    I tried it! It was delicious and so rich! I used cashews for my cheese since I didn't have macadamias. My hubby is not a raw fooder, but he sure did love this dish!!

    Just coming back to raw foods, and it seems I keep stumbling upon low-fat and fruitarian inspiration - but I feel so great doing some fat and eating healthy comfort food. Your videos are a blessing! Just started watching, and I'm so inspired.

      @@therawchef No, that would be fine! It's just nice having a hard copy in the kitchen that you can pull out instead of having to go find everything on your phone. :)

    This is so so so good. If you haven't made this you should. Its so good my husband loved it and he eats mostly cooked foods and meat. Thanks for sharing.

    OMG thats more oil and calories than I eat in a whole weekend! Beautiful presentation, I watched all your videos years ago when I was totally raw for many years. You are right, there are few who keep it so forever but once you eat raw, you always include a LOT of raw and a small amount of cooked or it feels too heavy, at least for me. But plant based all the way. Even my 3 cats eat veggies, they love avocado, chick peas, steamed corn, peas, string beans, zucchini, and potatoes. I do keep a stick of butter in freezer and run it over the veggies for them. I do this because the kibble portion of their food needs a lot of hydration for the kidneys, so the veggies bring moisture. They look at me eating and say "I'll have whatever you're having"!!! LOL

      yes you don't need oil in your tomato part - just dice the regular tomatoes and that's it! Sometimes i add red bell pepper. People use zucchini instead of oil in pesto.

    I had this dish at our Raw Food restaurant, they did not wilt the spinach. It was good but I can see how wilting makes it better.

    Incredible! Where did you learn how to be a raw chef? Any tips for aspiring raw chefs?

      I picked it up as I went along :) It depends on what capacity you want to be a Raw Chef. If you want to run your own thing, I'd suggest getting your work online and sharing your recipes. That's actually a good move if you want to work in a raw food restaurant too - showcase your work.

    If I don’t plan on serving the dish straight away, would it not be better to just serve the spinach fresh?

      Because the spinach is wilted down, you don't need to serve it straight away. But if you have the time and space, fresher spinach would be nice, yes.

    What could I take to replace the pine nuts? They are very expensive and often already rancid... :( Walnuts????? Or... ??????

    capsules usually contain gelatine though. Not all probiotics are vegan either, right?

      That's correct, not all probiotics are vegan, so if you want specifically vegan ones you'd need to get those.

      For the cheese? Depends which one it is. You could replace the water with a plain coconut yoghurt kefir, that would probably work quite nicely.

    Hi !💚James,
    Could i leave the cheese for extra 12 hours, to accentuate the cheese flavor?
    ... As im spending already a lot for the holidays, i wouldn't like to buy the nutritional yeast, only for this recipe.

      I've left it for up to 24 hours in that first stage. It won't make a huge difference in terms of making up for the lack of nutritional yeast. If you have light miso, that can be a substitute.
