Medium rare.
Ruth's is very good, but so very expensive. So, I only eat there, when someone else is buying lol.
I have only eaten at Ruth once, but it was delicious from the first bite.

Eaten at Ruth’s Chris/Harrah’s in Vegas around 4 times, and they’ve never disappointed us.
My wife and I love Ruth Chris one of favorite, I recommend trying it.

I don’t think it is mentioned here, but Ruth bought a steakhouse in Louisiana in 1965 called Cris Steak House and just added her name to it becoming Ruth’s Cris.

Just ate there a few days ago. I’ll be ordering with a standard plate and no butter. Had to salt the steak myself. Otherwise, great service and sides.
Dry aging also makes moisture evaporate resulting in shrinkage of up to 20%, at least that was what happen at a steakhouse I worked at

If what you are "used to" is supermarket meats, which are CHOICE, for sure you will enjoy a PRIME cut of meat
However, you can buy PRIME STEAK from local meat markets and even COSTCO !!
The difference between CHOICE and PRIME is tremendous.....Try it, cook your own ... 1 1/2" thick prime on the gas grill 7 minutes per side, no butter
just SALT and PEPPER and you will be amazed

I've had dry aged steak in the past and that was excellent. I'm curious why corn starch isn't used on these steaks to seal them before searing. Probably a few details on dry aging got omitted. As it was described to me, the aging process grows mould on the steak like fur. When aging is complete that fur is scraped off the steak and it is that mould that does the aging. Could it be if corn starch were used to seal steaks before searing the broiling temperatures used would start a fire in the broiler?
Ruth Chris does not dry aged their steaks. wet aged that’s how it done
Be careful when the sizzling plate is served at your table. Some of the fluids will spit on your clothes. I had a shirt ruined this way.

I ate at Ruth Chris in Knoxville, Tn this last weekend. The steak had no taste other than pepper. Worst meal I have ever had.

My sister-in-law worked at Ruth's Chris in Cleveland for a few years I personally would rather eat a steak from longhorn talk about offended when I went to put ketchup on my steak cuz it wasn't up to par 🤷 definitely not worth the price a la carte my ass 🤣🤣

I rarely go to steakhouses because I'm very picky about how my steak is prepared and chosen because I envariably get one that's tough or not seasoned well. A good piece of steak doesn't need much to bring out it's natural beefy flavor. When prepared and cooked right, it doesn't need steak sauce, topped with fries/onions or to be basted and topped with butter. I want to taste my steak, not what it's been covered or topped with.

@@SarahNGeti Never heard of that place but I done ketchup packets and made sure that they knew I put it on the steak. Not this restaurant as none in my area but a fancy how dare you put ketchup on your steak. Ended up being asked to leave 🙃 was high enough class for them.
