I do remember how special the holidays were when my Baba did make some of her dishes . My mom and great aunt used to make stuffed cabbage rolls, except they used ground beef, and made them in the pressure cooker....and they came out perfect, and tender...than the traditional oven baked.

My friend told me to add quarter cup half vinegar half pickle juice. Don’t know if it works but I guess I can try it lol. My husband is Serbian and I want to surprise him by cooking dishes he’s introduced me to. These videos are the only English ones I’ve found. We lost his grandma before I could learn everything I wanted to and his mom lives far away. We are a military family so sometimes things are hard to find. I’m so grateful for these videos. Thank you so much for putting them out.

thanks for creating this video, my husband was born in Beograd. Adopted as an infant and grew up in New England. He never knew his bio mom. So it is interesting to find out what he may have eaten had he lived there. I will try these recipes.
You are the first person I've seen that cooks the meat before stuffing it into the cabbage or peppers. I've seen others cook the rice first, then add to the raw pork or beef. And some use uncooked rice and uncooked meat. So interesting to see the various techniques!
It's much tastier when you cook meat first, with onions and seasonings,and meat doesn't form hard chunks inside the cabbage leaf, like when it is raw. In Serbia, we always saute meat first. But I don't think that lot of people add an egg. In US sarma is called cabbage rolls.

You're wonderful Chef Baba, I wish I still had my Baba. Hahaha, I used to do a very similar thing to Damir, only I would only eat the cabbage and throw away the meat behind my mother's back, I never liked the taste of pork! So I would now use ground turkey or mince turkey as we say in the UK, and I no longer eat beef, but I love Sarma and Stuffed Peppers. So yummy!
In the old days in Yugoslavia /Croatia now broken up,but they did not have Freezers they had underground storage, which in winter they had all their meats and bottled up items for storage and then in different seasons they would make what the required for the different foods they ate, like in winter they had beans with home made sausages and pasta and the same with Sarma,which is eaten mostly in winter time, but due to modern conveniences we can eat anything at any time now days ?

I just made this evening both stuffed peppers and collard green rolls/stuffed collard greens (in dinaric area we also use collard greens - raštan instead of sauerkraut).
Also dad never through away anything at all! With the meat he did meat balls!
Hello Chef Baba, my Grandparents are from Belgrade. My Grandmother taught me how to make Sarma this way. ( I make this recipe larger ) I start out with about 12-15 pounds of raw ground beef not fried, par boiled rice, salt and pepper. I roll the same way you do. I have a massive pot and put tomato sauce with water. I never counted my Sarma but I think I make about 100 . I vacuum pack and freeze them to have for about a year. Have I been making Sarma wrong for about 50 years? I was never taught vinegar either. Your Sarma looks delicious. Very nice to meet a fellow Serb. Great video!! Thank you.

This is only stuffed cabbage, not sauerkraut rolled cabbage, like most people have, totaly different taste and cooking, basically the bacon needs to be put through a mincing machine and you add that to the ground beef and veal mince and you will have the best tasting sauerkraut ? Also a smoked pigs troff and smoked bacon with skin on ,perfectly cooked sarma. :)

OMG, two dishes to die for ! i make stuffed peppers often but stuffed cabbage is very time consuming. but baba is right . you need the fermented heads of cabbage. here in michigan i can only get it in the fall n winter . when i do find the cabbage that has been fermented at my local yugoslavian store i rinse each leave before rolling . still salt n sour taste but a little less . ty baba for a great cooking video and great memories of my younger days as a teen . keep those fantastic videos coming . god bless you n ur family n have a great week ahead .

Also I remember my dad preparing this cabagge puting leaf bye leaf in a proper container with salt. One leaf, salt and so on, then pressed it with something heavy and leave it there there for a while in orden to make chucrut and sarma.

Thank you for the vinegar tip Baba ! My daughter's father is Serbian from Belgrade. I was taught to lay the biggest leaves on the bottom of pan, make the cabbage rolls like you did, but I add some worchestershire sauce, bit of Marjorium and Thyme spices to the meat, rice, and egg, and lay rolls in the pan. I take sauerkraut and rinse it well and put on top of cabbage rolls. I would get a piece of smoked butt and dice it up and put some on top of cabbage rolls. Then you put a layer of big or torm leaves on top. And do again as the first layer and continue til done. I add a few cans of tomatoes and a small can of tomato paste. I put about 2 med. size bay leaves in the pot and water to cover, put lid pan and cook over med heat, shaking the pan ever so often til done. I'm so happy I found your channel. Now I can learn more about making other Serbian cooking. Thank you so much !

I've a question. I am Yugoslavian, specifically Serbian. I've been eating this my whole life, however, we always called it Salma. Is that just an "Americanized" name for Sarma, is it a regional / religious thing, or just a family thing because my grandparents couldn't speak english?
