milled wheat bread I lost 3 pounds!! And I stopped all cravings. No kidding. I am still new to this and haven’t tried everything but I bake all the loaf breads in our house, just made burger buns and rolls as well. I also bake muffins and keep them in our freezer for a super quick delicious healthy breakfast great on school mornings! I am sold on this! My whole digestion has changed and like I said my cravings are gone!! Thank you for your videos and the time you take to share with all of us! Blessings to you all!

And, in making my own bread - even though I am not yet milling my own grain - I can feel & test the difference in using store-bought 'bread' versus making my own artisan breads. Making my own bread, & eating it, does not give me that high glycemic hit that store-bought chemical filled 'bread'. What I have discovered is every time I eat take out foods, or processed foods, I end up with tummy problems, and other adverse effects. I actually lost some weight when I started milling and baking my own bread. My hubby has even commented on how much he likes the bread now than before. I have a Nutrimill grain mill, and I am waiting for the Wondermill Jr. Deluxe to come in case we are out of power. One other thing I have experienced is a reduction in hunger issues. I want to have good food, and cook from scratch so to speak, but since I am eating real bread, I have no desire to eat things not beneficial.

Wheat and barley are absolutely considered food in the Bible (as a half-German, it always annoys me that rye is not mentioned!).
But of course they were talking about einkorn, not super-hybridized modern wheat.
From childhood, I have always loved rye bread, and in recent years have been able to purchase bread made from ONLY rye flour, starter, and salt. Miraculously, it doesn’t have a hard crust. Haven’t quite figured out how they do that-they may use one of those oriental methods by adding boiling water to part of the flour. Maybe you can figure it out.
Whole rye bread-buttered-is the ideal platform for an open-faced liver sausage sandwich.
Swedish-style rye crispbread called WASA bread is available in a sourdough version.
My husband has pretty much given up bread to keep his body fat down. He’s been very successful, so if I’m having grain products like rye-einkorn pancakes (crepes) prepared in lard (no sweetener-I enjoy them plain and only fix them once or twice a year. They are very eggy. I also manage to consume the whole-grain version of Ezekiel English muffins, which contain few carbs.
My family has a great recipe for rinderwurst (beef sausage), a winter breakfast food that includes steel-cut oatmeal.
I’m glad to find your channel-I hope you experiment with rye bread.🥰

I loved the flavor but it was so much more filling. I've gotten used to that now. At one point, I needed to bake another loaf but didn't have the time and I did need to do some shopping so I went ahead and picked up a loaf of the 100% wheat bread I had been buying off the shelf before I started baking my own, It was "terrible!!" It used to be my favorite but compared to the home made bread from fresh milled wheat, there was just no comparison.

    GREAT SUBJECT!
I come from a family of German farmers who lost their 7 generation farm forever.... during WWII. Rye is what grew in the worst of soil and the coldest of climates.... even -30F.... it fed the masses in times of famine and war. Bread for the poor was made more from rye than wheat. It's also lower on the glycemic index and is recommended for diabetics. I make 100% sourdough rye breads, pizza crusts, rye sticks, flat breads, pesto monkey bread, etc. with soaked seeds like sunflower and pumpkin, sprouted buckwheat, caraway, and fresh herbs like rosemary, thyme, thai basil and oh, so much more!
I was gluten free for years and that along with green juicing and Qigong helped me to overcome some serious health issues including end-stage Lyme's disease and Bell's Palsy. I'm back to sourdough rye and have wheat berries that need to be ground up.... but I just can't bring myself to do it, lol.... once you go rye, there's no going back is what I've found out in the last two years (since Covid - my starter is called Little Annie or Annie Oakley, depending on my mood).
Hereditary Spastic Paraplegia runs in my family (4 out of 7 siblings have it) and one of my sisters went gluten free because of the "Wheat Belly Debate". I wonder if she gave up processed foods, animals and their products, and in general cleaned up her intake and environment, would she get better and still enjoy the "staff of life" that you are so describing?
BLESSINGS 2U for addressing the Wheat Belly Debate!!!!! It's a topic that leads to other topics for those looking to heal. I could add sooooo much more to this subject. Health and Wisdom should be passed on to each generation. Knowledge is Power and Be the Change come to mind. 💜💚💜💚💜

A lot of people don't even think about soy and corn flour. Soy disrupts our hormones and can cause many more problems being digested without fermentation. Soy is one of the most genetically modified grains. Corn flour is just a high starch flour, humans can't digest corn unless it is nixtamilized to release all the vitamins and make it digestable. Corn is another highly genetically modified grain. And you are right about store bought bread. But there are beginning to be a lot of good small artisan bakeries that respect grain and who bake in a responsible manner. You just have to look for them, if you can't or don't want to bake your own bread.

    Good video!
Let me add a few thoughts, in general and as a type 2 diabetic:
    1. I could be wrong but, from what I have read, the issue with normal flour and "glutin intolerance" has more to do with glysophate being sprayed on wheat. I'm not saying that's all it is, but my understanding is that it *is* a factor. Glysophate.
    2. As a diabetic, part of what I am concerned about is *net carbs*. Net carbs is what you have when you subtract fibrous carbs from the total carb count. And, the more fiber you remove from flour, the higher the net carb count. And, as you referred to the glycemic index, this will make it (bread, flour) higher on the glycemic index.
I have just begun food storage. Rice, beans, grits, steel cut oats and now I have ordered hard red and soft white wheat berries. I look forward to eating cleaner with the wheat berries.
I don't place lots of credence on the medical community. Always double check everything they say you need. I recently saw my family doctor and he agreed, for example, that Zinc and Magnesium is effective for an enlarged prostate. The (not so) funny thing is, the never tell you to just take those things, rather they push big pharma meds like Finasteride which with many people (such as mine) don't even help.
I was once told that I had Hashimoto's thyroiditis and that my thyroid would die in five years. Wrong. It's still here.
I have learned to do as much of my own research from *solid* sources as I can, to be able to give myself the best care by avoiding bad advice, even from the "experts".
***Question: I'm looking for a good grain mill that won't cost an arm and a leg. One that will work well and can be used with a motor or manually should we have blackouts. Wondering if you have a recommendation.
    Thank you.
    Tim

So...do you actually have Hashi's? Unfortunately, I do and have learned about molecular mimicry and why we shouldn't eat gluten. Curious about how you're treating your condition.

I have Hashimotos and I have found the best diet that works well in my situation is the Paleo diet and I know it has no Gluten or dairy, but it's helping me so much and my numbers go way down when I have stayed on it regularly. I use other flours like Almond Flour, Arrowroot Powder, Coconut flour and stuff like that. It's simple, but I may end up trying some Sourdough bread a little and see how that goes. I start itching so much down my throat and all over if I have anything so I guess it's not good for me and my mouth almost shut once too, luckily I had a Gluten Tablet that saved me. I have understood it's not going to help me at this point, oh well! Thanks for the question and if you have anymore questions please let me know? I am learning about it as much as possible since I love being natural as much as possible, I only take Armour Thyroid for my Hashimotos situation and it's about as natural with it I will get. Thanks and take care!

Definitely a difference with fake bread and real bread. My gut is unhappy. I have had weeks of not baking of my own bread because the Mill & Mix was in the basement and on a surface that is not sturdy enough for the mixer.
I just got it moved up to the pantry to be able to use the large attached mixer, instead of my Kitchenaid mixer.
My body has been craving real bread for the last three weeks. My gut will be on the mend/happy in the next few hours.

I dropped all processed foods and started grinding my own flour. The problem with all the factory made foods is the insulin spike you get from eating then crashing a few hours later (constantly eating). Food is too quickly absorbed and our bodies are not designed for that pace of digestion.

At the turn of the 20th century flour was typically adulterated (to add volume) with things like chalk, arsenic, even sawdust, which caused a lot of illnesses amongst the poorer classes. I suspect that nowadays it’s the abundant use of glyphosate which is responsible for most intestinal sensitivities related to wheat products. Your best bet is to find the most trustworthy organic growers of wheat you can and buy directly from them (however much you can afford to in bulk).

I just made my first loaf of bread today made with hard white wheat berries. That first slice was so pleasant, better than anything I've ever had from a restaurant. To add to the gluten argument I would add the argument that most all wheat now includes roundup as an additive to the soil around the wheat and I believe this has more to do with the gluten intolerance more so than the gluten and also why many foods in America are harmful instead of being nutritional

hey there can you speak more to the point that you made at minute 12? My understanding is that the reason that whole grain berries are lower on the glycemic index is only b/c they are not yet ground into a flour. And that once we do grind them (or ANY type of food at all) it becomes much more quickly digestible thus does spike blood sugar quite quick still. This occurs with fruit and veggies smoothies as well. Pulverized foods are more quickly digested then whole form foods b/c of course the body has less breaking down to do.

    • @GrainsandGrit
      @GrainsandGrit  Год назад +1

The amount of bran (fiber) in the flour is what determines the glycemic index. Everything we eat we grind with our teeth, so everything would have a high glycemic index when we chewed it. Whole-grain wheat flour has a much lower glycemic index than that white powder they sell in stores.

    • @rachaelmcculley712
      @rachaelmcculley712 Год назад

@GrainsandGrit I really appreciate your response!! Thank you! From reading other places, it does seem like there is still a difference b/t pulverize food and chewing it but absolutely the amount of fiber in a food really does slow down its absorption thus spiking blood sugar less so thank you for that reminder.
I am loving your videos and your strong faith in Christ Jesus! Hallelujah for finding your work on here!

I had a hard time to make bread initially. That was very disappointing . But after few times by trial and error , I started having more control on baking bread. I made my own servings of ingredients. It worked out great. As an example .. I always use 1/4 th of the yeast mentioned in recipe. I started adding home made malt powder. The bread taste far better than store bought bread . And my family love home made bread. That way I save money and , cut down all preservatives, GMO garbage consumption from the store bought bread. You don't have to give up white bread to cure diabetes. You might control the portion and fill up your plate with more natural raw food.
P.S Store bought bread doesn't catch fungus rather dry out . why ? You know the answer.
