A shout-out to the meat-grinder attachment on the Kitchenaid stand mixer. I had one already when I first started with Bradley's tutelage and couldn't see paying for a dedicated grinder. I did spring for the dedicated stuffer. I got the model Bradley used early-on -- I wish I got the model he uses today. I can't evaluate the KitchenAid stuffer other than to say I think hand-cranking is better for stuffing. Making sausage is so satisfying, although it does take time and prep.

Although I had to sub dill for carraway since I forget to get carraway...so I have no idea if the dill is the reason why it tastes different from what I think of when I think of bratwurst. However, they tasted fantastic and had a unique flavor profile. Looking forward to cooking em up today!
