      I have anxiety disorder, and frequent at that, in this time of quarantine the panic attacks are more frequent. I gotta say you're right on the spot with your observation, cooking has become sort of a meditation exercise for me, it helps me relax and deal with the disorder.

    When I watched this 3 years ago, Alton’s statement about how the food people buy brings him down resonated with me. To this day whenever I pick up something up at a grocery store or look down at my cart I wonder “What would Alton do?”
    By and large, this has greatly improved my diet’s quality.

    I love how Alton strikes on one of the tenets of hot saucing: You can either have a good hot sauce or a hot hot sauce. Anyone who makes a spicy hot sauce doesn't seem to care about the flavor, and anyone who makes a flavorful hot sauce doesn't really care about spice as much.

      Although I enjoy hot sauce from time to time, it's not just the heat. It's the flavor that adds to the dish. I'm not an expert but the flavor then the heat, for me, is what makes a good hot sauce

      I think the flavor profiles he detailed afterwards were more impressive than just the act of sipping out of the bottle. It's the reason this is probably my favorite interview on Hot Ones.

    I've watched almost every episode of, "Hot Ones" that has been released, and I must say, Alton Brown is by far my favorite one. He's awesome, I identify with him so much in the attention to detail. Now I want to research every single thing this guy has ever done, I could listen to him talk about anything on his mind.

    Alton's performance here is a fine example of why he is my all time favorite foodie/chef. He's the only one who has been on the show to discuss the actual flavors of each sauce. Every single other guest strictly focuses on the heat level.

    That man taught me at least 50% of what I know about food. I'm not talking about how to cook, but about food. Good Eats was amazing, because you don't walk away with a recipe. You walk away with insight.
    Any other show would teach you how to make hot chocolate, Altons show taught you how to make chocolate. Who invented chocolate. When it's best used. What to look for in quality. Why it's ideal for a hot dairy based beverage. It was like understanding ingredients, was *way* more important, than the recipes you use them in.
    +Edit. IDK how many of you know this, but IIRC Alton wasn't originally a huge foodie, but rather a theater/film-making nerd. So I guess cooking as a hobby, but *passion* for creating good television, was a perfect combination for inspiring a generation. You never know where life will take you, eh?

      I absolutely agree with you.
      I find myself often looking for inspiration, and a lot of chefs will post recipes like "orange and licorice-infused braised short ribs with apple truffle demi-glace." When I want to know how to just cook the damn thing normally, but give it that class and excellent flavor of someone who knows what they're doing, I go to Alton.
      He's never failed me.

      @Dylan I think it's less about shilling and more about ,"Hey, i'm on their show, I might as well comment on their sauce" and perhaps their sauce is pretty good, granted I haven't ever had any of the Hot Ones sauce. I just wish Alton would of put his input on why 'The Last Dab' wasn't higher on the list, maybe throw in some suggestions on how to improve it.

      @@thestupidskunk530 cold olive oil in pan, put a lot of garlic in (can also add some turkey bacon) , and than simmer it until the garlic infuses the oil. Put some chili flakes in. Add pasta with some pasta water. Finish with lemon juice and optionally some parsley and parmesan.

    When I was a kid, I didn't watch cartoons, I watched Food Network with my Mom. I LOVED Good Eats, Alton Brown was my childhood hero. It was really fun watching him, especially with him being as knowledgeable and honest as he is

      The first five seasons of Good Eats are to this day the best primer on everyday dinners ever made. I was 22 when the show premiered, and it helped me get away from my mom's bland, flavorless, over-processed queasine she served when I was a kid.

    The fact that Alton Brown mentioned Baubette's Feast as the best culinary movie shows just how intelligent and seasoned he is when it comes to the lore of all food. I fell in love with that movie after watching it. I also agree that Ratatouille is a top three on food movies too. Throw in Chef and you got yourself a trio worth watching.

      Well, Thomas Keller was a consultant on Ratatouille. He created the restaurant's menu in the movie. The titular dish is based on the recipe he uses at The French Laundry. The Pixar animators also visited the kitchen there & did some mise en place to make their animation more realistic. If you watch the movie on DVD, there is a bonus feature that includes him.
      I wonder what Alton's top 10 foodie movies are? His food-on-film list from 2016 had 6 movies. I agree w/ Eat Drink Man Woman being up there. It obviously pre-dated Ratatouille's release. I wonder if he'd put The Menu on his list? Bummed Tampopo wasn't on his list. Como Agua Para Chocolate/Like Water for Chocolate should also be a contender. I'd also consider Jiro Dreams of Sushi, but that's a documentary so maybe not subtle enough.

I primarily love its main storyline (which also features actor Ken Watanabe in his younger days). I don't care as much for most of the other short stories in the film.
      The Netflix series Samurai Gourmet is also worth watching -- a charming look at a newly retired man in Japan who finally has the time to rediscover and experience the foods from his past.

    There's something... Transcendent about Alton Brown. He's one of those super intellectual people who thinks about things on a different level than the average person, but he hasn't lost his humanity for it. He still has that sort of playfulness and lust for life. He has convictions, but he'd rather educate than preach or resign to the inevitability of ignorance.

    Alton was the man who inspired me to become a real professional Chef. His "Good Eats" program gave me something to work at after leaving the Marines. He was so intelligent in how he explained everything. It made me need to learn and know more.

      I think in fresh sauces or dishes they use raw chiles and other spices so it’s spicy and flavourful but with hot sauces they want them to have a decent shelf life so it’s just extract and vinegar to preserve it

    This was so fun, informative, and entertaining to watch due to Alton’s preferences, training, and personality! That follow through Sean of drinking the champagne after Alton was admirable-you really put yourself through what the interviewee does. So respectable! I’d love to see Daniel Wu on the show!
    PS. I love a food bald head 😄
