I never knew they made cream cheese flavor extract. I always use powdered lactic acid. It gives that tang you said you were missing. If you want to try it, I usually just add 1 tsp -2 tsp of lactic acid to the regular butter cream, depending on taste.
This is amazing, I love how you provide all the information and demonstrate how you have achieved these looks. I've always wanted to make and design cakes for fun, this is very inspirational. I also admire how you have looked back and examined how you have progressed throughout the years and improved on your cake decorating. Try example of how hard work, practice and consistency truly give results!

I ❤ your then vs now, I honestly like them both, I am struggling on which path do I take when it comes to choosing 3d or 2d fondant toppers, I love them both lol… Thank you for sharing this with us and inspiring us to find out what works best for us and if we make a decorating mistake we can always learn a much more effective technique the next time we are faced with the same type of cake design..
I am the complete opposite! I love making the 3d figures I’m not so great at the 2d yet. I also look back at my work and thought I was so cool and now when I look back I laugh!

You can do both! Like I said, I do 3D bears and Elmo / Cookie. And I can also do some other 3D rice cereal decorations.
