MY SERBIAN GRANDMA TEACHES ME HOW TO MAKE SARMA | Stuffed Cabbage Roll Recipe

- This week I'm introducing you to my grandma (my Baba)! I’ve been cooking in the kitchen with her for as long as I can remember and today she is teaching me, and all of you, how to make sarma.
The preparation of sarma, or cabbage rolls, vary from person to person and country to country but this is how my Baba has been making it for years! We typically prepare sarma for special occasions and use homemade pickled cabbage with a hearty filling consisting of meats, veggies, and lots of garlic.
Also a quick fact for you, did you know the word sarma comes from the Turkish word meaning “wrapped”? The more you know!

🥣 Ingredients
🥬Sarma
Oil
1 lbs smoked bacon
6 onions, chopped
2 carrots, grated
2 lbs beef
3 lbs. Pork
3 tbsp. Salt
1 tbsp. Pepper
2 tbsp. Vegeta
Paprika, to taste
2 cups rice, uncooked and rinsed
Handful of parsley, chopped
3 large cloves garlic
2 tbsp. Flour
Other
Pickled Cabbage (there are about 10 leaves in a head)
Bay leaves
Smoked pork
🗺 Directions
Over a medium heat, add oil to a large pot. Let it heat up a bit then add the smoked bacon, onions, and carrots. Let brown and add your meat. Cook about half way then add pepper, salt, Vegeta, and paprika.
Add the rinsed, uncooked rice, parsley, garlic and flour to thicken the mixture.
Mix very well and cook the meat completely. Let cool until you are able to handle the mixture.
Separate the leaves from the head of cabbage and cut the stems off. Lay the leaf flat and scoop a large spoon of the mixture in the center of the leaf. Fold the sides in, just a little, and roll the cabbage tightly. Place on a plate, seam down.
Once all the cabbage rolls are ready, oil a large pot and layer with some loose cabbage leaves, a few chunks of smoked pork, bay leaves, and paprika. Lay the cabbage rolls flat and continue layering.
Top with more smoked bacon, cabbage leaves, and paprika. Fill the pot with water and place an upside down plate on top. Let the water come to a boil on high heat, then reduce to medium heat for about 2 hours. Stay close, you may have to adjust your heat.
Once complete remove from heat and enjoy!

🌟 Review and Tips
1. Store the cooked cabbage rolls in an airtight container overnight or freeze to enjoy at a later date.
2. The extra layers of cabbage on the top and bottom of the pot will prevent the cabbage rolls from burning.
3. You can use any combination and quantity of meat you like. Make it vegan by substituting the meat for diced potatoes or pescaterian with canned tuna or your favourite cooked fish.

My father was Serbian. My mother learned how to make Sarma from his mother. We had many Croations foods. When you said "coffee break", that took me right back. There was always a coffee break when women were in the kitchen cooking. You and your Baba are so cute.

This takes me back. My father is Serbian but my mother is German and she was the one who actually cooked the sarma for our Slava every year using a recipe from my Baba. Absolutely delicious dish, I've never known any non-vegetarian who doesn't love it, and it makes your house smell amazing! I would practically dream about it in the weeks leading up to Slava, then I would eat leftover sarma for weeks until I got so sick of it I never wanted to see another bowl of it ever again, lol. Until the next January that was, when my cravings would kick in again. Now that I have my own home I'd like to try my hand at making it, so thank you for the recipe!.

@@janakolasinac1686 I did last year, twice! The first pot was a nearly total loss lol, didn't know what I was doing and messed up just so, so many things. Threw it out and made a second pot which came out tasty. Did my customary gorging and froze the bulk of it for my best friend and his family. My friend said it only lasted until the next day, so I'd say that was at least some confirmation I got it right. :)

My family is Croatian and our sarma is just about the same with whole cabbage being sour. We make sauerkraut in the barrel for the late fall and in time to have cabbage rolls for over Christmas and then to last until April. A barrel is a lot and it is kept in garage.

I learned of my Croatian and Slovene heritage when I grew up, I’ve been trying to learn the wonderful Balkan recipes like this one. I eat my Sarma with squid ink risotto, boiled potatoes, or plain.

Your Baba is so cute. And you're not too bad yourself. I love to cook and was watching a video about Serbia before the revolution. They mentioned sarma and I found your video. This is one of the best cooking videos I've watched. There was enough detail about the ingredients that I'm going to try to scale it down a little and make it for friends. I'm hoping I can find a European store here to buy the pickled cabbage heads so I don't have to wait three month to make my sarma. Again, great video.

@@tetkanadia9045 Dear Nadia, you never freeze already cooked Sarma. It tends to be mushy after defrost. Here's the catch. You do everything till the point of cooking it all. You stir fry meat and all, and make rolls with fresh sour cabbage, and just freeze it like that! Than, in months, when you wish for Sarma, you just take it direct out of freeze and put it in a pot, smoked meat, ribs, what not,...and cook it like freshly made. And it is like heaven, no mush! Also, you eat it with Proja (like corn bread) !

Hehehe we make sarmale ( Sarma is for singular in Romanian language) in Romania too. But we put same tomato past in that meat composition to give color instead of paprika, and it give an very good flavor.
I understand Baba , my mom and all my sisters don’t measure the onions and all those ingredients, they make it just because they know how much to put it just by looking.
