America's Test Kitchen is there anyway to buy all the seasons on DVD? I've searched everywhere and can't find them. At the end of the show it used to advertised that you could buy them. I thought I was buying them and I got the massive cookbooks which I love but can't watch those, lol.

LOVE that blue hair! I've been contemplating...😋 Learned alot from this. Especially about the oats and pecans which I also love lol! Guess besides breakfast I'll use my quick oats for meatloaf. That's how my granny made it and I like that the best anyhoo. My grandkids only like raisins from the box. You might want to smack me here but I like to put cinnamon or butterscotch morsels in instead. Those cinnamon chips are the bomb! I really like those little dishes myself too! I bought a whole bunch of different ones yes ago. Need more now. I have stainless and glass... But my faces are the little ceramic colored ones. I got those from a pet store😁🐾. Use them for everything. Sometimes even pets haha. Pecans!!!! I made homemade pecan pie for my ex yes ago with pecans we got from his grandmas farm in Arkansas. About the freshest you can get! Lot of work tho shelling etc. This bar recipe sounds so yum and is so EASY! I just wish nuts were cheaper. Jeepers it's scary going to the store anymore....for anything. Thanks all you ladies. Oh good, I was just thinking about pecan bars. A while back I made Ina Garten's pecan bars and it was a disaster. I'll try this one now. ATK has never let me down.

agreed. While I don't always agree with how they do things on this show, I have found that generally, if I start with their recipe for reference, I have a good starting point. I was trying to figure out why the way I was making oatmeal cookies resulted in bland flavorless oatmeal cookies. Now I know why. So I made this recipe sans raisins and I only had to make a slight adjustment to make them perfect. They didn't mention what kind of cinnamon they used and I found that if I ground cinnamon sticks from my organic grocer near me I found that better than the ready to use ground cinnamon.
I want to make those pecan bars ASAP!
The pecan bars look delicious. I might add a few finely-ground pecans to the crust, and will definitely add nuts to the oatmeal cookies. Nice work, Elle!

I've made both of these recipes. They're awesome. A good substitute if you don't like raisins is craisins (dried cranberries).

I make the pecan bars every year for Thanksgiving, but I've figured out how to incorporate Bourbon into every layer of the recipe, without compromising texture ;)

I have a recipe that calls for toasted oats. The cookie is crisp all the way through and that is the way I like them. Crunchy. Soft cookies are breakfast cookies in our house. For bowls you all need to try Dollar Tree, 4 for a dollar for the small and 2 for a dollar for the larger size. Walmart is also cheap.

Agreed! I stopped watching for a while cuz they seemed out of touch with the real world without any diversity. Also, Julia CD make a very tone-deaf comment about her daughter not liking things that were dark! I was done...
When I made these cookies, the dough couldn't handle all 3 cups of oats. The oats fell out as I portioned them, the cookies wouldnt stay as cohesive balls, and the cooled cookies fell apart due to the too loose structure. I tried refrigerating them -- no dice because of the oil -- and rolling the balls in my hands to press then more firmly together. Didnt work. Anyone else have this problem?
YES! I don't know how to fix it. Maybe I didn't measure flour correctly and it needed a little more?!? They wouldn't stick together on pan and fell apart after cooking too. But they are tasty!
I think we have different opinions about oatmeal cookies and spice. I usually nearly double the spice called for in the back-of-the-box recipe! :-D
I might have to give these a try, though. Any excuse to make cookies, right?!
For those of you that do not like raisins (which have 81g of sugar per serving) , try dried cranberries (18g of sugar per serving).
I like Elle, in part because it's obvious she likes cooking and enjoys food. They say you should never trust a skinny chef.

I love to add shredded coconut to my oatmeal cookies. Not a lot but it adds chew and no one seems to recognize what the difference is, but they are always a hit.

I remember that you recommended sauteing rice, and I've liked the result. I suspected toasting the oats would similarly improve the oatmeal taste, but I'm not sure how I'd do that.
I'm not a fan of raisins (and I'd have left them out) but I included them and I'm glad I did. For yesterday's half-batch I added pecans.

Hello Ladies, Being a 73 year old Carpenter, I decided to give your oatmeal cookie recipe a try, I've followed your directions and have done two batches over the past 2 weeks, They were perfect, The Nieghors are calling me Chef Leroy,, thank you so much, I'll always remember this way of baking these cookies

My great-grandmother made oatmeal cookies that were one of a kind and it took years of trial and error cracking the lost recipe for what we call cinnamon oatmeal cookies

I'm with Bridgette on the raisins! I don't like cooked raisins but love raw one's. On recipes that call for raisins (not oatmeal cookies) I'll substitute dates that are chopped instead & it really gives an extra flavor that's yummy! Definite a must try especially in sweet breads

When I was ~7, I came home from school and found some lady in our kitchen. This was OK with me, because she was making oatmeal cookies. But I went to find my mother anyway and I found her in her closet organizing shoes (or something). She brought me back to the kitchen and introduced me to the lady, but I was not paying attention because the cookies were coming out of the oven. It was not until years later that I tumbled to the fact that this lady was Rosa Parks, who was in our city to give a lecture and stayed with us as a "safehouse." She made the best oatmeal cookies!
I made the cookies, they were the bomb..I'm going to try the pecan bars and I hope they are calorie free....
I watched all the way thru, set out and measured all ingredients. When I got to adding the oats I could tell the mix was going to be too dry. I held out 1 cup of oats but the cookie dough turned into crumbles. It was pointless to use my dough scooper so I took the mixture and pressed it into a pan to make bars, I’m not sure where I went wrong but I’m super disappointed in the recipe. I have my fingers crossed that the cookies will come out decent, well decent enough to where the church ladies won’t throw them away tomorrow lol.
What is the portion of the pecans? I've watched this demo several times and the amount is not mentioned.
Can you substitute the half cup of oil, for a half cup of shortening, in the oatmeal cookie recipe? Another questions...would the ingredient portions (minus the Oats) work on other cookie recipes. Like peanut butter cookies

Love watching you guys together. We don’t like overly sweet desserts. But still enjoy a snack at the end of the day or with coffee. How much sugar can I decrease without compromising flavor and the ratios too much.

I've never tried oat flour. Does it actually taste like oatmeal? I mean, it should, right?
It does taste like oats. It is extremely low in gluten so I think it would give a very tender cookie although I can imagine it would make the cookie gummy.
You couldn't use all oat flour, because you need some gluten to get the cookies to hold together with the right texture (whether cakey OR chewy). Without gluten, you'd need an entirely different recipe to get something cookie-like, and possibly some kitchen chemistry tricks to boot.
bloodgain use gf cup4cup flour. Would work great.
I was not familiar with that line of products. Looking at the ingredients, that might actually turn out something similar in a cookie. It probably wouldn't be as convincing as a carefully tweaked gluten-free cookie recipe, but it would be a recognizable cookie. My response was mostly about substituting oat flour directly, and Cup4Cup includes some of the "tricks" I'd expect, like tapioca/potato starch and xanthan gum as thickeners and binders.
I gave small batches as Christmas gifts, my friends are asking for them now!
I've tried my 8th batch with dried cherries changed nothing else, will see how they taste! I love the toffee flavor. Next, the pecan bars💃

I make the pecan bars all the time and they are FANTASTIC. But when I've tried to make the oatmeal cookies, they do not hold together. They fall apart EVERY time as soon as I put the scoop on the pan. I think I'll try again with fewer oats. Maybe 2 cups this time. 😞
Crazy story; I followed the first half thing this was oatmeal cookies pecan bar 😆😩. I made half into cookies Then used half the cookie mixture as a bottom crust replacement and made the pecan topping . We’ll see what happens 😬
I'm going to have to make both of these. But so I don't eat them all completely I'll probably wait till I go to therapy group, using a teaching moment. I used to be a baker, cake decorator all kinds of stuff but now due to muscle and nerve damage and a list of other stuff I got told I would never be able to go back to my field, broke my heart crushed my soul💔😱😵 but I recently got told by my case manager that I could teach some of the other clients some baking and since all of the clients that go to the clubhouse which is a Therapy Group but we try to perform some normal day tasks, some things as simple as doing dishes are hard for us with me I can get away with dishes as long as I can stick them in the dishwasher but once I have to stand at the sink in one place it causes my ankle my knee and my hip to flare up. So it's nice being able to bake at the clubhouse because then somebody else is willing to help with the dishes in return to eat goodies. I guess trigger warning for the rest, Along with my physical stuff I've also got severe PTSD and some issues that come along with that, one of the things for Clubhouse for me is try to get me normalized to people again because my ex kept me locked up and I survived 12 years of DV but then was assaulted by my ex brother-in-law family reunion of sorts so I've also got severe trust issues on top of everything. I would love to be able to teach but unfortunately due to head trauma I can't recall a lot of information I had memorized. I could be talking normal one minute, then completely forgot what I was talking about the next which makes it really hard when having to deal with paperwork and applications and trying to teach somebody something when you can't even remember what the heck you said

Been living in Europe and Asia for the last 10 years and I stepped up my American cuisine game in the last couple of years almost solely due to you guys! I love you ladies! I'd LOVE to send you some Swiss chocolate if you leave a P.O. Box. A little extra Organic Cinnamon is fine with me and I’d use something Organic other than refined white or brown sugar.
For the Pecan Bars I’d use a nut flour and vegetable glycerin rather than a grain flour and corn syrup. But that’s me.

My dough did not come out sticky. 1. my butter does not brown it froths. What kind of butter should I be using? 4 TB did not seem like a lot. Once baked my warm cookies felt apart. SMH help
I reduced the sugar to 1 cup of sugar total (.5 white, .5 brown) and they turned out lovely. This is a really nice cookie recipe. Also added walnuts.
