When baking soda is heated, it converts into washing soda. This why most of such recipes taste like soap. I always rub the chickpeas by fingers to remove the skin and make my hummus smooth.
I can understand that everyone has a favorite hummus recipe, but believe me that's what I call the supreme Lebanese restaurant style hummus recipe that took me ages to unlock its secrets. Baking soda is used in cakes as well without it affecting the taste of the cake. I’ve seen so many recipes using both baking powder and baking soda. I will give Hadia’s recipe a go.
