      The way I make huevos rancheros is much different, but here’s a senora with her version. She makes homemade refried beans, salsa, tortillas, etc and is the kind that steps out to the chicken coop to catch one for the pot. Translation of her YT channel is From My Ranch To Your Kitchen.     I have a feeling that Gordon would have respected every word out of these women's mouths. Something about being scolded by a Mexican mother hits different. My dad can say whatever he wanted really but when my mom was mad at us, forget about it.

      I doubt it most Mexicans house holds uses cummin on alot of things including eggs I wonder what part of Mexico they are from because gordon took different techniques from different parts of Mexico most of my family in different parts of Mexico will call some of my food white or not authentic because it's not how they make it in their specific part of Mexico like in America southern Texas food will be different from northern Boston food

    This wasn’t as bad as a lot of other non Mexican chefs trying Mexican dishes (I’m looking at you, Rachel Ray), but it still wasn’t authentic. Xochitl always makes me laugh, and Lucy is hella correct here!

      No it def was just as bad he jus acted w more confidence. But seriously I wouldn’t eat that. Didn’t even cook the tortillas. It’s a shame especially when these chefs hav gone n apparently visited and tried our authentic food. This jus isn’t good. And gives us a bad name.

      Meh most Mexicans problems if it's not how they make it at their specific home it's not authentic he aqually too techniques and cooking styles from many different parts of Mexico and I've seen many Mexican places throw cummin on eggs especially from durango Mexico it's a combination that being said most Mexicans won't make the dish look that good they'd chop it up and slap it together but chefs are all about presentations so it will look different from the avrage home cook and avrage chef

    The Mexican mom is so right. Gordon Ramsay is hypocritical for using canned tomatoes and canned beans when he is critical towards others for not having fresh ingredients.

      Very few people who cook at home, especially for small families use all fresh ingredients. Every time I buy fresh I wind up throwing a lot of it away because it goes bad before I can use it all. Gordon Ramsey is not critical about using canned ingredients for home cooks, just in expensive restaurants. Home cooks cannot, for the most part, cook everything fresh. People are busy. Fresh red beans, pinto beans, white beans are poisonous if not soaked for hours, rinsed, soaked some more and cooked thoroughly. All fresh cooking, all the time, requires a lot of time spent cooking.

    I love the MaMahs they are very honest in saying things like it is. Lucy is right about the canned beans and tomatoes it only takes a bit longer to get them fresh. Gordon never said they were huevos rancheros he just said Mexican style eggs. But yeah Lucy and Xochitl are right on point.

      Almost every mexican I know use can tamotoes and they hardly use black beans but when they do its canned I have beans cooking every other week then freeze then not always making them fresh gets to smelly If fresh all the time

      Most chefs use canned tomatoes because fresh tomatoes from most sources aren't as good unless you live in the right place and are willing to pay a premium. Most canned tomatoes are vine-ripened before canning, while most whole tomatoes arent

      @@BroadwayRonMexico 💯💯💯💯💯. While fresh is usually better, there are def circumstances such as yiu gave where fresh sadly honestly isn't always better. Same with some frozen fruits vs fresh. Often the fresh fruit in grocery stores is stuff that hasn't been allowed to ripen naturally, and has been under refrigeration , while hard & unripe, to last longer in inventory. But typically frozen fruit, especially good brands, is fruit thst has been flash frozen while fresh & ripe

    1. I remember going to a new Thai restaurant near a military base in the Southwest US with this guy from Thailand. The sign outside said “Authentic Thai Ingedients.” He ordered some famous Thai dish and was halfway amused when it contained jalapeño and New Mexican red chile instead of authentic Thai spices. The restuarant went out of bisiness shortly after.
    2. My wife and I went to a new restaurant in a border town. It also had a big sign saying AUTHENTIC MEXICAN FOOD. We ordered the caldo tlatpeño. It didnt have avocados or more importantly chickpeas. They said they were out of the ingredients at the moment (but charged us full price anyway). My wife (a mexican mum) went to the market after and cooked me up a REAL caldo tlatpeño just to prove that she can do better than the resturant. The restaurant closed about a year later.
    MORAL OF THE STORY: Dont throw around the word authentic with people who actually know what authentic is.

    Gordon did not make Huevos Rancheros.
    It does look good, delicious even.
    However, it is not Huevo Ranchero. So do not call it a Mexican dish.
    And last but not least DO NOT follow Rachel Ray example. 🤢 Traumatized for life. 🤮

    He said “Mexican Style” eggs, not “Mexican eggs”. Also, the recipes he does is that series are meant to be easy and quick to make at home. He doesn’t shit talk canned or frozen ingredients for home cooking, he does it with restaurants because what’s the point on going to eat somewhere and pay a premium price for stuff you can buy at the store and reheat at home in the microwave.

      By the way, I’m actually a very good cook, I have 7 kids and a husband, of course I can cook lol authentic Mexican dishes are my thing but I’m always looking to improve of my dishes aren’t authentic enough. It’s a pet peeve of mine when dishes R claimed to be authentically Mexican but they are actually trash.

    Gordon Ramsay is not that good of a chef. He threw the onions, chilies, and garlic in the pan at the same time. You need to put the onions in first, caramelize them, then the chilies, and the garlic goes in last and once it releases it’s aroma. Take it off the heat.

    The thing to remember about any celebrity chef is that they have to cater to their audience and what they have access to. That is why they often use canned things. Ramsay does his best and better then some.

      @@simplypaul8681 perhaps access is the wrong word. But let’s say someone wants to make the recipe and they don’t want to have to the store for just one thing? A lot of households have canned veggies or beans on hand. It makes it a less daunting proposition to some especially when trying out a new recipe.

    As a Mexican I know this is not a traditional mexican food but neither burritos, nachos, etc. Even in Mexico you find international dishes like sushi rolls, pizza, etc. with carne asada, chorizo, pastor, black beans.

      If you were Mexican you would know that nachos and burritos are Mexican. Burritos were invented in Chihuahua during the Mexican Revolution and nachos were made by Ignacio “NACHO” Anaya who was from Coahuila

    Canned tomatoes are better than fresh tomatoes in the winter or off season. If you can buy fresh tomatoes during the proper tomato season then that is the best way to go but during the off season either buy canned tomatoes or use tomatoes that you have canned yourself from a summer harvest. Summer tomatoes taste way better than winter tomatoes and canning them locks in that summer flavor.

    What he made was Shakshura, with Mexican ingredients!! Italians call it eggs in purgatory, a little variation. In new Mexico, they do something like that w/ red chile, but you definitely don't put the beans inside and you never use canned tomatoes, too much citric acid!!

    It looks like a cross b/w shakshuka and a tortilla bowl like you'd get at someplace like taco bell...plus beans. The beans definitely threw me off.
