I just wanted to say that you have been such a great help to me and my family. Not sure if you remember, but I had commented a while back about my fiancé being diabetic. Well, when I first started watching you, I had never planned on following the keto diet but after his diagnosis we had to make a change! (especially after hearing the price of insulin and doctor bills) Well, hear I am months later and I’ve lost over 25 lbs and he’s completely off meds for his diabetes!!!!! I never in my life thought that something could change my life the way this has. I’m not what you would consider strict keto, I’m more of a lazy keto. I don’t use the pee strips and I have more than 20 carbs a day. My main goal is to have the least amount of carbs as we can with the guidelines that the doctors had given us for diabetics. I’m NEVER hungry like I used to be and normal carbs and sugar make me sick and give me headaches, so I don’t have cravings like I used to either! Anyways, I just wanted to say thank you for sharing your tips and videos with us! You have no idea how much you and others have changed my life! ❤️ God bless
I just made these Gnom Gnom muffins this weekend, I add 94 g of mashed fresh banana Net carb total came out to be 2.26 per muffin instead of 2 net. I feel the flavor and texture is greatly improved. I think we get way to hung up on thinking all fruit is off the list for low carb, I use some common sense and use a very small amount for the flavor, bananas have a strong flavor so a little goes a long way.

Earlier in the week I made Kristie Sullivan's Cream Cheese Blueberry muffins and I was really shocked at how good they were, both in taste and texture. Low carb baking is evolving for the better!

Those sunken muffins are the perfect holders to pipe in some whipped keto banana cream frosting (whipped heavy cream, sweetener, vanilla and a couple tbsp sugar free banana pudding mix)

You should try the Banana Bread recipe from "All Day I Dream About Food". She uses chia seeds to make a wonderful banana bread texture. And it freezes wonderful! Next time I make it, I will coat my pan with cinnamon "sugar" (using monkfruit) and then bake it.

Just checked Papa G’s banana muffin recipe, actually he mixed the nuts in the batter. I agree with you that the amount of sugar substitute is a bit much however after cooking for decades I usually tweak recipes anyways. Thanks for your vids, fun to watch!
I make Cooking Keto with Kristie’s blueberry muffin recipe, omit the blueberry extract and blueberries obviously and just add in the banana extract and chopped pecans. They are wonderful!
In Papa G's recipe I would suggest leaving out the baking soda. It doesn't have anything acidic to react with in the recipe so it's over leavening the batter. Regular banana bread recipes have bananas and sometimes brown sugar which are acidic so that's why the recipe includes baking soda . When converting regular baking recipes to Keto you have to consider the function of the ingredients.
Kathy Swigart No I haven't tried that change yet. I need to order the banana flavoring. I did think of another modification instead. Leave in the baking soda and substitute regular yogurt for the heavy cream. That would give the baking soda something to react with.

I just made the Gnom Gnom muffins, the texture is just like a REAL MUFFIN! And the Banana extract is ok ( the flavor reminds me of those orange circus peanuts candies. I’m Going to try Banana OIL, it’s used in candy making and when I would make pudding for banana cream pie , I used it & was EXCELLENT!
I agree on both counts. There was no acid to make the soda react. To his defense, he apparently did add some of the nuts to the batter and only a portion of them to the tops.

Well, you could crumb up the Papa G's muffins and sprinkle them over yoghurt or something like it, the protein and tartness should balance out the sweetness for you! Or maybe mix them with some cream cheese and make banana nut bread pralines?

Hi Wes! Tried the second recipe today. Liked it, didn't love it. Let me tell you my thoughts. :) I loved the texture inside but didn't like how it wanted to get nearly burned on top. A lot of our keto baking recipes call for 325 baking temp instead of 350. So I thought I might try lowering the temperature and seeing if that might help with that, maybe even trying like 315 or 320 (??). Like you, I'm not a fan of the flavor of flax. That flavor was not something expected or appreciated in a banana nut muffin so I'll DEFINITELY leave that out when I try these again. It wasn't awful. But it detracts from the banana flavor. I'm not sure what else, other than that flavor I don't like, flax would bring to the party. (?) I used 3 tsp of banana extract as per the recipe. It was good, no chemical kinds of flavors or anything and a nice banana flavor. But I might bump that up just a tad next time. But I'm kinda like that with vanilla, too. I like it stronger. When I got nuts for this recipe, I got what I think was English walnuts rather than black walnuts. I normally do like English walnuts but I think the black walnuts would add more character to these particular muffins, at least to my taste. I hadn't thought of that earlier. What I made would be "good". But I kinda think with some tweaks, they might become "great". :) Certainly interested in your comments if you wanna, but I know you probably get thousands. Anyway, thanks for posting the banana nut battle! It inspired me to make some, something I wasn't sure keto could do. :)

Wesley… I think you are bang on with the nuts weight on top. You could turn the oven off and open the door to allow the heat to drop more slowly 🧐 I think… except I just complicated the not complicated recipe 🤦🏼♀️
When I just watched Papa g's video for these muffins, he did put most of the nuts in the batter and a few on top. Don't know if this was the reason they sunk.
I have used both Swerve and Wholesome Zero Erythritol and prefer the Wholsome version because it is much less sweet and no cooling effect. You might want to give it a try. I recommend your channel to everyone!
I just looked at Papa G's video as well as the written measurements in his description. So the written measurements say the equivalent of 1 1/2 cups of sugar not equal amounts of almond flour and sugar. Checking the link of what sweetener he used, he uses a powdered stevia and the packaging of that says 3/4 of a teaspoon equals 2 teaspoons of regular sugar. I suck at math so I'm sure how much sweetenever that comes out to but he used far less than 1 1/2 cups. i'm wondering if remaking these using the same measurment of sweetener he used would make a difference and not sink?
@@bobschiller6435 I made this recipe today using that 1/2 cup + 1 tbsp of sweetener (i used lakanto) and it turned out like a normal muffin would, albeit a bit on the dry side. But 1 1/2 cups of sweetener is probably the reason why they blew up then sank.
Just made the gnom gnom muffins and they are really good. I accidentally used white sweetener rather than brown, but still turned out great. Next time I will use sukrin gold as I’m sure that adds a richer, deeper flavor. Thumbs up on this recipe. Thank you 😊

I just began making recipes from gnom gnom a couple of months ago. Took me a while because seemed so involved. Finally dove in and made various things like the ravioli, pizza, and even the 'apple'pie and love them all!!! Helps to prep the doughs ahead of time..and my food processor is my bff now for the dough lol. Now will need to try this recipe...just great 🙄🙄!! Lol As always, a lovely video!!

I think that Papa G needs an acid for that soda to work well. And mix the nuts in the batter. Thanks for a great video.

Adding some thin chopped zucchini to mine for baked banana texture.
I use a ton of the Olive Nation extracts. Love the green apple to make apple crisp using eggplant.

Dr. Berg says it ok to use a small amount in baking. It won’t affect your sugar as much a you think... but eat after your meal not hours after.

Wesley… I think you are bang on with the nuts weight on top. You could turn the oven off and open the door to allow the heat to drop more slowly 🧐 I think… except I just complicated the not complicated recipe 🤦🏼♀️
Cream of tartar instead of baking powder would probably work to keep the muffins from cratering.

When I just watched Papa g's video for these muffins, he did put most of the nuts in the batter and a few on top. Don't know if this was the reason they sunk.

I have used both Swerve and Wholesome Zero Erythritol and prefer the Wholsome version because it is much less sweet and no cooling effect. You might want to give it a try. I recommend your channel to everyone!

Gnom Gnom has the best recipes! The banana nut bread is awesome. I use a loaf pan.
I just looked at Papa G's video as well as the written measurements in his description. So the written measurements say the equivalent of 1 1/2 cups of sugar not equal amounts of almond flour and sugar. Checking the link of what sweetener he used, he uses a powdered stevia and the packaging of that says 3/4 of a teaspoon equals 2 teaspoons of regular sugar. I suck at math so I'm sure how much sweetenever that comes out to but he used far less than 1 1/2 cups. i'm wondering if remaking these using the same measurment of sweetener he used would make a difference and not sink?
If my math is correct, that's 1/2 cup plus a tablespoon.
@@bobschiller6435 I made this recipe today using that 1/2 cup + 1 tbsp of sweetener (i used lakanto) and it turned out like a normal muffin would, albeit a bit on the dry side. But 1 1/2 cups of sweetener is probably the reason why they blew up then sank.

Just made the gnom gnom muffins and they are really good. I accidentally used white sweetener rather than brown, but still turned out great. Next time I will use sukrin gold as I’m sure that adds a richer, deeper flavor. Thumbs up on this recipe. Thank you 😊
they look delicious. thanks for this one. i have one question. im a former carb addict. ive been staying away from sweets because of that. i have no cravings for carbs at all now and havent since i started keto about 5 weeks ago. ive tried a couple of keto breads and they dont give me cravings. but im wondering if the sweeteners will get me craving sweets. any thoughts on that?
I just began making recipes from gnom gnom a couple of months ago. Took me a while because seemed so involved. Finally dove in and made various things like the ravioli, pizza, and even the 'apple'pie and love them all!!! Helps to prep the doughs ahead of time..and my food processor is my bff now for the dough lol.
Now will need to try this recipe...just great 🙄🙄!! Lol
