Foraging for Mushrooms and Making Fake Scampi

- A bit of fungus foraging. Should be good right now, but It's not been a fantastic year for wild mushrooms here in my part of the South of England - I think possibly because of unusually low rainfall throughout the summer - anyway, I headed out to see what I could find and I didn't return completely empty-handed - this gave me the opportunity to try a recipe for mock scampi (which usually means breaded langoustine tails)
Here's the information I promised about animals (wild and roaming domestic) in the New Forest:

*Afterthoughts & Addenda*
*But foraging is BANNED in the New Forest!* - No. No, it is not. The New Forest Park Authority put up signs *implying* that it was banned - and indeed many people took this to mean there was a ban - leading to cases where foragers were confronted by members of the public and (reportedly) Forest Rangers. It's misinformation. There is no ban on foraging for personal use. Commercial or large scale foraging requires permission and licences (as it always did). *There is no ban on small scale foraging for personal use.* www.dailyecho.co.uk/news/17186778.mushroom-pickers-clash-forestry-commission-controversial-misleading-new-signs/
Nice one. Foraging (and hunting) is one of the most liberating thing a city dweller can do. The only thing you really have to worry about are ticks. Use some DEET and tuck your trousers into you wellies. 👍
It's authoritative "hoodwinking"
But foraging is BANNED in the New Forest!
@Richard Millican yeah, part of me wants to say maybe they just had an attack of over-enthusiasm, or they published information that they also intended to pursue in making into law, but I think if either of those had been the case, there would have been some kind of clarifying statement later - it doesn't seem there is.
They published misinformation on purpose, and with (I think) the intent to make the public (both well-meaning concerned individuals and also busybodies) part of the 'enforcement' of this nonexistent law.

I am on meal replacement milkshakes because of stomach issues. I don’t eat solid food anymore and it’s ruining my life. Life without eating (it’s been months) totally makes life not worth living. Videos like this enable me to enjoy the food and experience it without making myself puke and feel awful all day. You will never understand how your cooking videos give me something to hold onto.
I am wishing you all best in the world, this comment really touched me
I really hope your stomach issues improve soon. I know what it's like.

I hope that you find relief soon.
I too have issues with stomach, I was considering a liquid diet, Ensure or home made, Im not sure which one yet maybe both. I hope your issues clear as I do mine.. one day x
I really hope you feel better soon and your issues improve
I've always loved properly done breaded mushrooms. Its just a shame that these days so often when you find them in cafes and restaurants they are those frozen breaded button mushrooms that are OK but full of airspace and not very "mushroomy".
Where in gods good name are you finding mushrooms in cafes?
@@bobbyvonbobinson1555 The sort of cafe that does greasy fry-ups for van and lorry drivers!
@@IanSlothieRolfe the only type of cafe for me
@@bobbyvonbobinson1555 Depending on the establishment you go to, they may have them in the freezer or growing on the underside of the table :D
@@SyntaxErr19287 Can't beat a good ol greasy spoon style cafe. Just a shame they are getting harder and harder to find. Even harder to find a good one at that. The amount I have been to that don't even offer black pudding is almost offensive haha
Have you ever found any more "funky" mushrooms? In New Zealand, where I live, there are many native species of psychedelic mushrooms and the government quite funnily tries to destroy all of them to prevent people from eating them, but nature as expected, always finds a way. I would be interested to know your stance on the still-edible-but-not-really-a-meal mushrooms.

Have you ever tried to make a full, substantial meal with strictly foraged ingredients only? If not then it would be an interesting video to watch and a potential challenge idea. Great content as always Shrimp!
I've realized what contributes in large part to make your videos so watchable, it's your skill as a narrator and your ability to communicate your process to the viewers
Exactly, you can do it with a script, but Shrimpy boi does it so naturally with his own thoughts out loud.
After a challenging day, a lovely atomic shrimp video is just what I need to unwind. I hope Eva gets extra toast tax in recognition of her bravery staying home keeping the deer safe. Thank you Mr Mike for always making brilliant videos that make me smile, or think or learn something new. Happy weekend shrimpers :)

Wouldn't a deer actually prove more dangerous to the dog? Especially considering his dog is a rather small breed.
@@PLANDerLinde99 Though she be but little she is fierce!
@@PLANDerLinde99 no, the actual danger is that thr deer could startle, even though its small and the makes could get defensive leading to them being dangerous both to themselves by getting caught on fences, wall ect and us, by them charging
I'm overjoyed Mike! I've been waiting nearly the best part of a year for the mushroom video's to make their annual appearance! Thankyou so much for sharing.
Here's to a great mushroom season!
All Fungi are edible.

I love how you're not put off by natural "pests" and things coming into contact with your food. I think more and more people are conditioned into eating overly sterilised foods covered in plastic packaging and won't touch anything directly from the ground or tree. I've made crumbed mushrooms before but not in this "seafood" style. I'll have to give it a try.
Just a sidenote some Ppl actually develop some immune diseases or gastrointestinal diseases due to growing up in an overly sterilized environment. We are evolved with several species of parasites and actually develop some symbiosis relationship with them.

Nori seaweed sheets for seafood flavour is a brilliant idea. I may have to steal that idea for my own cooking exploits
I've heard about celeriac wrapped in nori and then breaded and fried being used as vegan "fish", you could try it out. I'm sometimes cooking with but without the nori and it's a nice dish even as it is.
Salsify is apparently known as vegetable oyster!
I live in Wisconsin, USA.
I found a Hen of the Woods in my front yard last week.
Hefty and meaty.
Musings from a forester. The tree tubes serve a few purposes: 1. Prevents grazing at the pivotal stage of establishment. and 2. Helps to encourage the tree to grow straight up rather than spread out. In some places, tree tubes are being shied away from mainly for the reason you described, the end up falling over and becoming trash. They can also make the trunk a bit weak as it is not subject to the wind and can be a little wobbly, hence the need for staking. Cages around the tree are the most modern options that some places are choosing to adopt now.
I think I have seen cages actually, no plastics. really nice!
Is your 'the sky is beginning to bruise' a reference to Withnail and I? I hadn't pegged you as an Uncle Monty type. 😆
That is one of my favourite lines from Withnail and I. It's so poetic!
It's a very quotable film
In my part of the world the sky is becoming passive aggressive.

I've had breaded mushrooms before, but it never occurred to me to make my own. Think I'll have to knock up a batch with a chilli - or even Indian spice - coating. And dips!
I love watching your videos, it's just incredibly fun seeing it while you look through the forests and explore, Keep it up!
I love listening to your voice! It's so relaxing
Brilliant video but whatever next? Fake shrimp? Dun dun dunnnn! Lol
I am so pleased you say you don't know what some of these are. Makes me feel more secure to know there are some gaps in your knowledge 😊👍
"The sky is starting to bruise a bit" I've never heard this saying before but I love it!
This brings me back to when I used to go foraging with my family. I rarely see people foraging, but it can be such a fun experience
Who’d have thought shrooms could be so versatile, there must be something fishy going on
Shrooms are the bridge between the animal and plant kingdoms... they know all and see all... and we eat them! Mwuahahaha!
Lmao
I didn't watch this video at the time because I knew I'd want to save it for a time when I needed something slow and soothing, and tonight was that night. So grateful to you for making this kind of calm, nature based content. During daylight hours if I was this stressed I'd try to get out for a walk in a local park but that's really difficult with the long nights drawing in, so being able to focus on your foraging walk was just so perfect. Thank you shrimp ❤
I make this ALL of the time using oyster mushrooms, Cajun fish fry and nori furkaki. Its one of my favorite things.
I think using russula xerampelina a mushroom that already have a fishy/shrimpy flavour might be perfect for this
As someone who is a mostly "meat and potatoes" kind of guy I do really enjoy these videos where non-animal products are the star of the show. About everything is something I give a go at least. It always inspires me to try something different and from scratch rather than resulting to the usual stuff that's processed or ordered to the door. About the only thing I'd change would be to include the chips afterwards into the oil (perhaps adding a tad bit more for a "deep fry") other than that I'd only be disappointed that there wasn't enough for a second helping but then again what is for desert? Another great educational and entertaining video thanks a third time!
I make my own tartare sauce, same as yours but I add some parsley. Hubby prefers it to the shop bought stuff.
I needed this calming video today. I think I'll go check out the other foraging videos of yours. Thanks for making them :)
I’m shocked you didn’t dig for the treasure that was clearly buried at 1:35
Id love to go for a walkabout with this man, he certainly knows enough to keep things interesting.
Plus I could get some free mushrooms out of it and that's always a bonus.
Yay, seeing notifications from you always makes me feel comfy. I hope you are doing well, Shrimp
It looks very tasty!!! Of course I love fried mushrooms too, so can’t go wrong!!! But I love the seafood vibe!!! Interesting, In America scampi is non battered shrimp in a garlicky butter sauce… Great episode!!! I did miss Eva though! Lol
As someone else put it, your videos are always an adventure. Never know what you are going to do next. From mushroom foraging to critiquing fake meat. Bonus for me is that I can sit with my knitting and take in most of it.
I was always wondering why this forest looks so unusual and clean! Looks really comfortable to walk in and beautiful
It's always surreal being in managed woodland. It's like you're in an open space but you're also secluded and enclosed at the same time. Depending on the topography, you could see someone hundreds of metres away, but have no idea they were there due to the silence of the place. Sadly these kinds of forests aren't very dense with wildlife due to the fact that they don't have the undergrowth layer he mentioned.
I love the sound of walking on dead leaves. It reminds me of walking on potato chips (crisps.) Also the crunch of walking on gravel.
You know this is just a cover so he can get himself some liberty caps on the adjoining fields!!!!
ahahahahah
man image stabilization is so crazy. it almost looks like you’re gliding along the ground
This made me so nostalgic for my childhood in rural Vermont. My two younger sisters and I had hundreds of acres of woods as our back yard and mushrooms were everywhere. Finding a fairy ring was always our goal in the autumn!
Also, you've made me realize that I need to learn what edible things are growing in my area because there might be a day when this knowledge is necessary and not just trivia.
I cannot begin to tell you how much all of your content enthrals, entertains and calms me. Thank you for everything you do Mr Shrimp, you make me regularly want to move from the Peak District to the New Forest!
I couldn’t agree more, super calming and wholesome videos, I feel like they heal my soul some days 😅🙏
Plenty of mushrooms to be found in the peak district :-)
as someone who has spent almost all his life right on the edge of the new forest i think you probably have it better up there, unless you are mad for horses
I used to live on the edge of a town. It wasn't a bad district, we had a lot of stores and everything, but it was 2 minutes away from nature. I could take a walk in a really small but moody forest, or go the other way and be at the riverbank in 10 minutes. Now I live in the middle of Budapest, and I miss nature and foraging
Great video , who dosent like a good ramble thru the woods. I've found the penny bun / porchini a few special times too. The flavour is so fine and delicate I wouldn't deep fry them or cover with other flavours . Definitely consider eating the stalks too, unlike other mushrooms the eddulus has a tender and tasty stem , big love
There appear to be no links in the description of the video concerning the New Forest
I keep doing that. Sorry. Will fix asap
Though it would reduce the 'vegan' aspect of the dish, you could try soaking the mushrooms in fish sauce to drive in more seafoody flavor.
In the US, there's always Old Bay.
Is that a joke
I can’t tell
As a Florida native it hurts to hear Mike talk about the fried shrimp he's used to. The shrimp we can buy from local shrimpers our of the cooler in their pickup truck is amazing. Caught just a few hrs before and big and meaty.
Here in the UK, Prawns and Shrimp are two distinct arthropods. Prawns are large, Shrimp are small. Most people here eat Prawns, as they are more numerous than Shrimp. I prefer brown Shrimp, as they are smaller, sweeter, and in every way, more flavourful than Prawns. The seafood known as 'Scampi', are usually Langoustines, or 'Dublin Bay Prawn', yet another type of arthropoda. We also have Crayfish (Crawfish; 'Mudbugs'), which are delicious too.

Deep fried battered mushrooms are one of favourite things in the world, going right back to before I stopped eating meat even. We had a local fish'n'chip shop that had them as a regular menu item. So good! I would have them rather than fish. Those were the days.
As a kid I always loved scampi, but I never knew it was shrimp! You learn something new every day.
Also, loved the Will It Blend reference - brought a ridiculously huge smile to my face. I practically grew up with that show!
Foraging videos are my favourite :) thank you for this!

i saw your videos on fake meats. have you tried making seitan yet? i tried making it a couple of days ago. i'm surprised how easy it is to make and how well it turns out.
That would be a great video 🌱💗
What is so striking to me is how symmetrical nature appears in the first seconds of this video. Each side of the road is twinned. I love this so much!
Maybe I’m wrong but a lot of those trees are probably planted
YESS!!! 😃 My favourite - foraging!! and not only that, it’s a 30min special! (does a little celebratory dance) I was hoping it would be a mushroom related upload today. 🍄
My back yard has denser undergrowth than this "forest"
I'm sure that makes you a better person, or something
Do you mean your bum crack?
Scampi is the Italian word for langoustines
I'd try this. Those chips look great.
I live in New England United states and I also forage for mushrooms.. Well, I go out and photograph mushrooms and do not really trust my identification, so I never pick anything, I just look and photograph. Thank you for the great entertaining video.

It was interesting. I loved the trip to the woods, which I do not have often enough.
What camera did you film this with please? Very good stabilisation
This was mostly on the new gopro 10
I've heard that monkfish was sometimes used for fake scampi (in the "olden days" - '70s - '80s) and judging from some of the stuff I was served as "pub scampi" (back in the day) I believe it!
You really got me with the Will it Blend reference! What a throwback!
You should use an app to identify the ones you arent sure about. They work pretty well but at the very least we could get an idea of what they are. Or you can just add the names of them in post.

@@AtomicShrimp Yes sir
I think adding a pinch of salt to the 1st breading might create more "shrimp illusion". Shrimps contain some salt.
A bit more seaweed may also help.
The trick on deep frying is to make sure the oil is well above boiling and always stays that way. The pressure of the steam coming out of the food stops the oil from going in. The way you put them in the pan one by one likely made sure of that.
Another thought is to use conola oil. If you get it just a bit too hot it makes a slightly fishy smell. This might help with the illusion.
Pun about Atomic Shrimp being such a fungi.
Watching your foraging videos makes me wish I could handle the taste of mushrooms.
I already have an appreciation of fungi due to yeast, but you've certainly made me appreciate mushrooms too
I feel like you have to really know your mushrooms to do this. I’ve always been terrified of the idea of getting it wrong and eating a death cap by mistake.
this is why I hate mushrooms
@Just Browsing Nice helpful information. Thank you for the advice!
I think the best approach is doing it species by species, use books and online sources to research a species until you’re confident enough, go out and find it, and then move on to a different one. You don’t have to be an expert on all fungi.
Puffballs are a good place to start
Rule number one of mushroom foraging:
If you don't know what it is, or not 100% know it, leave it alone.
Absolutely. It's possible to be safe, but only if you follow this rule. One of the greatest dangers to foragers just starting out is hoping what they found is edible, then forcing a fit against identifying info.
1:20 very immature fungus
Yes, precisely how I would describe them... Correct parenting would have resolved that.
Reminds me of going to the Bernie Inn in my childhood. Breaded garlic mushroom starter. Back when half a grapefruit, melon, and orange juice were considered starters. Avocado with prawns was very bourgeois.
Their steaks were brilliant! There was also an ice cream pudding on a waffle. I still remember feeling grown up on my first visit!
If seems to be a bumper year for shaggy inkcaps. Found hundreds near High Corner Inn.
10/10 for that crispy batter alone
Growing up near a small forest, it was easy to learn all mushroom varieties, of which there was just a handful. No surprises. No new species. Just 2 kinds that are poisonous, and they stand out. The rest was all good to eat. Lots of mushroom soup ever summer. One food that produced itself, was healthy and free. But I would never take a change. Good point that 99% sure isn't good enough. That's the best rule of foraging.
Breaded, deep fried mushrooms are a very common dish in Central and Eastern Europe. Just don't pick the ones with little white dots on a red cap...
Might not have been many mushrooms about, but there's always one fungi on Atomic Shrimp videos :D
I live a few miles from Hayle estuary in Cornwall. There’s huge amounts of marsh samphire, but it can’t be eaten because of Arsenic from tin and copper mining. (It’s actually a World Heritage Site.) Frustrating!
Have you ever watched the documentary called Fantastic Fungi ?
I think it would be right up your alley !
isnt it awesome to think that much of the coal we have today is because trees werent broken down by fungi before they existed?

Good evening, how very beautiful. Lovely to be out foraging, thanks for the important knoledge, on the fungi. Have an exceptionally good weekend 💕
Hahah, the “will it blend?” reference brought me back
Scampi in America is usually shrimp sauteed in butter with garlic, I think. Like at red lobster, if you want a reference on their website.
Fried shrimp is just fried shrimp here, usually battered and deep fried.
Hmm maybe dessicated porcinis reconstituted in a seaweed stock would have given them more marine associations.
Yay! My favourite RUclips uploaded! Cant wait to watch this at dinner. Thanks AS :)
how is all of your content EXACTLY what i wanted to watch??? great stuff man
Although I prefer my meals to include dead animals, these videos still always make me hungry.
I’ll definitely need to try breading mushrooms sometime, looks delicious. Also who eats unsmothered fries with a fork?
Amanita Muscaria, the red fungi with white spots contains a strong psychadelic
My goodness, porcini cost me a fortune here in Italy. I never imagined them growing so abundantly in Britain. Also, regarding the creator's comment about bans on foraging, lots of people here go mushrooming in autumn. It's considered a seasonal past-time. Far from banned. Thinking of trying it myself (have never learned the mushroom lore though, must do some research!) - the only problem is... we have bears in our woods. :)
I have heard that snails? can carry salmonella but i'm no biologist / chemist and it IS only hearsay (could be COMPLETELY wrong) but, I figured I'd mention it, in case you see this. Just in regards to eating ones that have definitely been munched on by slugs / snails.
Regarding your Gopro, try 30fps instead of 60fps, it will save up to 40mins in battery and file size. I presume you've done some colour correction as it looks good. Mine looks really bland and dry if i don't. I have an 8 model, great little camera, just shame about the battery.
I also found some small porcinis today, funnily enough, about 2 metres away from a trio of amanita muscaria. they must need similar soil conditions
I suspect an actual partnership between the two fungi
