Also, I told my parents today I'm officially vegan now :) I've moved out for uni about a month ago and been eating purely vegan there, but when I went back on the weekends, my parents couldn't even keep in mind the fact that I'm vegetarian ('Oh I totally forgot! Well, just potatoes and a few bits of broccoli are good as well right?). That reached a critical point for me last weekend, so now I've finally found the courage to tell them I want to go fully vegan. Even on the weekends ;) I'm even going to be cooking for them on Sundays and your recipes will be a great help so thank you so much for inspiring me!

Eating together is such a fundamental bonding experience that it is hard for somebody esp your family if you effectively go against their values. I hope this is somewhat coherrent. I think a lot about the value of food and all the habits associated with it so I'm sometimes too much in my head when I talk about it. The best of luck to you and you are so strong and brave for staying true to you! That is so valuable.

Okay for halloween this year I invited my friends over and I made a three course dinner. First soup, then the savory pie and then a sweet pie, followed by the hummus as a dip for potato chips as we played board games. They just went home, like 4 minutes ago. All agree that the savory pie is the best, but they also loved the rest. Thank you!

I'm eating the filling for the savoury pumpkin pie right now with mashed patatoes and it is sooooo good! I couldn't get my hands on sage so I doubled on fresh thyme and added a pinch of cinnamon (as I always do), and it's beautiful. I feel that this recipe will stay with me for a long time. Ever since I went vegan I was missing on those traditional thic pork stews, and this just filled this void. Love it. Thank you!

Sometime I take a small to med. pumpkin, clean it out. Fill with chopped apples, butter, cinnamon,brown sugar and nuts. Put the top back on and bake till pumpkin is fork tender. Rake the pumpkin and mix with apples. Use as a serving dish with the top on or sometime I use as a center peace for thanksgiving.
Love these ideas! Tried the shepherd's pie today; I had no bay leaves in the house. I've added cumin powder and "four spices" powder early on to the (red) onions and garlic instead. Totally forgot about the miso and tomato paste. Added some red beans in the filling. And guess what, it was glorious!!! Thank you for the inspiration. Oh and for those struggling so peel that pumpkin beforehand: I just chucked it in halves in the oven like you would with a butternut squash and just very gently cut it it afterwards, it's as smooth as butter.

Pumpkins are amazing long-term food too - buy a bunch on Nov 1st when they go on offer, and they'll keep in a cool dark place through the whole winter! I *lived* off them as a student - and brussels sprouts in January!
Oh and here are some more recipe ideas: Pumpkin burgers - mash steamed or roasted pumpkin, blend with smashed beans, spice and herb to taste (I like cumin, coriander seed and turmeric) make into patties, bread and cook in a c 180C oven for 25 mins; Pumpkin katsu - mash steamed or roasted pumpkin, thicken with breadcrumbs, bread in panko, form into patties and cook as above, add a teriyaki style or japanese curry sauce, serve with rice; Pumpkin crisps/chips - peel pumpkin with a veg peeler and save the curls - season with oil, salt etc and roast in the oven until crispy; Roast Pumpkin (side dish) - peel, chunk and season (I like either ginger, cumin&coriander seed, rosemary or garam masala) and roast in oven as above, serve as a side veg; Pumpkin Salad(!) - roast pumpkin plain, add blanched kale, caramelised onion and lentils (puy for preference) cooked with bay and mixed herbs, add either curls of parmasan-style cheese/feta if veggie, if vegan add a little nutritional yeast or cheese substitute; Pumpkin Curry - Pumpkin, Onion, some kinda beans, some kinda veggies (whatever you like) all sauteed in a pan with ginger, mustard seed, cumin, coriander seed, garlic, turmeric and garam masala, add a little tomato puree, some coconut and some water, fry off spices & onion first, cook long and slow and serve with coriander leaf (cilantro) or spinach rice.

So I´ve just tried out the pumpkin spiced cookies and they are just amazing! I would highly recommend them. In the last batch, I added some vegan chocolate and that just tastes delicious and I think adding a little bit of ginger would give them an extra nice kick to it, I will definitely try that out the next time, oh and I did reduce the sugar to about 100-110 grams :) thank you very much for sharing the recipe.

I spent the whole day yesterday looking for pumpkins. I went to 7 different supermarkets before giving up (I probably shouldn't have left my search till Halloween day) so I had to make the soup with roast butternut squash and some small festive squashes instead and let me tell you it was still amazing, I added some coconut milk too!
Really well put together. Loved the production. All the recipes look super yummy and will actually make them all. The pie looks so yum! I’m a meat eater and always looking for alternatives eg vegetarian or vegan meals and this doesn’t feel like a compromise in any way! Yum! Thanks for sharing :)
