Hi Sir, I have a question. For the marinating paste, is it OK to reuse another time ? Like after the first time, I use the rempah paste to marinate a new batch of chicken, maybe put in ziplog bag and keep in freezer for 1 to 2 weeks. In 2 weeks, I can thaw it for deep frying again. Thanks in advance.
I also thinking of using my Air Fryer to fry them. I will add in 2 spoons of oil into the marinated chicken then Air Fry them. It should work well. I saw a Malay Chef used Rice flour instead of corn flour or flour for deep fried chicken, it really good and crispy, since then I will add in Rice flour at the last stage after I remove them from the fridge but will add in Tapioca flour to marinate the chicken and more water so that the meat will be tender and juice. @rauha vawda u can find lemon grass in any asian supermarket or convenient store if the dont have the fresh lemon grass, they might have the frozen ones.
