Emma's third recipe in the Oat Cuisine Series is blueberry lemon pancakes. Another great recipe, packed full of carbohydrates to fuel you on your ride.

Ingredients (for 2 portions):
150g quick oats (about 1 cup)
300ml skimmed milk (about 1 ¼ cups)
2 eggs
1-2 tablespoons lemon juice
Finely grated zest of ⅓ lemon
1 teaspoon vanilla essence
1/2 teaspoon salt
3 teaspoons baking powder
A few squirts of 1-calorie cooking spray

At this point, I'm basically convinced that hiring Emma was one of the best things that has ever happened to GCN.
I was convinced of that LONG before she started the cooking vidz. She is just a natural in front of the camera. Straightforward and endearing. Winner!
There is nothing Emma can't do... She is a whole GCN programme wrapped up in one person.

Well, I would if I hadn´t eaten pancakes half an hour ago xD For some reason I have the tendency to eat my breakfast in the afternoon .....
While Emma's recipes look delicious, I am certain I would have to wait about 3 hours before I could even think of getting on a bike after eating them. All that dairy and sugar = gut bomb.
I'm out of baking powder, unfortunately so it'll have to wait till monday. But it will happen!
Thank you for putting the nutritional info in the description box. Am I right to assume the nutritional info is ‘per stack’? (Ie - if I ate all the pancakes this recipe makes then I should double the nutritional info?)
Curious if this will pass the picky eater 3 year old test. I may have to try in the morning
I'm not a fan of the sourness of plain Greek yogurt, so my solution is to premix the honey and yogurt. I'd suppose there's no harm in adding a tiny bit of vanilla if you like, too.
katie_incredible Low fat yoghurt always tastes sour. I’d much rather use a smaller amount of full-fat. It just tastes so much better.

The pan is already coated in PTFE (Teflon).
Top tip: Don't use waxed lemons.
If you do buy waxed lemons by mistake remove the wax by putting them in boiling water for a few minutes, then rinse with cold water.

How can you tell if they are waxed, will they have a wick in them? ;-)
Great vid Emma! Just don't hold back on the fat! Mega calories mean more fuel, unsaturated fats are a great thing in my opinion. GCN did right by us viewers when they hired Emma!
Oh wow. I just made that. I used a vanilla yoghurt instead, which gave a tiny bit more sweetness, and it just tastes divine! I thought it was too runny after I mixed it, but it came out fluffy and firm. Definitely going on the rotation for race day!
The plan was to make up the batter tonight and have it for breakfast tomorrow. I may have just had to make another batch because I ate it all already.

I made this for lunch. I needed to make more oat flour than the recipe called for but very yummy. This will be a great recipe for camping.

Less blending time will give you a more even structured product (less huge bubbles/holes). This is for everything egg-/flour-ish.

It's still morning for me and I'm just about ready to go shopping. I gonna make them about 2-3 hours before going on my daily ride and the gym workout in the afternoon. I'm really looking forward to it, tho and gonna report back was soon as I made them!
Alright, I did it - and I'm loving it! For the pancakes I followed your recipe to the letter but I mixed it up a bit with the fruits. I did one layer where I fried the pancakes together with banana slices, another one with apple slices and the third one with fresh strawberries on top! Just delicious!

50% buckwheat, 50% oats. You can also ferment them, or leave the batter to stand for about an hour.

Pro tip to make the pancakes more fluffy - seprate the whites and the yolks
Add the yolks in the batter and beat the whites till they are stiff
Then gently incorperate them in the blended batter 😁

I believe the eggs are only required as a binder for the ingredients, in which case healthier alternatives could be used. Aquafalfa would be great (water from canned chickpeas) as it doesnt really have any taste. Just whisk it up first so that it firms up like meringue. Alternatively, chia seeds are a great binder product, plus they contribute to energy levels and have a pretty good level of iron. As for the geek yoghurt, there are plant based alternatives and the bee vomit (i mean honey) can be replaced with syrup.

Another delicious sounding recipe and very well presented. If for some ungodly reason GCN decides not to keep you on I'd bet you could start your own cooking show targeted towards cyclists and athletes in general. Ps you're my favorite GCN presenter
Come on GCN! Get Emma some proper measuring spoons! Oh, and also, cooking spray is not recommended for non-stick pans -- the additives in the spray gum things up over time. I look forward to trying this out.

Hey, just did the pancakes. Outstanding recipe, but I don't do all the cycling to end up having fat free yoghurt with them. I just went for the good greek 10% version.

I tried it last night as an after cycle supper. Tasty. It needs non waxed lemons,which you do not specify. The zest will be waxy otherwise...
Also, I’m going to try this with gluten free muesli, since my wife is a coeliac. I’ll let you know if it comes out anywhere near as well as these!
I watched this as I ate my oatmeal and cherries for breakfast. I'm now hungrier now than when I started eating.
Pro tip, lumpy batter makes taller pancakes. Pulverize oats into 00 flour, then mix all dry ingredients in a bowl, and all wet ingredients into another bowl. Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix till the dry ingredients is wet but lumpy. Happy cooking and ride hard!
Oh and add some sugar to the mix. All you need is a tablespoon. It goes a long way and you won't need as much honey. (You can even add the honey into the wet mix instead of sugar if it really bothers you that much.) :)

Tip: Blend the oats alone first so they turn into flour, then add the rest of the ingredients for smooth pancakes.

add more or less fat depending on your weight in relation to your optimal reach weight, and according to the day's ride. (Club ride, medium length bike-commute, double century) She took the permission to assume you were adult enough to do that for yourself.
There is another channel where Simon shows you:
1. How to get out of bed
2. How to determine whether to start breakfast or use the restroom first.
3. How to use the restroom.
4. How to read the chart that tells you what to eat today.
5. How to ask mommy to make your specific bike breakfast
and so on.. you can find the video a few days back.

_@Emma_ - I almost stopped the video when you started stacking the pancakes upside down. Yuck! :-D Suggestions: Many folks may prefer maple syrup instead of honey (I would) -- especially with blueberry pancakes. And you could substitute cinnamon for the lemon zest (it goes great with blueberries, too). My family is "addicted" to blueberries. I fix blueberry oatmeal for most breakfasts. My wife has a sensational blueberry soup recipe that can be served hot or cold. Go blueberries!!!
I believe diet contributes to performance more than skills, fitness and equipment. Blueberries are helping me ride in very high heat ( 105 degree index ).

Garth Garthly eastern North Carolina, I watered that down so no would think I'm exaggerating, dude I'm riding in 110, 115 index, temp is 95 but unless people know the southern U.S., I don't believe they understand. I'm eating 1.5 qrts of blueberries at the time every other day, fresh vegetables from the garden, and green tea brewed from 265 foot down well water. It's tough but man I feel unstoppable. Also I drink muscletech protein plus with almond milk and 2 cliff bars for breakfast daily
