You can get Prior Maborel’s free horse at the very start of the game. Give the Amulet of kings to Jauffre and go to Prior Maborel to talk. He will just offer his horse to you.
Do a challenge run where you try do something thats not the main quest. Like doing the dark brotherhood without killing or the fighters guild without fighting or something.

Hiricne's quest can also be completed at level 1 afaik. I'm pretty sure the unicorn spawns at any level and you just need to give him the horn.

Good thing staves dont work like barony where they treat it as casting the spell. Those staves break permanently too.
