ANGLO-INDIAN BONE PEPPERWATER, BONE PEPPERWATER, PEPPERWATER, BREAST BONE PEPPERWATER, MULIGATAWNY

  • BONE PEPPER WATER
    Bone Pepper Water is also known as Breast Bone Pepper water since mostly the soft peices of meat and bones from the breast portion is used in its preparation. Bone pepper water is actually a spicier and morphed version of Mulligatawny Soup.
    Ingredients
    ½ kg soup bones and pieces of meat preferably from the breast portion
    1 tablespoon ginger garlic paste
    1 teaspoon cumin powder
    1 teaspoon chillie powder
    1 teaspoon pepper powder
    ½ teaspoon turmeric powder
    1 large onion chopped
    2 medium tomatoes chopped
    1/2 cup chopped coriander leaves
    Salt to taste
    2 tablespoons tamarind juice or lime juice
    ½ cup coconut paste or coconut milk (optional)
    Cook the soup bones together with the ginger garlic paste, turmeric, chillie powder, cumin, pepper powder and salt with about 4 to 5 cups of water in a suitable, first on high heat then on low heat for ½ an hour, or till the meat and bones are soft and the soup is quite thick.
    Add the chopped tomatoes and chopped coriander leaves and simmer for 5 more minutes.
    Remove from heat, then temper as under:
    Heat 1 tablespoon oil in a pan and add one teaspoon of mustard seeds.
    Once the mustard starts spluttering, add a few curry leaves, 2 red chillies broken into bits and one sliced onion.
    Add it into the Bone Pepperwater. Mix well and bring it back on the flame.
    Add the coconut milk and tamarind juice / lime juice and bring it to boil. Switch off
    Garnish with coriander leaves. Serve hot with plain rice and any chutney or pickle

    It’s the beginning of summer here in Perth but I want to make this up and freeze it for those times my husband or myself feels unwell. Dishes like this are so comforting! My mum never did pepper water with any bones but I want to try this as I bet it tastes really delicious. Thank you 🙏🏽

    This is good, but it’s really important that turmeric hits oil first. My mom will do this by putting some oil in the pan with onions ginger garlic and then adding the powders for a quick roast. then you add the water and meat and pressure cook. This method gets rid of the raw taste of the turmeric.
