I’ve found the easiest way to fill the piping bags (for this Russian tips process) with the multiple colors is to lay out Press and Seal by Glad on the counter. Spread out the outer color on it. Then put the other in the center. Roll it up around the inner color. Twist both ends of the Press and Seal. Snip one end and then just drop it in your piping bag with the tip. It makes clean up a breeze and it doesn’t get all over your hands. Hope those directions make sense. Love your videos.

These bring me back to Russia circa 90s. Instead of cupcakes, these tips were used to decorate Flower Basket sugar tartlets. Lined with jam, topped with a heaping swirl of Italian meringue and decorated with mousseline cream flowers around the perimeter, they were everyone's favourite. Always first to sell out, if any were available after 3 pm, it was a guarantee a new baker made a mistake and used plain buttercream all around.

The tartlets sound lovely. As a newbie in pastry, your comment sent me on an online educational detour into different types of pastry creams. Thank you!

a tip might be to pop the buttercream in the fridge for a bit before you start piping so it’s a bit more stiff and then the buttercream will soften up again afterwards :)

I always did a softer buttercream by heating it up. This made it easier to manage and pipe out with a much smoother look. At work we used a torch and hit the side of the mixing bowl while it was whipping. At home, an alcohol lamp is better than a candle, perhaps a heating gun if you don't want open flames... No black streaks from the wax. For sharper colors, I sometimes like to load the bag with another bag fitted with an eclair tip as you can get several different colors that way. I also like to use just the tiniest spot of dye and touch the inside of the edges with gel color using a toothpick. You get the streaked effect that way. great vids!

I bought a set about 6 months ago. When you get the hang of it, they are indeed amazing! You, of course, learned a damned sight faster than I did! They look amazing! I bought the ball tips you mentioned as well. The ball tips really made short work of 6 dozen cupcakes for a wedding shower. I got a three-way coupler to use with them, so the frosting was a beautiful tri-color. I did use a soft American buttercream for all. Great video!

You are adorable AND super informative. I just found your channel because I am cooped up with the quarantine. I am over 50 years old but I took a Wilton decorating class when I was in 8th grade - thats how far back my cake icing obsession goes. Since I grew up in the 80s, I associated "preppy" ala Pretty in Pink as the stuffy pompous so I actually avoided your videos. THAT HAS ALL CHANGED! You have now redeemed my appreciation for the entire genre because of your aesthetic. Now back to your amazing tutorial videos. I have been searching for DAYS on the right icing to use for my new Russian tips because a lot of the Pinterest photos showed cracky irregular points that reminded me of my worst work in high school. Now you have answered the question! It's all about Swiss meringue. Your video on Swiss meringue is perfection on it's specificity. Thanks for being awesome!

I would rather watch John learning to use Russian tips than I would an established expert show off with them.

Hello! I am a amateur baker and I grew up in Russia, the cakes in the stores in Russia always have flowers

You did great with them especially for first try. I love these tips. Korean buttercream makes beautiful flowers with these tips for events like easter, weddings, and mother's day. A good regular american buttercream recipe makes for great colors for all kinds of events. It just takes a little practice. Hover just about the cupcake and then don't pipe them to high. But a thicker buttercream is the way to go. Hope this helps. :)
