      Thanks 😊. Yes I agree I think the flavour of chanterelles is wasted if used in a sauce. A bit of butter and garlic is all it needs

    Thank you and keep these up, please. This was such a super video. Clear, enthusiastic and informative! I would love to do this more but I stress over toxic versions. I worked up the courage to forage a porcini, birch boletes and a giant puffball but always struggled to enjoy them even though I was sure they were safe. Actually watching someone who knows what they are at makes a massive difference. Also it pains me as I realise I have passed up some stonking parasols in the past! 😢

      Thanks 😊. Yeah I was the same when I started foraging mushrooms. It’s good to be cautious. After a while once you can positively ID all the main dangerous mushrooms you will become more confident. Also the parasols should come back in the same spot most years, if you can remember where they were you can go back for them

    I’m impressed with chanterelles in mid October, not sure that would happen in Scotland where I am. Although I got loads in August. September

      Was a little later than normal. Still fairly warm down here though just turning frosty last few days so won’t expect to find much more now

    Such a concise and yet feature rich video there and wow those parasol pizzas look amazing! I've only found what I think to be Shaggy Parasols so far and given a few lookalikes potentially, I refrained from being a Bold not OLD forager for now lol

    It is crucial to cut the bottoms of the stems before putting it in to your basket, it will save you a lot of cleaning time and unnecessary work later. When I pick mushrooms, I just cut them instead of pulling them out, unless it's chanterelle in which case it's easier to cut it after you've pulled it out. If do it correctly than there's no need to wash the mushrooms before cooking them which is very important for the taste.
    A Good season this year in Lithuania, I've found hundreds of Boletus, we've ate as much as we could the rest we froze uncooked in a fridge freezer which now is absolutely full of mushrooms.

    Nice bit of information. Love mushrooms but have never foraged. Recently joined a local Fb group of mushrooms hunters and identifiers. Local info is best I know but still learn a lot from you. I'm pretty far away from you - here in Willamette Valley, Oregon USA.

    Thanks Lewis, i always take the spores off the boletes as it becomes very slimy when cooked ive found, i always leave the spores where i picked them.

      I would on older ones that I plan to cook. But on young ones I find the pores are firm enough, and on older ones they are fine when dehydrated. But yes I don’t like them when slimy

    Great video. Any tips for finding Chanterelles? Never had any luck

      Thanks. They can be a tricky one, took me several years of searching before I found any. But once you find a patch they can usually be found in large numbers and they come back year after year. You want to find old woodland that not many people go to, especially with beech, birch or pine trees. And it helps if it’s damp woodland with lots of moss on the ground

    That mushroom omlette on Sourdough = 🤤🤤 do you make your own sourdough? if not what brand do you buy? was learning off Zoe last night if you decide to buy shop brought and the sourdough doesn't have live cultures it is junk. Bread should be living, it's got to be wholewheat too!

    My regular spot for parasols has had very few last year and absolutely none this year. The previous 10+ years have been absolutely inundated with them. Any idea why this might be?

    the first was the red parasol it may cause stomach issues but not as bad there it 2 types of common parasols macrolepiota rhacodes and it looks exactly like edable parasol but slightly pinkish gils and leg is not as woody

      Hi there no these that I’ve picked are all true parasols (Macrolepiota procera). They have the snake skin pattern on the stem which Chlorophyllum rhacodes (formerly Macrolepiota rhacodes) don’t have.

      soak them in the milk for an hour or so the bread crumbs and fry whole like a schnitzel absolute delish

      Who said? There are toxic parasol lookalikes, as long as it has the snake skin pattern on the stem it’s a true parasol
