    These crispy and flavorful Suji Rusk are perfect for dunking in your morning tea or coffee. This recipe is vegetarian and doesn't require any yeast, making it a quick and easy snack.
    Ingredients:
    * 1 cup Semolina (Suji)
    * 1/4 cup Whole Wheat Flour (Atta)
    * 1/4 cup Milk Powder
    * 1/4 cup Sugar (or to taste)
    * 1/4 teaspoon Salt
    * 1/4 cup + 2 tbsp Ghee (clarified butter)
    * 1/2 teaspoon Fennel Seeds (Saunf) (optional)
    * Cardamom powder (a pinch, optional)
    Instructions:
    1. **Dry Ingredients: In a large bowl, combine the semolina, whole wheat flour, milk powder, sugar, salt, and fennel seeds (if using). Mix well using a whisk or fork.
    2. Melt Ghee: Heat 1/4 cup of ghee in a small saucepan over medium heat until melted.
    3. Moisten the Mix: Slowly add the melted ghee to the dry ingredients, while mixing continuously with a spoon or using your fingertips. Ensure everything is evenly coated with ghee. The mixture should resemble coarse crumbs.
    4. Water: Gradually add a tablespoon of water at a time and mix well after each addition. You want the mixture to be slightly moist and hold its shape when pressed. Avoid adding too much water, as it will make the rusk soft.
    5. Resting: Cover the bowl with a damp cloth and let the mixture rest for 15-20 minutes. This allows the semolina to soften and absorb the flavors.
    6. Preheat Oven: Preheat your oven to 160°C (320°F). Line a baking tray with parchment paper.
    7. Shaping the Rusk: Take a small portion of the mixture at a time and roll it out into a thin log shape on a lightly floured surface. Aim for a thickness of about 1/2 cm (1/4 inch). You can also shape them into small squares or rectangles.
    8. Transfer to Baking Tray: Carefully transfer the shaped rusk onto the prepared baking tray, leaving some space between them.
    9. Brush with Ghee: Using a pastry brush, lightly brush the top of each rusk with remaining 2 tablespoons of ghee. This will give them a golden brown color. Sprinkle a pinch of cardamom powder on top if using.
    10. Baking: Bake the Suji Rusk in the preheated oven for 20-25 minutes, or until golden brown and crisp.
    11. Cooling: Once done, remove the baking tray from the oven and let the rusk cool completely on a wire rack.
    12. Storage: Store the Suji Rusk in an airtight container at room temperature for up to a week. Enjoy them with your morning tea or coffee, or as a healthy snack anytime!
