- Know how to make tasty and healthy Hagalakai Gojju in Udupi Brahmin style. Narrated in Kannada with English subtitles.
Ingredients:
Hagalakai or Bitter Gourd - 2 medium sized
Fresh Coconut Grated - 1 Cup
Tamarind - 1 Lemon sized
Byadagi Red Chillies - 3
Cumin Seeds - 1/2 tsp
Jaggery - 4 Tbsp (You may reduce Jaggery)
Salt
Oil - 1 and 1/2 Tbsp
Mustard Seeds - 1 tsp
Urad Dal - 1/2 tsp
Curry Leaves - few
Turmeric Powder - 1/2 tsp
Coriander Leaves
Method:
1. Cut the 2 Hagalkai or Bitter Gourd into half and remove the seeds. Chop Hagalakai or Bitter Gourd into small pieces. Keep aside. Here I am not soaking them in Salt water to remove the bitter taste of Hagalakai or Bitter Gourd. Bitterness is not removed in this recipe as it is good for health yet this preparation tastes great.
2. Soak Tamarind in 1/2 Cup of Water for half an hour before you start the process. Squeeze the Tamarind and discard the residue and preserve the Tamarind Water.
3. In a mixer Jar, add 1 Cup grated Coconut and add 1/2 tsp Cumin Seeds and 3 Red Chillies and add 1/4 Cup of water and grind to smooth paste.
4. Heat 1 and 1/2 Tbsp of Oil in a kadai. Add Mustard Seeds; once they splutter add Urad Dal and let them turn slightly golden in colour. Add Curry Leaves and fry for a minute.
5. Now add chopped Hagalakai or Bitter Gourd and add Turmeric Powder and mix once. Fry in low to medium flame till they shrink and change their colour slightly. This may take about 10 minutes. Take care to see that the Hagalakai pieces do not get burnt.
6. Now add Tamarind Water and 1/2 cup water and close the lid and cook it for 5-8 minutes till Hagalakai or Bitter Gourd pieces turn soft.
7. Then add 4 Tbsp of Jaggery, Salt and mix everything once. Then add the ground Coconut paste and mix everything well. Cook this mixture for about another 5 minutes until it starts to boil and switch off the flame. Finally add Coriander Leaves.
Now Hagalkai or Bitter Gourd Gojju is ready to serve. Serve this with hot plain rice. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.

Thanx so much Hema are. Nam thayi maadthayidhru haagilkayi gooju. Naanu chikkadhagiruvaaga bari haagilkayi gojjinna gravy part maathra thinthayidhe. Haagikaayi thumba kahi irathe untha naanu actual hagilkayi pieces(HoLLu) na thindthayirlilla. Adhara nutritional value nu gothiralilla aaga. Eega sumaru varsha adult aadhamelle gothagidhe hagilkaayiya nutritional value and I have actually liked the haagikaayi pieces ( HoLLu) in haagikaayi gojju.

@@CookWithHemaAdiga one more doubt is we are not supposed to put chilli powder? U kept only red dried chillies while making paste. Is that will be enough?
@@ShyamalaVinod If you want spicy, add spicy variety of red chillies or the increse the same ones. If you want to add Red Chilli Powder, add while grinding and skip the Red Chillies. We usually don't eat more spicy, so added less.

We are from Udupi district and we do our best to stick to the traditional recipes from that region as passed on by our elders. If this is not Udupi style Gojju, can you pls explain what would be different in your experience.
