Made this for the first time from Andy Ricker’s Pokpok cookbook. Too spicy for my wife and while I like pork belly, too much fat in my mouth is unappetizing. I used some other less fatty pork cuts. No toasted rice powder in his, and it had pickled garlic as well. Close enough!

Mine is exactly as we make it here, in Thailand and I have lived here 20 years. (Pssssst Andy lives near here too, haven't seen him in a bit, last time in the gas shop) small world eh! Thank you. Best, Rik

Excellent video. From the way you have made this it appears as though you have learnt this from a person and not from a cookbook?

Hi Bryce - I have not learned anything from a cook book - you are right i have watched for hours and cooked with Thais and under Thai instruction to cook everything the right way. I'm glad you enjoyed the video there are many more to come.
