Chazz Palminteri on Meatballs and 'A Bronx Tale'

- Actor Chazz Palminteri is celebrating a milestone: the one-year anniversary of his Italian restaurant on 2nd Avenue and 48th Street.
He is never too busy to make some meatballs himself. Parsley, onion, celery, basil, Parmigiano-Reggiano, oregano, smoked paprika, pepper, salt, two eggs, chopped garlic and water-soaked bread for moisture. Then right before you roll the meatballs, you oil your hands so the meat doesn't stick. Finally a few ladles of sauce, a splash of chicken stock and into the oven for 25 minutes.
While they baked, we chatted about "A Bronx Tale," Chazz's coming-of-age story. It was a one man play in 1990 and then became a movie in 1993. Now as a musical, it is headed to the Longacre Theatre on Broadway.
My favorite scene is the car scene: if the girl opens the door for you, you know it is real love.
Our meatballs arrived. We toasted and dug in.

I was surprised by that as well. And I was kicking it with a black girl while growing up during the 80s before interracial dating became socially acceptable and I didn't care what others thought either, despite even catching heat from my own family. Of course I also liked white girls and they really liked me alot since I was a star athlete and very tall, but this particular black girl and I just had a certain chemistry together that superseded popularity or being one of the "hot chicks", though she was beautiful in my eyes and that's all that mattered 😉

A pizzamaker may also tell you that the brine from black olives will do that also. In my pizzamaking days we would have a sauce can with some black olive brine in it and dip our fingers in it before grabbing a handful of Italian sausage.

Yes, that surprised me, it should be fried, I make very similar ones to his, but fry them first (don't need a lot of oil, if that is someb. concern), then pour tomato sauce/canned tomatoes, some more origano and basil into to gravy, etc, then let it simmer for half an hour, done.

Heres something for u cooks, meatballs(season as u want) not bigger that ø 5cm, potatomash(white pepper and salt) and ofcourse lingonsylt and Brownsouce
I make meatballs kinda big so I can load them with zante currants, toasted pignoli, and chopped green onions. If you've never had meatballs with zante currants, they are tiny raisins, and as you know, when a raisin gets wet, it starts swelling back up into a grape. As the meatballs bake, the tiny currants reconstitute themselves with meat juice, and it is a LOVELY thing. Regular raisins will also work, but you can get many more of the tiny zante currants into each meatball. They're about the size of a match head.

Wait a minute! What recipe is he using? It's not original Italian. What's all that stuff he's putting in the meatballs, celery? Who puts celery in meatballs...and all that other stuff, paprika? What? And ground beef? That's it? What about the ground veal and ground pork? I think Chaz's roots are in Dublin.
What's the real recipe?
Veal sucks because of how it's produced. You can add a little Knox unflavored gelatin to your meatballs and get the same texture without cruel and expensive veal. You can also make very convincing veal cutlets out of thinly-sliced pork loin. This is covered in Henry Hill's cookbook under "Fugazy Cutlets".
