I had to laugh when you added the sugar, it brought a favorite memory. My dad was from the deep south and I guess they didn’t add sugar to their cornbread, and my mom, who was raised in the west, did, so when my mom made cornbread, he would tell my mom, that’s not cornbread, that’s cake. lol
Raphael, I put a tablespoon of sugar in my cornbread, at most 1 /4 cup. For contrast, like you might put a bit of salt in a sweet dessert. Like the OP’s dad, I’m from the (mid) South and we think of cornbread as more of a savory treat. Put jalapeños in the cornbread as a great accompaniment to chili. Use it in stuffing with celery, onion and savory spices.

This is so funny I just remembered that I had bought cornmeal to try for the first time and that I should start to look for recipes! I have ever seen a recipe with cornmeal before, what a coincidence :)
This turned out great for me. I made half the ingredients and lumped it into a 6 inch cake pan. The top came out beautifully. Thanks, sir, for this easy recipe.
I made Split Pea Soup and canned 4 or 5 quarts a couple months ago…..I wasn’t thrilled with the taste of the recipe I followed so I’ll look for someone else’s recipe…..but cornbread will go good with your soup…..

Yes. I mix everything together and let sit on counter for 1 to 3 hours….or overnight….then in fridge. Old ladies taught me that. It helps it all to meld together….and utilize its moisture overall. It is worth ALL the effort and wait!!! Ahn 😀

Can't wait to make these tonight. I love the honey butter idea, a switch-up to that is maple butter. Maple syrup is loved here in Canada, so subbing would b pretty simple, adjust for consistency. I would also add bacon bits to the muffins. Thank you for this presentation

That is what I will do because I have always made my cornbread with buttermilk. And it also has a little bit of baking soda in it. We will see what happens

I always let my batter sit for about 5 minutes after mixing. That ensures the flours are thoroughly hydrated. The batter is a whole different consistency when you do this.
Just subscribed to your channel. Great videos. I made your corn muffins a few days ago and I have stopped looking for corn muffin recipes. Yours recipe is excellent. I have not tried the honey butter, but I shall very soon. Thanks again.

Love your channel dude. Best f*%#£¥ recipes ever. Just did your blueberry cobbler but added a little maple blueberry purée that I made and it was delicious bro. Little bit of vanilla icecream and my 92 year old nana was asking me where I learned and when I learned how to bake (I’ve historically just been a cook never a dessert guy) and I said I watch John on RUclips and she said “I need to learn this RUclips” lol. Haha, you saying that the cornmeal can go bad reminded me of when I didn't notice my cornbread muffin mix was out of date and I baked them up. The muffins were terrible. They TASTED musty. I threw them away outside. Now I'm always careful, haha.

Used a Jiffy cornmeal muffin package then searched for a recipe and forgot about John! Silly me, two types of recipes and the second (that I didn't forget the flour in) is bland-it has more flour than cornmeal! So now I know I will have a delicious recipe. Oh, and I'm baking them in a fifth wheel's propane oven, they don't brown on top but the sides and bottoms look great!
This my go-to recipe! I usually make it as a full cornbread instead of muffins in a square pan. Takes about 22 minutes in my oven. Delightful!

Melt your butter using the defrost function on your microwave. It takes a little longer but there are no explosions.

This might sound a little strange but I use softened butter and do the reverse creaming method with the butter. So moist
