My personal experience is that knorr bouillon cubes have additives that give a taste you may not expect from a broth, notably some acidic taste reminiscent of lemon, which I don‘t like. I think the reason homemade broth is better is that you have more control, and tastes from herbs can be kept fresh, such as dill or coriander.

My grandma made her wedding soup with both tiiiiny meatballs and chopped up chicken. Also she made these little chunks of baked cheese that were like fun little sponges spread through the soup. My aunt and cousin have carried down the recipe perfectly, thank goodness.
Ian, I have the best recipe for those little spongy cheesy soup croutons. Your grandma's recipe sounds like my grandma's recipe, the shredded chicken with the teeny meatballs and she used pastina for the pasta.

Beautiful recipe, thanks Adam. Regarding bay leaves: I live in downtown L.A where there are tons of great Mexican and Latin American products in the grocery store. I started buying what I assume is "Mexican bay leaf", although it could just be regular bay leaves that just happen to be sold in the same aisle as Mexican spices. I get an amazing astringent note from these things and have started using them regularly in all my heartier soups and stews. So if anyone out there is thinking "bay leaves: what's the point?" I would encourage you to try the Mexican/Latin American kind.
Hey, Adam! I have been watching your videos for a long long time and I have been enjoying them quite a bit! I am from Bulgaria, which is an Eastern European country, and I know that you are very curious and intelligent, so... We have this recipe here, that is something very close to this soup. You start by sweating onions in a big pot, then adding carrots and a little bit of red pepper. You then proceed to add stock or water and make vegetable stock. Maybe put in a bay leave or two. You wait for about an hour for the souo to simmer. You form meatballs maybe three times smaller than yours from 60/40 beef to pork grind meat, only seasoned with salt and pepper and you roll them in flour. You put them in the soup, adding thyme and other herbs you might like and wait for them to get ready. When all ingredients are almost ready you put Vermicelli in then you make a thickener with yogurt and eggs. You put the thickener in the soup, while off the gas, while stirring. Then you put some chopped parsley and lemon juice. One of my favorite soups of all time. By the way, amazing chicken stock recipe!!!
Replicated with some twists, tastes great! To make meatballs more tender and less fragile, 1 or 2 tablespoon of starch can be added. Stiring the mince in one direction for 1 or 2 min until it's sticky also helps with the texture. Those are some technique when making Chinese style meatball.
This is amazing. This dish is the first thing I learned to make. My stepmother is pure Sicilian and proud of cooking and taught me to make many traditional Sicilian dishes. I love seeing someone else make it. It’s a little different that what she taught me but basically the same.
My family makes this soup with escarole as our greens, and that’s also what we call the soup: Escarole soup, or simply ‘scarole as my very old school south philly Italian grandfather would say. We also do small meatballs with the meat trifecta in addition to shredded chicken, there’s no pasta, and there is also an egg and pecorino cheese mixture that gets mixed in at the very end, some of which curdles and some stays fluid, and creates a really nice texture and flavor. Probably a thousand variations to this from family to family I’d think. Nice video.
I just made this per your directions. Used mushrooms instead of celery and lentils instead of pasta since my wife has a gluten allergy. It was fantastic. Lentils obviously made it a thicker, darker soup, but it was lovely nonetheless!

Growing up, adding little meatballs to chicken soup was the norm in my house. I didn't hear this being called "wedding soup" until the 2000's. This is kind of like never really hearing the term pasta until around the same time; before this we always just ate "macaroni" on Sunday's.
I've made this comment before, but I find myself watching more and more of your videos as the school year approaches because your recipes are just so good for students, busy parents, and any number of modern folk to throw in the freezer and forget about. Even when you do chef-y things, they're in the name of not thinking about food longer than you have to to get something nutritious.
Hey Adam I tried this meal yesterday and it was fantastic! I accidentally added the super small couscous and it absorbed all of the water and turned it closer to Italian wedding porridge but still, the flavors were amazing and everyone was very happy with it. Thanks for the video!
One thing we do at my house is using brown rice or farro instead of pasta. They'll stay toothsome instead of going mushy like white rice or pasta and they've got lots of fiber while still functioning as a carb. We also let some fennel seed boil in the stock when we put in the hard veggies to make the chicken sausage seem more like italian sausage.
Such a great recipe. Though out of laziness and time saving, instead of rolling the meat into balls, I press it into a cookie sheet and bake it. Then I cut it into bite sized cubes and shovel it off with a spatula. When I have too much meat for a batch of soup, I cut some of the meat sheet into hoagie size rectangles for meatball subs that won't have attempted escapees.
We like our soup broth-y, so I now pre cook the grains or pasta in a a separate pot of water then add it to the soup towards the end. You can add some of the cooking liquid into the soup if you wish. It is an extra step, but pre-cooking controls the thickening and your pot of soup doesn't become more like a stew, particularly if it's not going to be eaten right away. I often have leftover cooked rice or pasta that needs using up . . . a combo of both works too.
At first, I thought Adam was an alcoholic for how much wine he uses in his food (I know the alcohol cooks off), then I deglazed some chicken for use in a matzah ball soup with some wine and good god was it the best soup I've ever made, never going back to boring flavored soups.

What I did last Christmas, when dinner was over Zoom thanks to the plague: Ham Steak: precooked single-serving, blotted dry and seared on the stovetop. Served with a drizzle of maple syrup. Peas: from frozen, few minutes in the microwave, bit of salt and pepper. Mashed potatoes: cut up and left in water ahead of time, then just brought to boil and prepared as usual. Dinner rolls: I made homemade, but you can just buy them at the store. Jello Salad: prepared the previous day.

This is the second Adam Ragusea recipe I've made. This turned out really good. But I did swap out the stock for store bought and the chicken for ground chicken. I know it's not the same thing but I was in a hurry to get dinner on the table. It still turned out really yummy!

I love this soup; can't wait to make it at home. Regarding meatballs, in my attempt to make a gluten-free version, I used mirepoix plus whatever vegetables seemed good for the recipe at the time, all shredded, and coated them with bacon fat and salt, and oven-roasted them. When the veggies were finished and cool, I used them to hold together the meatballs, as well as adding flavor and texture to them. A bit time-consuming, but worth it.

When I think of wedding soup I think of pork, beef, lamb, and possibly veal meatballs, with chicken peices, and kindof gnocchi like dumplings, and sofrito and some fresh herbs Like fresh parsley and fresh herbs in the broth. Its kindof an occasion thing when i have it. This is experience from my dads and grandmas cooking Id say like 3rd or 4th generation italian, grew up and they in a small kinda rural mostly italian immigrant populated town
In Spain we also have Guiso de novia (Brides stew) that is basically a stew with meatballs. It cannot be a coincidence, maybe it was originally a roman dish?
Lord Muhehe you are right. It's made with beef stock and as a special bonus there are also pancakes that are cut into thin slices used instead of noodles.
As for stock I always take leftover bones from Buffalo Wild Wings or other wing oriented restaurants- they lend their flavorings to the stock and is simply delicious.
In Germany this is called "Hochzeitssuppe" > wedding soup It is usually a broth (not necessarily chicken) with diced vegetables (carrots, white asparagus, celery root, etc.), meatballs (again, not necessarily chicken) and several types of dumplings (some examples are liver dumplings, semolina dumplings, royale dumplings). But no greens - at least I haven't seen it with it! Though the recipes vary wildly from region to region! As far as I can tell, it is called wedding soup, as it is an easy - but delicious - soup, that can be made for big groups of people - just like the ones you have at a wedding :). Depending on the region, it is a must to have the local variation of this soup at your wedding. Basically, the more traditional a region is, the more likely you will find it at a wedding in that region...

Bay leaves’ flavor is mild. It’s better when it’s fresh not dried. A use for bay leaves I like is in tea. I boil the leaves for a few minutes until I can smell them then use that water to make black tea.

I know this video is a few months old now but I figured I'd leave a comment for posterity's sake -- I made this recipe about a month ago with storebought meatballs and no pasta (keto diet) and I just wanted to say it was absolutely incredible. Thank you for introducing me to such a wonderful soup recipe! My Dad and I both loved it and I'll definitely make it again.
Interesting. We have a similar dish here in southwest Germany: "Verheierte" (translates to "married couple"), which has potatoes and egg noodles ("Spaetzle") in a vegetable soup. There seems to be a global theme of "marrying" different ingredients.

Adam, It's the first time in my life that I actually craved for soup. I'm gonna make it. I wonder if it's good to make the flavors even more robust by caramelizing the onions and carrots instead of poaching them in the stock. It would work like the base of japanese kare which is often caramelized onions and carrots. By the way, please make a video on japanese kare from scratch, it's the best thing ever I promise.

In Indonesia they have similar soup called sup pengantin (bride and bridegroom soup).. It is so similar, chicken (cut or meatballs) based soup with vegetables like carrot, peas, cabbage, with some elbow/spiral macaroni.. Sometimes mushroom (wood ear, champignon or snow fungus) is also added. The only difference is we don't use any dairy products in it. Considering the similarity of concept and name, I wonder if it also brought by Italian descendants in Indonesia...
I don't know of any significant Italian diaspora in Indonesia. Honestly, I'm more tempted to say that it's a very convenient way to use vegetables and meat, especially of the kind farmers would have, so a lot of different cultures came up with it independently. The similarity in name is... curious though, I'll give you that.

There's one ice cream parlor in my city Surabaya called Zangrandi, was established by Italian Zangrandi brothers. While the famous one in Jakarta (our capital City) called Ragusa, was opened by Luigi and Vincenzo Ragusa.. Hey.. I think the pasty texture of meat ground in a food processor actually makes better meat balls than using pre-ground meat. I think it sticks together way better.

One minor suggestion in what was otherwise a perfectly wonderful recipe: Before straining your stock (whether you filter or use egg white - which I'd heard of but never actually seen anyone do) use a separator or simply put it in the fridge for long enough for the fat to solidify and scrape it off the surface. Add it to your meatballs at the same time you add your eggs - it works better than olive oil, and if you get any "particles" with it, nobody will even know - just more flavor.
Hey adam! Just wanna leave a suggestion: I don't think nudging meatballs with a spoon is worth it, even if the spoon is already dirty from something else you're stirring. Use tongs, grab the meatballs and flip them. So much easier and less messy, I have been preaching this now.
meatballs/meatloaf are actually just about the ONLY things that i prefer good old Italian seasoned bread crumbs for, i just enjoy the flavor and texture of them more in this specific application versus panko (which is literally superior for virtually EVERY other application in which a binder such as bread crumbs are needed and/or desirable)

I live in Brazil and can definitely taste bay leaves on pretty much anything! I actually tend to use only one leaf if I’m cooking black beans, for example, due to it changing the flavour completely. When they are dried sometimes it’s even more of a punch. Maybe bay leaves in Latin America are stronger? Does anybody have the same experience?
Haven't tried Brazilian bay leaves, but there's definitely a big regional difference. When I was in France the bay leaves were amazing, while here in the UK they barely have any flavour. You notice the difference as soon as you switch between them. So I think Adam might need to look at different varieties if his aren't doing anything noticeable in his food.
A few years ago my local grocery store had chicken leg quarters on the cheap for months. Sometimes the standard ten-pound bags were as low as $1 though $2.50 was more usual. I’d roast a bagful in a Dutch oven, sloppily pick off most of the cooked meat, and make stock from the remains. I don’t know what caused the price crash.
A tip for splitting leg quarters. When flipped skin side down there is a white line where the leg meets the thigh. If you cut on the leg side of that line, it splits right through the joint like butter.
Hey watching this stock made for the soup reminded of a video from James Hoffman i had seen a while back where he used basically grinded vegetables for his stock instead of rough chunks. this might be something worth exploring. While doing stock in the oven is easier than stock on the stove, an Instant Pot is even easier! If you use the pressure cooking setting for part of the process, it pulls a ton of gelatin from the bones.
Just finished making this, and it definitely was delicious and worth the time. It came out thicker than it should...my excellent cooking showing it true colors which I have no doubt of lol.

Unless it’s a home made style butcher’s stock, most supermarket stocks are much more watery and tasteless than the stuff you would make at home.

My personal experience is that knorr bouillon cubes have additives that give a taste you may not expect from a broth, notably some acidic taste reminiscent of lemon, which I don‘t like. I think the reason homemade broth is better is that you have more control, and tastes from herbs can be kept fresh, such as dill or coriander.
This has been my favorite soup since I was a child. Brings back memories.

My grandma made her wedding soup with both tiiiiny meatballs and chopped up chicken. Also she made these little chunks of baked cheese that were like fun little sponges spread through the soup. My aunt and cousin have carried down the recipe perfectly, thank goodness.
Ian, I have the best recipe for those little spongy cheesy soup croutons. Your grandma's recipe sounds like my grandma's recipe, the shredded chicken with the teeny meatballs and she used pastina for the pasta.
My mother did the same. The meatballs have to fit on the spoon along with some of the pastine.

Beautiful recipe, thanks Adam. Regarding bay leaves: I live in downtown L.A where there are tons of great Mexican and Latin American products in the grocery store. I started buying what I assume is "Mexican bay leaf", although it could just be regular bay leaves that just happen to be sold in the same aisle as Mexican spices. I get an amazing astringent note from these things and have started using them regularly in all my heartier soups and stews. So if anyone out there is thinking "bay leaves: what's the point?" I would encourage you to try the Mexican/Latin American kind.

Hey, Adam! I have been watching your videos for a long long time and I have been enjoying them quite a bit!
I am from Bulgaria, which is an Eastern European country, and I know that you are very curious and intelligent, so...
We have this recipe here, that is something very close to this soup.
You start by sweating onions in a big pot, then adding carrots and a little bit of red pepper. You then proceed to add stock or water and make vegetable stock. Maybe put in a bay leave or two. You wait for about an hour for the souo to simmer.
You form meatballs maybe three times smaller than yours from 60/40 beef to pork grind meat, only seasoned with salt and pepper and you roll them in flour.
You put them in the soup, adding thyme and other herbs you might like and wait for them to get ready.
When all ingredients are almost ready you put Vermicelli in then you make a thickener with yogurt and eggs. You put the thickener in the soup, while off the gas, while stirring.
Then you put some chopped parsley and lemon juice.
One of my favorite soups of all time.
By the way, amazing chicken stock recipe!!!
Replicated with some twists, tastes great! To make meatballs more tender and less fragile, 1 or 2 tablespoon of starch can be added. Stiring the mince in one direction for 1 or 2 min until it's sticky also helps with the texture. Those are some technique when making Chinese style meatball.

This is amazing. This dish is the first thing I learned to make. My stepmother is pure Sicilian and proud of cooking and taught me to make many traditional Sicilian dishes. I love seeing someone else make it. It’s a little different that what she taught me but basically the same.

My family makes this soup with escarole as our greens, and that’s also what we call the soup: Escarole soup, or simply ‘scarole as my very old school south philly Italian grandfather would say.
We also do small meatballs with the meat trifecta in addition to shredded chicken, there’s no pasta, and there is also an egg and pecorino cheese mixture that gets mixed in at the very end, some of which curdles and some stays fluid, and creates a really nice texture and flavor.
Probably a thousand variations to this from family to family I’d think. Nice video.

I just made this per your directions. Used mushrooms instead of celery and lentils instead of pasta since my wife has a gluten allergy. It was fantastic. Lentils obviously made it a thicker, darker soup, but it was lovely nonetheless!

Growing up, adding little meatballs to chicken soup was the norm in my house. I didn't hear this being called "wedding soup" until the 2000's. This is kind of like never really hearing the term pasta until around the same time; before this we always just ate "macaroni" on Sunday's.
I've made this comment before, but I find myself watching more and more of your videos as the school year approaches because your recipes are just so good for students, busy parents, and any number of modern folk to throw in the freezer and forget about. Even when you do chef-y things, they're in the name of not thinking about food longer than you have to to get something nutritious.
Hey Adam I tried this meal yesterday and it was fantastic! I accidentally added the super small couscous and it absorbed all of the water and turned it closer to Italian wedding porridge but still, the flavors were amazing and everyone was very happy with it. Thanks for the video!
My favorite leafy green to put in wedding soup is escarole, much better than kale (too tough) or spinach (which can have a sulphury smell)
One thing we do at my house is using brown rice or farro instead of pasta. They'll stay toothsome instead of going mushy like white rice or pasta and they've got lots of fiber while still functioning as a carb. We also let some fennel seed boil in the stock when we put in the hard veggies to make the chicken sausage seem more like italian sausage.

Such a great recipe. Though out of laziness and time saving, instead of rolling the meat into balls, I press it into a cookie sheet and bake it. Then I cut it into bite sized cubes and shovel it off with a spatula. When I have too much meat for a batch of soup, I cut some of the meat sheet into hoagie size rectangles for meatball subs that won't have attempted escapees.

We like our soup broth-y, so I now pre cook the grains or pasta in a a separate pot of water then add it to the soup towards the end. You can add some of the cooking liquid into the soup if you wish. It is an extra step, but pre-cooking controls the thickening and your pot of soup doesn't become more like a stew, particularly if it's not going to be eaten right away. I often have leftover cooked rice or pasta that needs using up . . . a combo of both works too.
At first, I thought Adam was an alcoholic for how much wine he uses in his food (I know the alcohol cooks off), then I deglazed some chicken for use in a matzah ball soup with some wine and good god was it the best soup I've ever made, never going back to boring flavored soups.
My parents are Italian and I have a love/hate relationship with this soup

What I did last Christmas, when dinner was over Zoom thanks to the plague:
Ham Steak: precooked single-serving, blotted dry and seared on the stovetop. Served with a drizzle of maple syrup.
Peas: from frozen, few minutes in the microwave, bit of salt and pepper.
Mashed potatoes: cut up and left in water ahead of time, then just brought to boil and prepared as usual.
Dinner rolls: I made homemade, but you can just buy them at the store.
Jello Salad: prepared the previous day.

This is the second Adam Ragusea recipe I've made. This turned out really good. But I did swap out the stock for store bought and the chicken for ground chicken. I know it's not the same thing but I was in a hurry to get dinner on the table. It still turned out really yummy!

I love this soup; can't wait to make it at home. Regarding meatballs, in my attempt to make a gluten-free version, I used mirepoix plus whatever vegetables seemed good for the recipe at the time, all shredded, and coated them with bacon fat and salt, and oven-roasted them. When the veggies were finished and cool, I used them to hold together the meatballs, as well as adding flavor and texture to them. A bit time-consuming, but worth it.

When I think of wedding soup I think of pork, beef, lamb, and possibly veal meatballs, with chicken peices, and kindof gnocchi like dumplings, and sofrito and some fresh herbs

Here in Frankonia (part of Bavaria) we have a similar recipe for wedding soup. We use dumplings with liver instead of meat balls. Delicious.
Liver dumplings with chicken stock? In Czechia, they're usually paired with beef stock.
In Spain we also have Guiso de novia (Brides stew) that is basically a stew with meatballs. It cannot be a coincidence, maybe it was originally a roman dish?

Lord Muhehe you are right. It's made with beef stock and as a special bonus there are also pancakes that are cut into thin slices used instead of noodles.
As for stock I always take leftover bones from Buffalo Wild Wings or other wing oriented restaurants- they lend their flavorings to the stock and is simply delicious.
In Germany this is called "Hochzeitssuppe" > wedding soup
It is usually a broth (not necessarily chicken) with diced vegetables (carrots, white asparagus, celery root, etc.), meatballs (again, not necessarily chicken) and several types of dumplings (some examples are liver dumplings, semolina dumplings, royale dumplings). But no greens - at least I haven't seen it with it! Though the recipes vary wildly from region to region!
As far as I can tell, it is called wedding soup, as it is an easy - but delicious - soup, that can be made for big groups of people - just like the ones you have at a wedding :). Depending on the region, it is a must to have the local variation of this soup at your wedding. Basically, the more traditional a region is, the more likely you will find it at a wedding in that region...

Bay leaves’ flavor is mild. It’s better when it’s fresh not dried. A use for bay leaves I like is in tea. I boil the leaves for a few minutes until I can smell them then use that water to make black tea.

I know this video is a few months old now but I figured I'd leave a comment for posterity's sake -- I made this recipe about a month ago with storebought meatballs and no pasta (keto diet) and I just wanted to say it was absolutely incredible. Thank you for introducing me to such a wonderful soup recipe! My Dad and I both loved it and I'll definitely make it again.
Interesting. We have a similar dish here in southwest Germany: "Verheierte" (translates to "married couple"), which has potatoes and egg noodles ("Spaetzle") in a vegetable soup. There seems to be a global theme of "marrying" different ingredients.

Adam, It's the first time in my life that I actually craved for soup. I'm gonna make it. I wonder if it's good to make the flavors even more robust by caramelizing the onions and carrots instead of poaching them in the stock. It would work like the base of japanese kare which is often caramelized onions and carrots. By the way, please make a video on japanese kare from scratch, it's the best thing ever I promise.

One of my favourite recipes. I add small chunks of broiled sweet potato in later with the greens.
In Indonesia they have similar soup called sup pengantin (bride and bridegroom soup).. It is so similar, chicken (cut or meatballs) based soup with vegetables like carrot, peas, cabbage, with some elbow/spiral macaroni.. Sometimes mushroom (wood ear, champignon or snow fungus) is also added.
The only difference is we don't use any dairy products in it.
Considering the similarity of concept and name, I wonder if it also brought by Italian descendants in Indonesia...

I don't know of any significant Italian diaspora in Indonesia. Honestly, I'm more tempted to say that it's a very convenient way to use vegetables and meat, especially of the kind farmers would have, so a lot of different cultures came up with it independently. The similarity in name is... curious though, I'll give you that.

Makes so much sense now! I was always confused as to why Italians would prefer this soup over any others at their wedding.
I think the pasty texture of meat ground in a food processor actually makes better meat balls than using pre-ground meat. I think it sticks together way better.
Am I Italian American? This looks like a POV of me cooking: eyeballing, going by feel, real spicing and salting, experimenting on the fly, even the way the kale gets cut. I feel represented 🙌

One minor suggestion in what was otherwise a perfectly wonderful recipe:
Before straining your stock (whether you filter or use egg white - which I'd heard of but never actually seen anyone do) use a separator or simply put it in the fridge for long enough for the fat to solidify and scrape it off the surface. Add it to your meatballs at the same time you add your eggs - it works better than olive oil, and if you get any "particles" with it, nobody will even know - just more flavor.

Hey adam! Just wanna leave a suggestion: I don't think nudging meatballs with a spoon is worth it, even if the spoon is already dirty from something else you're stirring. Use tongs, grab the meatballs and flip them. So much easier and less messy, I have been preaching this now.
I am 100% making this! Love any kind of chicken soup and this one looks easy and affordable.
meatballs/meatloaf are actually just about the ONLY things that i prefer good old Italian seasoned bread crumbs for, i just enjoy the flavor and texture of them more in this specific application versus panko (which is literally superior for virtually EVERY other application in which a binder such as bread crumbs are needed and/or desirable)

I live in Brazil and can definitely taste bay leaves on pretty much anything! I actually tend to use only one leaf if I’m cooking black beans, for example, due to it changing the flavour completely. When they are dried sometimes it’s even more of a punch. Maybe bay leaves in Latin America are stronger? Does anybody have the same experience?
Haven't tried Brazilian bay leaves, but there's definitely a big regional difference. When I was in France the bay leaves were amazing, while here in the UK they barely have any flavour. You notice the difference as soon as you switch between them. So I think Adam might need to look at different varieties if his aren't doing anything noticeable in his food.

I was expecting the ad transition, but I was absolutely caught off guard by the Airstream Interstate 24X.
A few years ago my local grocery store had chicken leg quarters on the cheap for months. Sometimes the standard ten-pound bags were as low as $1 though $2.50 was more usual. I’d roast a bagful in a Dutch oven, sloppily pick off most of the cooked meat, and make stock from the remains. I don’t know what caused the price crash.
Damn, at that price you don't ask questions -- you buy a chest freezer and fill it with free chicken.
A tip for splitting leg quarters. When flipped skin side down there is a white line where the leg meets the thigh. If you cut on the leg side of that line, it splits right through the joint like butter.

I love this white wine soup, reminds me of when I threw up at my aunt's wedding from drinking too much white wine, perfect name.

While doing stock in the oven is easier than stock on the stove, an Instant Pot is even easier! If you use the pressure cooking setting for part of the process, it pulls a ton of gelatin from the bones.
