We ate them later with hot sauce and soy sauce and vinegar. it was great stuff. really good with beer.

Uni is one of my top three Sushi foods. And to get it THAT fresh...amazing. SO JEALOUS! I also know that the brighter yellow or orange color, the higher the quality. I think yours was a Grade B. But the freshness really wins flavor wise.

in america, my local 4.5 star sushi restaraunt has a sushi boat for $90 as its smallest size(they have three, goes wayy over hundred) theres 12 sashimi(yellow tail, lean tuna, ahi tuna, sashimi), about 8 assorted sushi rolls(unagi, tuna, salmon, california, cucumber, etc), and 2 pieces of Uni Sushi(seaweed wrapped around a single piece of uni) $90, but about 1/5th of it goes to the Uni itself

In the philippines thats called swaki or tuyom before you can find it in every beach but now you have to go to the deep part of sea to see sea urchins that big

well to be fair our Tuna are caught sometimes at a very young age and aren't as fatty as the ones served in japan... even if our fishing boats do catch fatty ones they are most likely sold to japan since japan buys them higher compares to here...
