- Channel 4 (More4), the TV station in the UK, presents the series "Ottolenghi's Mediterranean Island Feast". In this episode (first broadcast 21 November 2013) Yotam Ottolenghi visits Crete and explores its rich and complex culinary history.
In the ancient capital of Heraklion, Yotam makes a variation of the Cretan meze dakos, a marriage of tomatoes, crumbled feta, olives and oregano. In the fishing port of Agios Nikolaos, he marries octopus marinaded in wine with tender baby squid, stuffed with tomatoes and okra. On a trip inland, Yotam uses feta for a cheesecake with a ripe cherry compote. He also prepares a feast of spit-roasted pork souvlaki, served with his twist on tzatziki.

I must say that as a Greek and as a cook myself I was impressed by the dishes Yotam created combining Greek and middle eastern ingredients even the dessert with the feta cheese. He is a very creative cook the dishes looked delicious.
I really enjoy myself watching his shows in Australia. I love the food he cooks, and I find him very friendly with everybody, wherever he goes.I learned so much about other cultures. Thank you so much for sharing this.

i like it that the herbs are in bags. easily thrown away rather than a hard plastic container. my desire to speak with boldness tells me. that we need to get rid of containers. ive been thinking of turning off my refrigerator. something ive learned from watching these shows from these areas of the world. is that fresh and cooked that day may be a better way to go. especially if im looking to have a smaller electric bill. so i can pay my bills since ive been unemployed recently. thank you for the wonderful learning and thank you for visiting the people i love learning about them.

I lived in this region of the world for a time, ie Syria, and just love all of this food especially the vegetarian ones as I'm a veggi. I've always been afraid of cooking ocra but perhaps I'll give it another go now.

This is the diet my doctor wants me to follow, hence, I am getting as much information that has evolved because certain information has changed (like eat margarine... really?). I wish I was in their country and enjoying the company, the food and the beautiful scenary. Ahhhh!

+Minahh The basic idea is to use traditional ingredients and not processed stuff, and to limit meat and fatty foods.
margarine is used in commercially produced baked or fried products to make it cheaper and stored longer and was introduced as greek food comercially to the world.
Eat FIRST vegetables.
Chick peas lentils then fresh whole grain bread olive oil for oil, fresh seafood white fresh cheese like fetta ; lamb and wine.
Blanched almonds, sesame, spices and lots of herbs.

Hi , i am from Crete . We cook exactly like this but we do Not spit the food . I don't know why they did that . It was a little bit disgusting ...
Mediterranean food is about:
Bread;
Goat Cheese or other type of product sheep's dairy;
Tomatoes;
Olives;
Olive Oil;
Herbs and Spices;
Lamb Meat (in some countries also pork and sausages/salami/ham );
Wine;
Fishes and sea food in general;
Some pastry with flavoring or chesse.

There are very few places like that here, however there's a good yard on the way in to Ammoudara a few minutes west of Heraklion, on the right just before the large supermarket!

I asked the same question. It looks extremely decadent doesn't it!? But I think we can pull that one off by watching the segment again at the time we're ready to make it. I don't think we'd go wrong that way. Let's give it a try!

Hey, on that first dakos recipe, would I be a total barbarian if I just ate it instead of cooking it for 20 minutes? :) It looked fantastic raw! Or would the bread be too hard?
In fact I thought it was kind of barbarian to put it in the oven :) The bread would be just fine because he applied the oil and water mixture plus the tomato juice.
40:27 it's called PORK KALAMAKI not souvlaki....souvlaki consists of pieces of grilled meat wraped around a pita pie along with tomatoes,onions,tzatziki,parsley,paprika and optional potatoe chips...it takes it's name from the souvla which is the grill....any meat that's just pierced through a stick and then bbq'ed on each side is called kalamaki...so the correct name is pork kalamaki,chicken kalamaki etc etc and that's the proper way to ask for it whenever you visit greece regardless of what some idiots might tell you

ive been praying for the paradise to get here. and spreading the goodnews of GODS kingdom. the bible says we should do it with boldness. in ephesians chapter 6 it says, open your mouth and speak with boldness about the goodnews. and that we can save both ourselves and those who listen to us. and that it makes our hope more sure. also the women proclaiming the goodnews are a large army. my hope is that other people can spread this goodnews. revelation 21:3,4 says look the tent of GOD is with mankind he will be with them and they will be his peoples. he will wipe out every tear from their eyes and death will be no more, neither will mourning nor outcry or pain be anymore the former things have passed away. im so looking forward to this. and i wonder what people that have been knowing this for so long in the areas of the bible lands and there abouts think about each day. and how long weve been waiting for this system to end. yall have like an old world style and way of being and living, that has clung to you, and your alls hope for the future. we could learn alot from yall. i would rekon thats why we have the bible. so we can learn how to be an awake person.

Ummmmm hello Crete has been one of the most secluded islands of Greece/Europe so the Cretans had to live off of the island itself and that is why Greece today is well known for its healthy mediterranean lifestyle cooking!!!!!!!!

1. its wine so most of the bacteria are killed on the spot cause of the alcohol
2. if anything survives it gets killed by the salt
3. if by some miracle some bacteria survives the alcohol and the salt, the 2.5 hours of cooking it in the fire will kill it.
