    (Makes 1)
    350g Bread Flour
    280g water
    7g salt
    70g Levain or 3g Instant Yeast
    10g Olive Oil (optional)
    🅜🅔🅣🅗🅞🅓 ♡
    ➡️ Mix water, levain (or instant yeast) and flour together until no dry flour bits remain.
    Rest for 30min
    ➡️ Dimple in the salt and mix until thoroughly incorporated
    Add oil, if preferred
    Rest 30 min.
    ➡️ Perform 1 set of stretch-and-fold
    Rest 30min.
    ➡️ 2 sets of coil folds, 30 min apart
    ➡️ Place the dough in the fridge for overnight cold proof.
    ➡️ The next day, bring the dough to room temp and proof until double
    ➡️ Preheat oven at 250 - 260C
    ➡️ Tip the dough out onto a well-floured surface
    Dimple the dough
    Drizzle olive oil over the dough surface
    ➡️Bake for 10-15 min until nicely browned.
