Thank you for your kind words. I make my broth by placing chicken pieces, two to three pounds, (mostly chicken wings and chicken neck bones) in a large pot of water. I add onion, celery, carrot, bay leaf, garlic, parsley, pepper and salt. bring it to a boil, then simmer for an hour. When it cools, I run the broth through a fine sieve so that all I have is clear broth. Store the broth in the fridge for a couple of days or in the freezer up to a month.
I remember my nonna making delicious soup for us. She would usually use oxtails or beef neck bones and she would keep the vegetables whole, potatoes, carrots, celery stalks, and so on. My father is from northern Italy, and every meal had to start with soup, except for Friday when we would start with spaghetti and homemade sauce. My grandparents would join my parents and three sisters for dinner every night at our house, and I remember my mama cutting up the vegetables in the soup for everyone. It was a ritual, and I remember the feeling of everyone enjoying time together at the end of each day. I am starting to cry, missing those happy days and my grandparents and parents. When I get to see them again, I hope my nonna's soup will be our first course, celebrating being together again. I always order Italian wedding soup at Italian restaurants if it's on the menu, and I will try this recipe. It sounds delicious like all of nonna's recipes. I make your Mearball soup all the time. Make a huge pot then freeze it in cotiner,then use it when I feel like eating soup. My grown daughters and my grandchildren absolutely love this soup. I dont put the carrots in as they get to soft. I make them in a little chicken broth to cook then put them in the soup when it is though the soup .so delicious. Thank for cooking for us. That's how I make it. I do use spinach because escarole is almost impossible to find here. { and I love escarole }. I use ancini d' pepe" for the pasta. { it's also hard to find here in Texas } This soup is always served at my house at holiday time. Everyone seems to like it. I also love slopping up the broth with some toasted / buttered Italian bread..........As a kid, this was my favorite part of eating this soup. That broth.......! After watching this,......maybe today would be a good day to make some. This sweet lady must be from the same parts of Italy as my family. The way she prepares them is exactly how my family prepared them when I was a kid. That doesn't happen all the time, but I'm watching my childhood dishes being made as we did long ago. And then there were the family / friends get togethers.. My gosh...! Food galore. Desserts, pastas, seafood, steaks, you name it, ( my Dad and some of the neighbors one fourth of July weekend, decided a pig roast sounded good. .. Spur of the moment...! Next thing you know, all the men are rigging up a spit, cinder blocks, and an all weekend party was born. All the ladies started cooking all kinds of veggies, and salads...! And yes , the beer and the booze flowed like water. Friday night till Sunday afternoon.....! } All us kids on the block still remember this party 40yrs later....! Talk about making memories.....! Like you, I feel sorry for kids, { and plenty of millennials } who have never tasted food such as what this lady has prepared. Finding places to eat this kind of food is possible, but you still miss the warmth of what I call,......................."the family element". The lady in this video is the perfect example of cooking with love. In her pizza video, she cooks several because, some in the family like them with more of this, and more of that. Her goal - to make everyone happy. That's why I cook my butt off to this day. Making those memories. Have a nice day Christine.

My mother passed in 2011, she was an amazing cook but no handwritten recipes existed. I came across your videos a few years ago, and your recipes brought back memories of how my mom cooked. That's how I make it. I do use spinach because escarole is almost impossible to find here. { and I love escarole }. I use ancini d' pepe" for the pasta. { it's also hard to find here in Texas } This soup is always served at my house at holiday time. Everyone seems to like it. I also love slopping up the broth with some toasted / buttered Italian bread..........As a kid, this was my favorite part of eating this soup. That broth.......! After watching this,......maybe today would be a good day to make some. This sweet lady must be from the same parts of Italy as my family. The way she prepares them is exactly how my family prepared them when I was a kid. That doesn't happen all the time, but I'm watching my childhood dishes being made as we did long ago. Thank-you,...Thank-you.

@@christinebailey9935 ...........Eating out in the 60's was a huge deal for us kids. { 1960's early 70's suburbs } We just didn't do that very often. But,...........we made all kinds of great food. And then there were the family / friends get togethers.. My gosh...! Food galore. Desserts, pastas, seafood, steaks, you name it, ( my Dad and some of the neighbors one fourth of July weekend, decided a pig roast sounded good. .. Spur of the moment...! Next thing you know, all the men are rigging up a spit, cinder blocks, and an all weekend party was born. All the ladies started cooking all kinds of veggies, and salads...! And yes , the beer and the booze flowed like water. Friday night till Sunday afternoon.....! } All us kids on the block still remember this party 40yrs later....! Talk about making memories.....! Like you, I feel sorry for kids, { and plenty of millennials } who have never tasted food such as what this lady has prepared. Finding places to eat this kind of food is possible, but you still miss the warmth of what I call,......................."the family element". The lady in this video is the perfect example of cooking with love. In her pizza video, she cooks several because, some in the family like them with more of this, and more of that. Her goal - to make everyone happy. That's why I cook my butt off to this day. Making those memories. Have a nice day Christine.

Grazie Nonna Gina for all of your amazing recipes. I was born in Satriano, Italy. My family came to America in 1973, basically my mother’s entire side of the family came over. My mother passed in 2011, she was an amazing cook but no handwritten recipes existed. I came across your videos a few years ago, and your recipes brought back memories of how my mom cooked. Your recipes mean so much and I can’t thank you enough for generously sharing them. I also want to mention that you remind me so much of my mother’s two sisters, my Zia Mariangela and Zia Rosa, which warms my heart.
