- With all due respect to Chicago’s pizza pedigree, it’s just NOT the only deep dish in the Rust Belt. Enter Detroit: where the pies are rectangular, the pans are blue steel, and the people have a thing or two to say about that “other” deep dish pizza.
Since the end of World War II, the Motor City has been doing deep-dish pizza its own damn way. That way is delicious. But beneath the greasy surface are all the potent ingredients -- anger, defiance, insecurity, and piping-hot pride -- that define Detroit and the 700,000+ souls who call it home.

Passing through Detroit I got a pizza at Buddy’s. My favorite pizza ever! By far! And yes, I have had pizza in NY, Chicago, Rome etc.
By far the most overrated pizza in Detroit (Detroiter) go to Louis for the real deal Detroit style.

Bad thing about *_performing artists_* is that they are always *_performing._* Ha! Great looking pizza A to Z. Interesting to hear that the Holy Trinity of Detroit cuisine is the Coney, Detroit-style pizza and the slider. Sliders are everywhere. Wonder why they're a Detroit thing? Another outstanding episode. Sliders originated from white castle which started in the mid western region (officially named north central region). White castle could've got its inspiration from the local areas.

Riggy, all kinds of people live in Detroit, but yeah, I see what you're saying. Most Detroiters are working class blue collar and they could have chosen to use folks from that much bigger demographic than the hipsters. But it's basically a class thing. Gotta make it all about folks with more money.

As someone whose family is from Chicago but has never been to Detroit, this is a really interesting look at the food competition. It makes you have respect for the food of other places, and the history that created it.

Cool episode I'm def gonna check out Louie's. My current favorite deep dish is from Marconi's and reg pie is definitely Fat Katz! If anyone's ever in Detroit, Southfield, and Bloomfield areas definitely hit 'em up!

Also, my dad is really upset that you guys didn't mention Shield's. They've been making Detroit-style pizza just as long as Buddy's has.
Even shitty chain pizza joints around Detroit pop out fire pizza... when I went to school in Ann Arbor, I'd swing down to Buddy's from time to time, but Cottage Inn in Ann Arbor made a damn good pizza, too.

What is the difference between Detroit deep dish, grandma/square pizza in NY, or sicilian style square pizza?
The crust. Blue steel pans make the bottom crust incredibly crispy (can be seen at 6:02), giving you a textural contrast in every bite with the white brick cheese. Crunch sounds similar to snacking on pretzels-a taste that no NY sicilian or other square I've found can match

The Detroit Style Pizza, with Sicilian roots and a mix of Midwestern ingenuity was born in a small tavern, “Buddy’s” at the corner of 6 Mile and Conant Street on Detroit’s North Side in 1946.
What makes Detroit Style Pizza distinctive is the pan it is baked in and how the pizza is built. The well fermented dough is patted completely across the bottom of a blue-steel rectangular pan and left to ferment until light and airy. The dough is then topped with slices of savory pepperoni, then a layer of cheese covers the dough from edge to edge, a layer of extra topping can be layered over the cheese, and then finally topped with homemade tomato sauce. Topping the pizza with sauce before baking or after, is up to you. Either way is acceptable. I’ve chosen to add the heated sauce to the top of the pizza after it is baked, this provides the best oven spring and produces a light and airy crumb in the baked crust.

This shitty video doesn't really get into what exactly makes the pizza different from a Sicilian(very close to focaccia) or a Chicago deep dish(low hydration, high fat content dough to absorb moisture from toppings). This looks really close to Sicilians. Looks delicious!

There is a big difference between Chicago Style and Detroit style Detroit is deep dish pizza and Chicago is stuffed pizza you can’t compare the two they are both great

I live in Florida and we have 2 deep pizza store chains. Uno's is supposed to be Chicago but it really isn't. The other is Jet's which I think is Detroit based deep style. Jet's is the bomb. I'm not sure if it's legit Detroit style but I think it comes pretty close.
There's far better options if you're looking for the best Detroit style pizza available, but Jets' is perfectly serviceable as an example.

Totally agree. I was raised on Buddy's but grew up on Loui's Pizza...it is the best! I live in Colorado now and the closest thing to Detroit Pizza is Blue Pan Pizza in Denver. I'm jonesin.
