    Hello Elham, thank you for another useful "mini-lab". It generated at least one question to which I hope you'll have the time to answer: rice starch in emulsions helps with the water activity(less free-water) or creates more issues for the preservation system?       thanks for your kind words. The starch doesn't reduce the water activity but does not increase the risk of contamination. In all the years we have been using it and our customers have been using it we never had any contamination issues nor did we have to increase the concentration of the preservatives compared to when the starch is not present in the formulation
