    In the late 60's, a budget meal for six was white beans & ham hock with cornbread, Ground Beef (3 lbs. for $1) and noodle casserole, Chicken and dumplings using leftover chicken parts (bought in bag for 19 cents) , Salmon croquettes with mashed potatoes, Ground Beef vegetable soup, Spaghetti, any kind of meat in white gravy over toast.Of course those prices are unrealistic now. 🙂

      We like black eye peas with ham hock and cornbread. I've introduced my hubby (born in NJ) to many southern dishes that are economical. He always says his mom never cooked like this, and says I'm making him fat. I say you want me to stop cooking? He backtracks fast. 😆

      Yes I remember eating chicken and dumplings when I was a kid. And I cook chicken and dumplings to this day, my grandkids love it so do I.
      I even make hamburger gravy. My grandkids love it also. Thank you for taking your time to share.

      Ohhh these remind me of my childhood! My mom would make her macaroni and tomatoes ( from her garden) with 1/2 lb breakfast sausage and it was my favorite! Just realized it was budget.. Now I need to make it!
      We did the smoked sausage dish with egg noodles my mom made and froze.

    We grew up on budget meals didn't know it there was 5 girls and mom and daddy we never went hungry my mom and oldest sister made meals out of whatever we had.. God always provided..

    one budget meal I grew up on a lot was fried potatoes with sliced onions and hot dogs. It is really good, especially if you have bacon grease to fry your potatoes with. We also did fresh green beans with potatoes, onions and smoked sausage. I actually canned a few jars of that. It is really good.

    My favorite budget meal as a kid (back in the 60’s) was to take a skillet of fried potatoes to which you added torn up pieces of bread and beaten egg cooked until the egg was scrambled. Salt and pepper to taste. Some people may find that a few squirts of ketchup or a few dashes of hot sauce added at the table is quite tasty. Green beans and/or tomato slices are good sides dishes. Great way to use up stale bread and the last of a bag of potatoes before they go bad

      All through harvest we had sliced tomatoes on the table and a bowl of cucumbers in vinegar in the fridge. I loved all of the pickles and relishes my mom canned. I only do a couple each year

    One budget meal my mom made often was Spam with mac-n-cheese. I make that for my kids on nights when I don't know what else to make. Bonus is using my air fryer for the Spam so I don't have to turn on the oven when it's super hot outside.

      Oh yeah Mac & cheese. Ours was baked. A pound of pasta and 8oz cheese diced in a sauce that was kinda white gravy but kinda custard - the crispy edges were the best!

    My mum was served lot of "on toast" meals. Cream tinned salmon on toast, tinned asparagus and cheese on toast, leftover roast beef, chicken or pork and gravy on toast, creamed peas on toast, etc. I still loves these meals to-day. ✌️🇨🇦

    When I was a teenager I would heat up a can of corn or a can of peas and add butter as soon as it got hot I put it over bread. Delicious! I also took the packaged meat like your mom used and made brown gravy put the meat into it and had it over bread or toast. I also would boil eggs and then dice some onion or pickles both if I had them and put the eggs and onion and pickle together and mayo and made delicious sandwiches. I started cooking for my family when I turned nine after my parents divorce for my brothers and sister because my mom worked three jobs and my dad was in Vietnam. The food I made myself wasn't what I cooked for my family I made hamburgers, hotdogs meat loaf and such at first then I read recipes from an old cookbook my mom had an learned to cook other things as I got better practiced. My mom use to fix meals also when she had spare time which wasn't often and I would warm them up. You can make something out of nothing if your willing to try. I made many things when my children came because we lived on $20.00 a month. At the flea market we got two ten pound bags of potatoes for $2.00 each and we used the remainder for other things such as pinto beans, rice canned tuna and peanut butter and lots of eggs. We managed for many years with the food I had made myself as a teen. I eventually went to work and worked a full time and part time job for years. My husband worked 40 to 60: hour weeks as a carpenter and between the two of us we made good money and left the $20 a week budget behind. But we did make it on very little for years. My children never knew we were on a budget not even after they got older. They were always full and satisfied. These ideas of yours will be very helpful to young families like yours.

    Tortilla wraps , English muffins , bagels are all cheap and quick pizza base options to use instead of making your pizza package mix if you’re not in the mood. Tortillas , bagels and English muffins can be pulled out of the freezer at short notice and allow you make as many as you need. I even use my toaster oven to make smaller quantities. Many of those bread options can be purchased many times in the reduced day old bread section further helping your budget.

    My favorite meals when I was a child in the 1950s were budget friendly, but I asked for them all the time because I thought they were the best. My granny made SOS with chipped beef, but served it over biscuits. We seldom had store-bought bread. I still make it and put it on biscuits or boiled potatoes. My absolute favorite meal was a pot of navy beans. The only seasoning she used was bacon, but I liked to stir in a little ketchup at the table. We had hens, so we ate a lot of eggs, and occasionally chicken and dumplings. My granny grew veggies and canned them, so we always had cooked veggies, but not many salads.

    i got a hand crank shredder on amazon for under 20.00 and i absolutely love it!! it suctions to the counter and easy to clean. comes with 5 or 6 different cutting blades that just snap in and out for cleaning..LOL

    Did you know you have the base ingredients for jambalaya...onion, bell pepper, garlic, celery, smoked sausage diced up, with any little bits of meat that is leftover from meals that does not make a serving. It can be: chicken, ground sausage, smoked sausage, pork roast, pork chop, ham, shrimp, etc. you can throw little bits of all of this or just what you have, into this dish. Dice up your veggies, your protein/ proteins, a couple slices of diced up bacon, cooked in the pot to render the fat, add in meats and cook down, then add in vegetables and cook until crisp tender. All while seasoning as you go with salt, pepper, little Cajun seasoning ( can make your own out of spices), little tomato paste, fresh or canned tomatoes( not but maybe 1/4 to 1/3 of can( 15 oz) I have used leftover pizza sauce with little water to rinse out jar. Add in sauce after adding in your rice...depending upon how much you want to make and how many you want to feed. I use around cup to two cups. Add in tiny bit less than water you will use( 1- cup rice to about an inch less water). Stir all of this together and place lid on and cook for about 20 minutes on low heat. Should not be soupy! Constancy of Spanish rice is what you want. Serve with crusty French bread and potato salad or vegetables of your choice. Makes a great tasty meal for your family that most people would just throw out!

    Mom made tuna casserole, baked Mac and cheese, and breakfast for dinner. I seem to recall a lot of steamed broccoli and carrots. We also had lots of raw vegetables cut up for snacks. A comfort meal was grilled cheese and tomato soup.

    Lol the shit on a shingle reminds me of something my mom made me as a kid . Sliced deli Turkey on white bread with brown gravy over it 🤣 it was pretty good . Definitely a budget meal. Great video !

    We always use the refrigerated dried beef to make SOS. But I will put anything in white gravy and put it over toast...ham, sliced boiled eggs, whatever! I love it!❤️

    We ate hamburger white gravy regularly with boiled potatoes or buttered noodles
    We had kielbasa with sour kraut, biscuits with chicken gravy
    Or beefy beans with rice
    My Mom was Queen of the budget meals and like you we ate tasty cheap filling meals.

    When I was a kid. There was five people in my family. My mother my father and as girls . So my mom always made budget meals. Because there is five people in our family. I never knew the difference. Because everything always tastes really good. It wasn't until I got married. But I realized what my mom made us when I was a kid. Were budget meals. I still make those meals to this day. And my kids love them so did my husband

    Those pizza rolls looked 💣😍 so good! Yum. My favorite budget meal from when I was a kid was grilled cheese & tomato soup (although I preferred just dunking mine in ketchup instead 😂) or pancakes 🥞 (“breakfast for dinner” was always a celebration in my house. I thought they did it because they loved me. Had no idea it was because it was cheap and easy & there was no food left in the fridge - usually did it a day or two before grocery day)

    Fun approach to this topic. It took me down memory lane back to when I got married 45 years ago... My mother-in-law worked outside the home; my mom was a homemaker. There were things I didn't know came in a box until I met my husband, and things he didn't know could be made from scratch. He taught me to make SOS with the jar of chipped beef (haven't made it in decades now). Two budget dinners we had in common (and still on the favorites list)... Potato soup and navy beans with ham. My parents always grew a huge vegetable garden and almost every family vacation involved hunting or fishing.

    My mom made something called bologna bowls. She would fry the bologna and let it naturally curl up in the shape of a bowl. And then she would put mashed potatoes in the bologna bowl and top with cheese. It was delicious and super cheap. I had no clue it was a budget meal but it was delicious!!

    I've never had SOS with the sliced ham in it. One of the ladies at work used to say that her mom used to make it with bologna and I've often said I was going to try that never ended up doing it I had it with the chip beef or with a lot of other things I've added almost any meat to that and some leftovers and sometimes even vegetables for a lunch or quick supper and we have it over toast or biscuits or potatoes or rice or noodles or whatever we have on hand but I love this recipe it's always comforting and good and really really quick

    Country style gravy mix, make it according to package add a little more water, add cheese that you have doesn't matter what kind. You now have cheese sauce for mac and cheese. You can also use those to make any kind of sauce you want, powdered garlic for spaghetti noodles, or parmesan even the dry will work. If you have the extra money Walmart has a really big bag of the just add water white gravy mix over where they sell the big cans for restaurants. Sometimes those big cans are cheaper per ounce, i buy the big cans' of chili beans then make a huge amount of chili and freeze it. You can also open a bigger can and freeze the rest out in portions. Our Walmart raised the price of fiesta turkey and have now lowered it again. I will be stocking up now that the price is going down again.

    You can get lots of cheap spices/seasonings at Dollar Tree...and I always use the thin-sliced beef lunchmeat instead of ham when I make SOS...

    I grew up eating bologna gravy, sausage was a splurge. My family now is spoiled and won't even try it but I think everyone should try it! The flavor it gives is great! This video definitely took me back to a lot of meals we had growing up too❤

    I have noticed that a lot of people put their cheese on the bottom and then add everything on top. We have always put the cheese on the top because it holds everything in place lol 😂. Just thought I would share that.

    We would eat $1 freezer pizza and hot dogs. Hotdog and pizza night was awesome, because we got two of our favorites at one time. I didn’t realize we started eating this meal because we became a one income family after a job loss. Mom wanted us to have a kid friendly dinner, and we were jazzed.😊♥️

    My Mom made several different budget meals; fried potatoes & eggs in her cast iron skillet; sauerkraut & smoked sausage; Spanish rice - ground beef, tomato sauce & canned tomatoes& rice; Goulash; Country gravy with ground beef, peas & onion served over mashed potatoes & boxed macaroni & cheese with tuna & peas! These recipes were also served when I spent the night at my aunts houses. I haven’t made them in a long time but they are truly some of my favorites!!

    When I was younger we didn't know what the word budget meals were we knew we had food it taste good and we used everything that we had nothing went to waste and we learned how to can well us as kids my my dad would teach us how to can how to pickle and stuff like that so these are really good important things for all of us to teach our kids now with how things are going it's like all the things your parents teach you sometimes you don't think you need or you're like oh why are they teaching us this or why they saying this but when you get to be an adult and you have your own kids that's when you realize what they're saying and you realize that you have to teach your kids this cuz this is the ultimate survival

    SOS was always a staple in my home growing up in the 70's/80's. My Momma was a single working mom of three so every meal for us were quick and convenient meals which I call my comfort meals now that I'm older. I'm not a fan of ham so I'm on the look out for some canned dried meat now so I can make SOS just to bring back some old memories.😊. Thanks for sharing your ideas!

    Love smoked sausage with peppers and onions over rice! Smoked sausage is a wonderful flavor enhancer to any vegetable. My Mom always called SOS, "Chipped Beef on Toast." She used the cheap beef packets in the lunch meat counter. Loved the memories in this nostalgic collab! ❤

    Hi I really enjoyed this collab. As a kid I had SOS, but mine was with cooked ground beef and gravy and we had it over mashed potatoes. We also had a lot of fried bologna sandwiches.

    Hey, Tamara 🌸💚. Great ideas ! I grew up in the 50’s and 60’s! My mom worked in a factory all day and came home, exhausted. She still cooked supper including meat, potatoes and vegetables, no casseroles or convenience foods. We did have SOS for breakfast and loved it. Oh, she did use canned biscuits and vegetables. I use that pizza crust when I want pizza now! I think mine is better than take out 😂🤣. Thank you so much for sharing sweetie ❤️

    My mom was queen at budget meals. Mom made S.O.S( hamburger gravy) over slice bread and fried hot sandwich were my favs.She use to make top Ramen with veggies and leftover meat. Another was cut up hotdogs with tomatoes sauce over rice. Breakfast for dinner was another, often it was pancakes and eggs

    Hi Tamara. OMG-chipped beef on toast brought back some very fond memories. Daddy would make it and sometimes he added frozen peas--it was the best. I still make it but it is hard to find the dried chipped beef. Hugs.

    My dad would use biscuits instead of bread sometimes for the shit on the shingle sometimes he would use bread but either way it tastes really good and I believe he used corned beef as well I miss him

    We would do SOS with ground beef because we always had hamburger and milk. Everything was from scratch... sometimes we'd have it on toast or on mashed potatoes which we grew and stored.

    My mom made cream of chicken soup on toast! Just use half the water. I love it for breakfast ! Also corn chowder is really cheap to make and very good!

    My Dad would always make rice to go with stew, chili, and eggs, to make the meals go further. We also had a box of store-brand Mac and cheese and he would add a can of tuna and a handful of frozen peas&carrots. Biscuits with cream gravy with a little cooked ground meat was also an inexpensive meal. Red beans and rice, another meal.

      I used to make my son the boxed mac and cheese with tuna and peas when he was little for lunch. Not so much because we were on a strict budget but because it was a favorite of mine from childhood. It was one of those budget meals I never considered a budget meal, it was just good, filling and comforting.

    All the budget meals look greatMy moms budget was beef liver with rice and gravy. I loved it and didn’t know.
    You can find the microwave bowl at Walmart. A while they were about 6 or 7 dollars. Not as good or expensive
    as Pampered Chef. Have had one for about 2 yrs with no problem.Use it at least weekly making rice in microwave.

    I make the smoked sausage at least once a week. We serve it with peppers over rice or instant mashed potatoes. So good. I never cared much for SOS growing up. Probably bc my mom made it every other day (bc it was quick & cheap). I enjoy it now bc I don't have it all the time.

    I grew up eating SOS but we used ground beef. As a kid I didn’t know we were eating cheap. I just thought it was good. It’s definitely a recipe that reminds me of my childhood!

    Momma always made pepperoni and cheese pizza rolls (homemade crust) and toast with dryed chip beef and gravy (daddy called it shit on the shingles ) l grew up in the fifty so everything was homemade back then.     My mom would make chef boy Arde box cheese pizza if she had it would fry ground beef and put on top . Creamed eggs on toast , stuff on a shingle and her cheapest and my favorite wasa large can of tomato juice heated and add cooked elbow macaroni when served you could add salt and pepper or my favorite was to add sugar ! Memories!

    Omg we always eat/ate sh*t on a shingle. We use a milk base with cooper sharp cheese melted in it and fresh chipped beef. Thats it... soooo good. Fresh chipped beef isnt available everywhere but its so worth getting ur hands on. If u make it with those ingredients its not budget anymore but worth it. Chipped beef is almost $15 a pound here and cooper sharp is about $8 a pound now too.

    Hey my parents made sh*t on a single all the time when we were kids. Sometimes gravy, but we used whatever ground meat we had, cream of mushroom soup, and toast but I made it tonight and served it with mash potatoes

    Those all sound good and so simple. When I was a kid my dad was a butcher and we ran the neighborhood grocery store which was attached to our house. My mom calculated the prices to put on the groceries according to what we paid at the wholesale. (I was born in 1960 so this was way before Sam’s Club. Our store closed in 1975). At our house it was common to talk about the price of things but until I was more than Winston’s age it didn’t mean much to me. We ate a lot of soups and vegetable/rice casseroles, all delicious I remember being surprised seeing my mom put oatmeal in meatloaf - what? wasn’t oatmeal breakfast! I knew nothing about stretching meat by adding grains or legumes. My mom raised 9 kids so she knew all the tricks. A very special breakfast was fried kidneys and eggs. A favorite dinner of mine was gizzards with rice; seasoned with just homemade broth, celery and onions it’s still something I make when I can find gizzards. Offal was pretty much given away back then so we had both chicken and beef liver regularly too. They may seem like strange foods to many but like you said - as a kid you don’t think about it you just eat what’s on the table. Our parents enjoyed it so we did too

    My family use to make 💩on a shingle
    Except they used hamburger meat browned up like you would for sloppy joes-then they added sour cream and cream of mushroom soup and served with a canned veggie.
    I knew my parents made budget meals because I grew up poor. We ate once a day during the week. And we were super excited when my grand parent gave us her food she didn’t want from her food commodities..like off brand Cheerios. We ate lots of “government food” from that food commodities from my dads mom. My mom would have a hard time with food so we’d spend between 20-50$ a week for meals. The holidays we where we went all out for food because she’d have lots of leftovers.
    Now my kids have no idea when I budget meals because I just got use to eating that way lol
