How to open and prepare LIVE Sea Urchin Uni

  • Opening live sea urchin and preparing sea urchin uni sushi or sashimi may seem like a daunting task, but this video will show you how quick and simple it is with the right tools.
    The equipment:
    1. Gloves. Ideally, cut resistant gloves should be worn when handling the sea urchin, as they are covered in sharp spikes that can cause injury if you are not careful.
    2. A bowl of ice water. This is where the uni is placed after it is scooped out of the sea urchin shell.
    3. A pair of spoons. The sea urchin shell can be easily cracked open with two spoons. They can also be opened with kitchen shears, which may provide better control for some people.
    4. A large wooden cutting board. This is what you will place the sea urchin on while you operate on it. It may be more clean if you use a large bowl, but I used a cutting board so that you get a better view of the sea urchin as I work on it.
    One step that people often do that is not done in this video is to cut around and remove the "mouth" of the sea urchin before using the spoons to crack it open. I usually skip this step to save time, as I find that it doesn't make opening the sea urchin any easier.

    Uni is the Japanese name for the edible part of the Sea Urchin. While colloquially referred to as the roe (eggs), uni is actually the animal’s gonads (which produce the milt or roe). Uni ranges in color from rich gold to light yellow, and has a creamy consistency that some love and is off-putting to others. It is nevertheless one sushi item that is in incredible demand around the world, which is reflected in its price.

    I ate sea urchin in Canada where there are ships and they sell fresh seafood, and let me tell you there was one place where they sold sea urchin, and the boat was on the water and they probably fished for it, and it was fresh! The best part was tasting the enchantment in my mouth, the feelings are indescribable, it was incredible and amazing!

    I'd love to try it sometime but it's *very* hard to find and expensive where I live.
    Also, for those who want to know what uni (海栗) literally means, it is something like "Sea nut/chestnut" or "Nut of the sea". Makes sense considering you have to crack them open

    In Papua New Guinea the motuans use a dessert spoon to crack open the top part of the sea urchin then shake it in sea water to wash off black stuff inside. Using a spoon the inside meat is scraped off. The meat is cooked with a small amount of water or wrapped in banana leaves and cooked in boiling water later it is taken out and smoked. It eaten with rice and vegetables.

    aca en chile es super normal comer eso y le decimos erizo, se prepara con cebolla , limon , cilandro y es muy rico. tiene un altisimo nivel de yodo asi que para los hipertensos ni se les ocurra comerlo.

      It a little salty but creamy at the same time, and the texture is like the white part of a soft boiled egg but with little lumps. I eat them almost every summer either straight from the reef or bought from the store. Hope that helps :D

      The best way I could describe the taste is like milky creamy extremely soft fish. It shouldn't taste too fishy if it's good uni.

    The problem with this technique is that you have a very high chance of breaking and damaging the uni (gonads) so I recommend cutting open the mouth and gently scooping out the uni and removing the membrane with a spoon

    I had sea urchins yesterday freshly caught at the beach. I ate the black stuff. It had a lingering taste of shoes. Then later realised it tastes like air freshener 😭

      They're very good for your health, you'll wanna google it. What I wouldn't do is rinse them in cold water, to keep the full flavour and benefits they should be left in their own juices until ready to eat.

      The benefits of eating them are... not dying of starvation. Seriously, don't worry about how something is good or bad for you, just eat ENOUGH food (not more than enough) and exercise enough and you'll be fine without worrying about your diet. Unless you're diabetic, then you should watch your sugar.

      Uni can vary at times. Sometimes it can be salty, earthy, smooth, briny, or even sweet. It depends on where you harvest it. If I had to compare it, I'd say, somewhere like maple salmon, all the way to clams; like I said, it varies.
