    What i love about Safiya is that she goes to these business as playfully as she can, but when it's time to work, she follows every instruction and isn't there just to mess up their work or to bother them. She actually wants to learn and inform people around her; she's respectful, goofy and promotes small businesses the best way possible.This is what makes everything so much more enjoyable and fun

    If anyone in the comments EVER complains about you posting fewer videos: girl, please never listen. You make such long, quality videos, it's worth waiting for them with how in-depth and informative and fun they are. For me (and probably for other people), it's like waiting for movies to premiere.     I appreciate the space between these videos can you imagine all the work that went into this? Travel planning, bakery partnership negotiations, actual travel, staff coordination, scripting, editing…. God. Also did the bakery have to shut for two days for this, did THEY promote it?! Like wild. All for us to have a cute hilarious video of Saf making cwossaints.

      Boo i replied to the bot comment.
      I did a little google sleuthing and it looks like the bakery is closed two days a week (probably for general prep along with letting the staff take a break) so my guess is that Saf came in during off hours for the main bulk of filming. Between teaching a novice and working around filming set up, wouldn't surprise me if this small test batch is all that she made. But for a first timer without a culinary school background, she did really good!

    I think using the dough scraps for the black stripe was probably the main issue. Because the dough wasn't made black from the start, trying to incorporate the color into already mixed dough meant it ended up getting overly mixed, so it got chewy and stretchy. It didn't quite fluff up the way the rest of the dough did.

    When in culinary school for Patisserie and Baking, part of the first courses is to whisk your Whipped Cream by hand. So in a way, yes, it is a kind of hazing but also to make you appreciate how Bakers have been doing it for decades before Mixers, aside from present day Bakeries that don't have the Machines/Machines that break down.

      I used to have make my whipped cream by hand because I didn’t have a mixer 😂 my mom taught me to freeze the bowl beforehand and it made it easier

      My parents had the hand cranked whipper that we used for most whipped cream. When some was left over (rarely), we sometimes massaged it into unsalted butter . Only for big bowls of whipped cream did we use the electric machine .

    as a french person I'm always amazed at how crazy imaginative people from other countries got with croissants. Like in France you'll never see a croissant cube or a croffle or anything like this haha (or maybe in like specialized bakeries you can only find in big cities) but nothing beat the taste of the og croissant for me

      You're right! I was thinking about how much Safiya reminds me of when I was growing up with shows that had people with really fun, friendly personalities.
      I loved watching Mike Rowe and also Mo Rocca on My Grandmother's Ravioli where he'd visit different cool older people and cook with them.

    34:45 Here in Austria, where that Syrup is from you guys used, this syrup is typically consumed while skiing as Ski Wasser (skii water) so yeah, definitely a mountainous flavour:)

    I feel like these types of videos Safiya makes, is like "first day at a new job" type of way, which I actually think is really useful and healthy for people to see, like starting from knowing nothing, to actually achieving a finished product.       It's not, don't worry. It's just the rapid gentrification here means an unusually high concentration of trendy small businesses. The current trend is making croissants into anything but a croissants, so we ended up with a lot of trendy little places that make them. It's new and definitely won't last.

    Edit: Guys, please calm down. I'm not saying Safiya should stop making RUclips content. I'm just saying I can picture her on a streaming service hosting a limited docu-series centered on a specific topic, or maybe she's a judge in a competition show or something.     Safiya, i dont think you realise how big a difference you made in my like, i discovered you during the covid and you were the one that got me through it. You and tyler are my comfort youtubers and i ALWAYS watch your videos when i feel ill or sick. the blue lagoon one is my fav but really just hearing ''Hello friends'' at the start of one of your video just puts me in a diff state entierly. i'm french and your videos are still my comfort thing..     Back in the Stone Age (the 80s), I had to learn to laminate dough and whip egg whites stiff by hand. I also learned to test sugar syrup BY HAND ( no lie, sticking an index finger in 300 degree syrup). Consequently, the sheeter and 80 quart mixer are now my besties.

      There's a lot of gf products available nowadays, maybe you could find a gf flour and bake your own?

      ​@@yriEth baking any type of dough without gluten is incredibly difficult, the gluten is a fundamental component that gives the dough structure. I think a GF croissant would be a pale imitation of the real thing, if even possible in the first place

      @@potatoppppower 100%. I've seen gf crescent shaped rolls, but making an actual croissant would not be possible with gf doughs. We can't even get a gf donut unless it is cake style.

    7:22 it looks like the “mishmish” has some dried apricots on top and/or as filling, which makes sense since “mishmish” “مِشمِش” is the Arabic word for apricot!

    I get hot hands a lot when I make cookies that require being rolled. Rinsing/washing your hands in really cold water seems to help.
