I once made a buche de noel and the wrong type of chestnut purree, it didn't taste bad but eventually I realised there's a sweet chestnut purree used for puds and sweet treats and regular chestnut purree which is for things like stuffing balls or turkey etc, "maroń glacé" in whole or purree, it's delicious.

I also could not find Marin glace, replaced with baked chestnuts I found. Well, that was interesting, but nothing unusual, no special taste. But it worked! Could you please tell me what taste should it have? Or like what? I am really intrigued.
