- Italian Wedding Soup is the ultimate in Italian comfort food. It's made with chicken stock, carrots, celery, onion pasta and tasty cheesy meatballs. When it rains, and your house is nice and cosy, this is the soup to make. Why a wedding soup? It's nothing to do with weddings, but it is a beautiful marriage of meat and vegetables.
When making this soup, please use homemade chicken stock. You don't have to go all out; it can be as simple as throwing a chicken carcass in a pot of water and simmering it for 90 minutes. You will never achieve the same depth of flavour with bought stocks or cubes.
I would highly recommend doubling the quantity and freezing half. This is the sort of soup you will crave many times once you've tasted it. Knowing there's this soup waiting for you when you come back from a trip late in the day will make your day!
I added provolone cheese for little bursts of flavour; it is optional but recommended. Otherwise, just grate a little more pecorino. You could also use Parmesan cheese.
Use the small pasta you like, anything from Ditalini, cavatelli, fusilli, orzo, pastina etc. If you're going to eat all the soup the same day, you can cook it directly in the pot. Otherwise, cook them separate so they remain nice and al dente.
For the greens, it's best to use escarole or curly endives. They are loaded with vitamins making this soup healthy. The flavour works magically for soups.

I remember eating endive as a salad growing up. We had pasta twice a week (my dad was from Sicily). Wasn't too keen on endive because it had a bitter taste to my sensitive taste buds, but I now enjoy it as an adult. I'll be making this for my wife & I once the weather cools down a bit. Why renew one's vows when you can just celebrate your happy life with the woman you married? Thanks Joel.

Most of the ingredients are available in cities like Delhi, Mumbai, Hyderabad and Bengaluru. Maybe not in readily available in other places.

You don’t get the greens ? Or pork ? With your weather all greens should be available! There is really noting special in that soup 🤷🏼♀️🤷🏼♀️I didn’t have pork in freezer so used turkeys ground 😯and I’m low low carb ( diabetic ) so used Cauliflower rice instead noodle ! Really nothing like his soup but I love watching him and his dog 🐕

grew up in an Italian house with mother that made this every winter.
Italians dont put pasta in wedding soup. They make a omelet using parsley parmesan black pepper then dice the omelet into small,squares and drop in at end.
It was good that you didnt cook pasta in soup but added at end.
Pasta is only good for one day and that soup can be refrigerated for a week without pasta

Loved how you served the pasta separate and then added the cheese. Brilliant. Without homemade chicken stock, I have found the following a palatable substitute: use canned stock, 1/2 half chicken and 1/2 beef. In fact, whenever I now use canned chicken stock, I add a bit of canned beef stock. It just does "something" for the all-around taste without being "tinny." Thanks for the post. And hats off to Australia and its fight for freedom! We must all stick together!

I've always wondered why they eat this soup at weddings 😅, but I found out that it's a happy marriage of meatballs and vegetables, I loved this action that brings them together in eternal marriage,
I can cook it for friends on these rainy and windy days... I almost feel like my toes no longer follow my body because of this heaviest frost ever here,
