Thank you for this video Karolyn! I'm a hobby baker who has been baking for decades and making specialty birthday cakes for family and friends off and on for a long time. And like someone else mentioned I often want to pull my hair out, or throw everything in the trash, frequently. Friends and family tell me I should start a business, but for some of the reasons you mentioned (among others) I will likely stay a hobby baker who makes special cakes for family as well as cakes for kids in foster care and occasionally sells a cake to someone I know.
It's definitely a love - hate relationship at times. It can get stressful when it's a full time gig, so it may be best to stay small if you're not prepared to take that on yet!
Very good points in this. The amount of work that goes into a custom cake is so much more than what the average person sees/thinks. The doweling one and the ac one are so important. It’s tragic to see a beautiful cake slip and slide or fall apart after all the hard work. ❤

I feel like it's more normal to be stressed while making cakes than happy 😂 That's why I repeat my mantra..."It's cake, have fun!" to remind myself that even my stressful days are better than sitting at a desk selling insurance (which is what I used to do!)
I could not agree more with this! I think I have been more stressed doing this than when I worked outside of the home. The late nights, time away from my kids, lack of food/meal time 🤣, cramped hands, sore arms and knee pain, etc SUCK! But at the same time, being able to express my creativity and make others happy with CAKE are worth it sometimes. Then sometimes, like I commented on another's post, you want to pull a Wylie Coyote/Roadrunner situation and see the "BOOM" caption bubble over it and watch it explode into tiny little pieces for the birds to enjoy! 🤣 Also, yes, I would love to see how you come up with designs for your cakes.
Exactly!! People don't understand what goes into making a perfect cake until they try for themselves. Things rarely go your way the entire time. It must be even more challenging with kids!
I always bake / fill / ice my cakes first. (They stay in the fridge during the week while I make the decorations.). This way, I can take a ruler to the cake where I want to put a decoration to measure how big I can make it!
💯💯💯 I always like to make my own unique design but sadly overhere people like to have more of the same...... I had to get used to it. I feel so happy when I get to design the cake. But than again I go all out with my design and they are on a low budget. Sooo frustating. But we learn how deal with all of it for the love of the art. Thank you!
I agree with what Tess said. I prefer to bake and freeze one day (freeze overnight), then thaw / fill the next day. If you can't freeze overnight, which has happened to me before, I freeze about 1-3 hours, depending on the size. The smaller cakes will freeze faster than the larger ones!
YES!!! So much satisfaction when you see that bad boy go out the door and see the look on customers faces, but also want to pull a Wylie Coyote/Roadrunner situation and see the "boom" caption bubble over it at the same time! LOL

My first cake 2 yrs ago I put frosting on hot cake 😅 and it was awful. Compared to now I have significantly improved. I only bake 4 times a year and nothing in the Phoenix summer 😂. this Halloween I would like to sell Halloween cakes.
😂 and my momma said that’s beautiful you should learn and sell. ❤ also that was the last conversation I had with her before she passed. Because of that it’s why I’m on my cake journey. ❤ I donated cakes and cupcakes in her honor. It helped me through that difficult time.
My 'style" has become edgey edges😄. I have decided to no longer stress and waste hours (litteraly) about perfecting my edges. Nope. I lieave some perfect IMPERFECT EDGES abd add some gold or silver just to them.
My friend thought a $20 cake she bought at a grocery store was a lot. Then she said she should have asked me to decorate a cake for her father-in-law. Ingredients, utilities, and my time would put my salary range at MINUS five cents an hour. No thanks. This is why I only want it as a hobby and for family members.
Ummmm, yeah, I would have turned that one down too. Tell her to make it and see how much work it is! Also, she would never work for -$0.05 / hour, so why would she expect you to?!

How long should I freeze my cake layers after I bake my cake layers? Is it a different time with different sizes?
You can freeze as little as 30 minutes but best if overnight. You can freeze for a couple weeks without issue.
