    Ingredients
    330g (2 1/2 cup)Bread flour
    185g (3/4 cup) Milk, lukewarm
    20g (1/2)Egg, beaten
    20g (5 tsp) Sugar
    3g (1/2 tsp) Malt powder
    3g (3/4 tsp) Salt
    30g (2 tbsp) Butter, soften
    3g (1 tsp) Active dry yeast
    10g (5 tsp) Bread flour
    50g (3 tbsp + 1 tsp)Water
    Method
    1. Combine 10g bread flour and water, stir until no dry flour
    2. Cook mixture on stove until thick and pudding-like
    3. Let water-roux cool to room temperature
    4. Combine active dry yeast and warm milk, stir
    5. Let it proof (around 5-10 min or looks foamy)
    6. In the mixing bowl, add bread flour, sugar, malt powder and salt and stir to combine
    7. Pour milk, egg and cooled water-roux into dry mixture
    8. Start the mixer and let it knead with a dough hook
    9. When there is no dry lumps, add in soften butter
    10. Continue kneading for 5 min (or until dough is smooth) on low
    11. Place dough in a warm place to rise for an hour until doubled in size
    12. Flour your working surface and turn out the dough
    13. Punch down the dough and divide it into 3 equal pieces
    14. Roll the pieces into balls and cover to let it relax for 15 minutes
    15. Flatten 1 ball of dough and roll it long ways, do a book fold and turn it
    16. Roll it into a long rectangle and roll it into logs
    17. Repeat for remaining 2 balls
    18. Arrange the rolled logs into the Pullman loaf pan (450g/1.5lb)
    19. Cover it and let it rise the second time in a warm place for 45 min until the dough reaches the pan line.
    20. Shut the lid of the Pullman loaf pan
    21. Preheat oven to 170°C (340°F)
    22. Bake bread for 40 min until golden brown
    23. Let it cool completely
    24. Cut them up into slices
    Tips
    I. Dough Recipe can be kneaded by hand if you don’t own a mixer
    II. The water-roux method is adapted from a Japanese technique to make softer bread
    III. The Pullman loaf pan makes a perfect square slice, you don’t need it to make good bread
    IV. Make sure your yeast is not dead, this is mainly the reason to fail ☺

    Tried it today with dry milk powder instead of malt powder, and instant yeast instead of active dry yeast. However I added the yeast to the dry mix directly. It was sooo soft and good! Delicious on its own! Definitely baking it again but with a bigger batch!

      Active malt contains enzymes which improve the dough elasticity and let the dough rise more. Milk powder is only for taste.

      Check the website... Or better: Get a scale! You have to be exact with baking but you won't be if you just use cups.

      It is a Bosch MUM4 Series Kitchen Machine. I have not tried any other machine to compare it with but when I bought this a few years ago, it is the most compact and cheapest stand mixer there is on the market. Unfortunately, I don't think they are selling it anymore.

    Hi! Do you know where I can possibly find a cheaper pullman loaf pan because I don't know if I should invest in a bread (which costs $50 and can make bread) or if I should by a bread pan...

      I'm not sure what would be considered cheap in your price range but I have mostly seen $20 pans which is not too bad if you are always baking your own bread :)

    I want to ask (sorry, I'm a beginner), what is the function of "malt powder". What is the effect on whole bread? How about not using "malt powder"? What is the other name of "malt powder" product (because in my area does not exist)

      Malt powder converts the starch into sugars to feed the yeast which gives strong rise and beautiful brown crust. But if you couldn't find it, you can leave it out :) It is usually labelled "diastatic malt powder". Hope it helps~

    What is the purpose of the first step to mix flour n water? Can't I skip that?

      The first step is making a water-roux that goes in the dough, it is adapted from a Japanese bread making method that makes a softer bread and remains soft even after a few days. If you skip that, the ratio of wet and dry ingredients will be off and won't yield great results, good luck~

      The water-roux that goes in the dough is adapted from a Japanese bread making method. It retains more moisture in the dough without the extra "wetness" which makes a softer bread and remains soft even after a few days.

      @@bizarreisland I have a recipe very similar to it that I will be making after I eat up my wheat bread. The recipe that I have is called Hokkaido Milk Bread and uses a TANGZHONG STARTER which is made like yours. But I will be adding an ingredient that you added to your recipe which is malt flour which I have. But I probably won't mess around with dividing the dough and rolling it up like you did. Nothing fancy. I'm looking forward to making this bread after watching your video.

      We have not tried it before, but if you want to test it out substitute not more than half of the dry flour with whole wheat flour. Good Luck!

      What do you mean ? If you are using a Pullman loaf pan, there is no need to cover it with foil. If you are using a normal bread pan, cover it only when it is browning too fast.

      becuz its hard to find active dry yeast. i fear it will turn out different with your result.
      and can i add more sugar so that the bread will a little bit more sweet?

      Proofing yeast is basically mixing it with warm liquid and let it sit for 5-10 min until it activates/foamy. Instant yeast as per the name says is "instant", so you just put it in and don't have to proof it. But keep it mind not the let the yeast, salt and sugar touch each other.
      Do not add more sugar to this recipe, the malt powder help converts the starch into sugars which already gives a slight sweetness, adding more sugar will over-brown the crust and make the bread texture slightly gummy.

      Sure, you will just knead it with your hands until smooth and elastic. Usually takes around 10 -15min :)

    So many RUclips bread baking videos feature electric stand mixers to mix and knead. Is that really necessary for this recipe? I've been baking my own honey whole wheat bread for years but I use a danish dough whisk to mix ingredients (makes doing so ridiculously fast and easy) and then knead by hand, which I actually don't mind at all. Just curious if there's any reason, other than convenience, for using a stand mixer for this particular bread recipe.

    this is a recipe for a 9X4 Pullman pan. How can I convert this recipe for a 13X4 pan? I probably need 4 rolls in the pan instead of 3 like yours. please help!!!!

      We recommend 1.5 portions of the given recipe, but we have not tried it before, you have to test it out to see if it works out ok. Good luck!

      bizarre island it's works. I have to throw away a small chunk of dough. I also realize that the 13 size pan is way too large for a family of 2 so I went back and order a 9 pan. How funny!! Such a waste of time and money these pans are not cheap lol . Thanks so much for your help, the water roux made such a big difference in both texture and taste.

      Glad it worked out for you :) Next time you have extra dough, just roll it into a small ball and bake it until it is cooked, really easy to eat it with soup and none goes to waste~

      Ivy Hays, the volume of the 9x4x4 pan is 144 cubic inches. The volume of a 13x4x4 pan us 208 cubic inches. That means you should ratio UP all ingredients by 208/144 = 1.444. That is, multiply all the incredients by 1.444 to get the right amounts. I have the pans in both sizes and successfully made the 13x4x4 with 0 waste. It was absolutely perfect.

      Also, you can freeze the bread. Just make the 13x4 loaf and freeze half of it. Then you can just let it thaw in the fridge and put in the oven for a few minutes to make sure no ice or moisture is on the outside. I also tried this and it works great. I am a family of 1 so any pan is too much, haha.

      Not not really, bread improver has a little malt powder in it but it also contains other stuff, some of them are chemical agents. Malt powder is natural and is not as easy to navigate as bread improver. I personally think using bread improver in "home" baking is unnecessary. - D

      Kalaivani Senthil Nathan hi..before this i have the same problem..but nowadays im glad my bread is super soft hehe..i think the kneading time affect the result..nowadays i knead the dough by hand..i'll make sure the dough do not stick to the bowl, when u poke the dough with finger the dough will rise back..i will pull off a small ball of dough n try to stretch the dough to form a thin film without breaking it..if u follow these 3 steps, then u can stop kneading it..then let it rise n follow next steps..

      So sorry for the late reply, I have never had this problem with using the water-roux method. Did you follow the recipe to a T? The water-roux must be cooked into a paste, if not there will be too much water and you will have to add more flour which will result in a stiff bread and dry out overnight.
