- I consider this to be a Grilled Cheese for Grown Ups, but I’m pretty sure that kids would love it with its spiced apples and a pairing of two great cheeses.
Romesco Sauce Ingredients
3 Roma Tomatoes
2 Red Bell Peppers
2 tsp Crushed Garlic
Juice Of ½ Lemon
½ cup Roasted Almonds
¼ cup Fresh Parsley
2 TBSP Olive Oil
Generous Pinch Of Kosher Salt
Spiced Apples Ingredients
½ Small Granny Smith Apple, Peeld, Cored, & Sliced
2 TBSP Apple Cider Vinegar
2 TBSP Brown Sugar

Apples are new to me, I think I’d skip frying them.
Sliced (raw) tomato, and sliced beef when I have that in the fridge, are my current additions.
Decades ago, I used to add hot sauce inside. Got some strong criticism over that once when did the midnight meal on a drilling rig (one job of the low man on the totem pole). This was in Canada, in winter, and I was head-sweating like crazy when we stepped out to make the next connection - too cold!
One version, long ago, was a plated dish for knife and fork. Was using tomatoes, and maybe hot sauce or ketchup, but put boiled/steamed spinach on top.
Great recipe. Only thing I would do differently is use Mayo on the outside of the bread, really is tastier and easier to toast.
I do not recommend Kerry Gold for toasting. That's more of an after butter. I would recommend Land O' Lakes sweet butter with Olive Oil. Better flavor.
But the mayo really is the key for a good grilled cheese. And I normally *never* use mayo on anything.
Hi Samal/Erable. I use mayo on almost everything, but never on my grilled cheese, maybe just to have a break. Funny, the difference from you haha.
Edit: Oops. Guess I was just thinking of your on-the -outside description, which sounds messy to handle. I DO spoon a little mayo and ketchup each bite. Cheers.
