I make this fudge often, and I found a cool trick. After you make the fudge, put 150 g of milk or 175 g of water in the still fudge coated pot, and heat on medium while stirring. It makes the pot much easier to clean, and you get hot chocolate! For added simplicity and sweetened condensed milk flavour, I pour it in the condensed milk cans.
@@vreed8755 I'd say skip the water. It's gonna make the hot chocolate taste yucky. Never heard of adding hot water to make hot chocolate. It's milk+chocolate.
@@btsarmyforever3816 Using hot water to make hot chocolate is not uncommon. My kids actually preferred it over milk when making the swiss miss. Now some of the best hot chocolate in my opinion comes in pod form that you make with hot water in the Keurig.
@@winstonwolf6791 Idk abt the pod stuff. Isn't found in my country. I once tried making hot chocolate with Hershey's hot chocolate powder and hot water. It tasted floury and awful. I make hot chocolate with cocoa pellets and they are way better. Very smooth. No floury taste. Coco powder works best in cakes. In any other dish, especially liquids, it tastes floury. It's like the powder needs to be baked/cooked in thick form. If it's in liquid, it's not working. A lot of places that serve good hot chocolate never use the powder. Only the pellets.

We made my grandpa's fudge recipe and it never set up. So all the adults were crowded around a glass dish with spoons. I think we even poured some over popcorn. Fudge in *any* form is never a bad thing. ;-)
I've been making this kind of fudge for quite a while. For Christmas, I sprinkle with crushed candy canes or sub some of the chocolate with Andes Mints. Delish. Peanut butter 'fudge' is awesome. Especially when you take a bite of it with a bite of the plain fudge. Like a Reese Cup.
The Reese's Pieces sounds yummy! When, would you put it in? Does anyone know what size that glass pan is? 8 x 8.or 9 x 9? Or even the Yorks peppermint patties! John Kean good advice. I like my set of stainless steel pots and my cast iron/enamel ones the best. I do have vintage copper-looking jelly moulds but they are actually anodised aluminium. I have a vintage aluminium egg poacher but that is the limit, once aluminium is pitted, it becomes hazardous so I don’t use aluminium saucepans or pots. When I was searching for a hotpot, I took a magnet with me to ensure they weren’t fake - fake ones don’t work on induction stoves too. Phew, cooking is complicated. It’s kitchen alchemy.
I have 2 solid copper pans and they have become carbonized on the inside from burned food. I decided to leave them like that instead of having them tinned. They work like a dream when I use them for anything fried or sautéed. And they were a steal for $3 & $6 for a 6" & an 8" pan respectively at a thrift store overseas. They had NO idea what they were. Bronze handles on both, and the original bronze rivets too holding the handles on the pans. I couldn't believe my luck.
I have been using this basic recipe for years. I add a bit more chocolate (14-16oz instead of 12oz) cuz I add a bit of liquor (Amaretto, Irish Cream, Grand Marnier, etc) and its always been a big hit at family gatherings and holiday work parties.

corkscrewfork this reminded me of when I was 13 and made three layer, three flavor fudge for my family. Dear god that was a nightmare, it was super delicious but white chocolate fudge is *unbelievably* hard to clean off of a bowl.

I always make this at Christmas. You can simplify it, and avoid problems with burnt chocolate by microwaving the milk in a large bowl. Get the milk really hot, and then stir in the chocolate. Let the hot milk melt the chocolate, then add in any extras and stir well. Pour into a prepared pan and continue on as in your demonstration. I know this video is old in internet age, but I wanted to tell you that this video made me smile. I really enjoyed your energy and the way you explain the how and why. I'm going to try this for Christmas.
I just made this about 10 minutes ago and it's currently on the counter setting up. It was even easier to make than I thought it would be; the chocolate melts so fast! I made a couple changes though; I only used bittersweet chocolate because I couldn't find the other kind, and I added twice as much instant espresso because I like coffee and hope the flavor comes through a little. Thanks for the recipe 😁
I had just bought a salted caramel and peanut fudge, and came across this video, I'm making this, it looks so delicious, and your never to old to watch "The Dark Crystal " 💝⚘💜 thank you, love your channel
I tried your chocolate fudge recipe...just kept it to cool it down..but it was so easy and great for a first timer..Thank you for all the tips..they were really helpful
I like how you take your time to explain things. When people talk a mile a minute I can't retain what they are saying. My mom always made fudge. None of us ever could understand why her fudge never became a solid. We had to use a spoon to eat it. It was still very good. I wanted to make fudge this Christmas for my family like mom did for the Holidays (but I want mine to be a solid) and I couldn't remember all the measurements of ingredients she used. She used marshmallow cream as one of the ingredients. She used sugar, chocolate chips and condensed milk. The fudge you made looked good. I also see that you did not use marshmallow cream. So maybe that was why hers was a liquid. Anyhow I have subscribed to your channel and I'm going to try your fudge. Thank you for the video.
"The Dark Crystal"! That just brought back fun memories of my childhood. I think I may need to find it online and watch it again, just for old time's sake.

When will your baking show air?? You’re amazing and super easy to watch because of your obvious love of baking and easy explanations. Edit: I forgot to say that I cannot wait to make this using my homemade sweetened condensed milk. It’s even more delicious than the canned milk!
I've made this since the mid 1990s, same ingredients but I use a pyrex measuring cup and melt it in the microwave. 30 second increments until nice and melty. Then stir, pour and cool! But I love listening to you :)
To help with cutting the fudge, dip your knife in hot water and wipe it dry after each cut. Great video by the way and I agree with Sarah-Jane, share with family? Only if they can find it. Mwa-ha-ha. Thank you for the recipe, I'll have to try this one out. I've always done a more complicated cook using sugar, butter, cocoa etc. It doesn't always work out. Thanks again.
Love your videos. My mom used to make homemade fudge when I was growing up but she would always cook it In an iron skillet. But the thing about the iron she had to be extremely careful, careful about under stirring and over stirring and taking it out just the right time cause it was so easy to burn. So even though cooking fudge in iron skillet is engraved in my brain, I'm thinking maybe that's not the best idea? Going to make fudge for Christmas day i hope it works out. 🙃
Yum yum yum, i made 160 little fudges for a charity thing. I added orange zest, gingerbread spices and amaretto 🤩. I cut the fudge with a metal icing scraper, it works really good!! Thanks for this easy recipe 🙂
Every single Thanksgiving my kids embarrass me and talk about my "chainsaw fudge." Yes, a recipe with the candy thermometer. No, I did not know what I was doing. No, I did not use parchment paper. It was a disaster. You would think all my culinary masterpieces of the last 25 years would be remembered, but no. Chainsaw fudge is what I am remembered for. I may just make this and have it on hand for the inevitable story time next week!!!
John you always make something I’m interested in recreating!! Update: I just made this at work. (I work at my dads convenience store) And added mini m&ms! Thanks for the recipe, John!
I always use my longest knife in the knife block (no idea what it 'should' be used for but it's the same length as the bread knife but without a serated edge) & heat it in really hot water b4 cutting up fudge or 'fridge cake' with it. Gives a nice long smooth cut edge with no jagged stopping & starting. I also score the top first to give myself a 'guide' for cutting & plan how big the pieces will be first.
I use guittard bittersweet, Lily's semi and milk. Try throwing in a handful of Lily's butterscoth or caramel chips. Yum. Lily's is sugar and artificial sweetener free! All the choc is organic. Add vanilla, too. Dash of pink salt, just because. And/or press milk and butterscotch chips into top of fudge before it sets. Really good.
I am thinking of trying this recipe for the first time this Christmas. The year was not very good (because of covid-19) I hope the fudge will be good. You have great energy that I can't go without saying, I felt happy and relaxed while watching (And I immediately subscribed - because why not - you are wonderful) A lot of love from North Cyprus.
I made some of this (and PB fudge) and sent it to my brother and sister in law. Since it arrived in a box, he asked me what it was like to be a fudge packer. Wiseass!
‘‘Twas The Night Before Christmas” when it was decided that Christmas would be at my house! I cleaned everything till it shined, sterilized everything necessary (I have an autoimmune disease and I get very sick very easily, so I have to be cautious and vigilant about what’s being touched in my house) and by then it was 6pm and I was just starting my snacks. I came across this post about a week ago and knew I had to make it. Now, here I am at 9:30ish and I’m just starting my fudge followed by my irresistible pecan pie and Chex mix. I hope to be in bed by 11, but the more recipes I come across, the more things I wanna make! Darn you Preppy Kitchen 😂😉!! I’m gonna gain 10 pounds before breakfast even gets here 😅🤪🙃. No such thing as "white chocolate" maybe creamy, sweet confection.
This man is so happy whenever he make a dessert, that's how you know a person has a true love for what they do.

I love this recipe! I've been making it for years in the microwave. Sometimes I add a little cinnamon and cayenne pepper.

Honestly, this is the baking channel i always check if he have something i want to bake. I really enjoy the side comments and funny adlibs.

The Netflix reboot of the Dark Crystal is beyond fantastic! I am a fan of the original as well. I've been telling everyone I can to watch because it its absolutely amazing. I'm getting a stand mixer for Christmas and can't wait to start baking with my family and trying your recipes.
Just made this for our father's day dinner! Super easy. Hope everyone loves it! Thanks John!
Was it too sweet?
I love you! You are such a joy to watch! Thank you for bringing Light into my life.
Perfect recipe! Turned out so good. I actually halted the walnuts and added a half cup of wine soaked dried cranberries. And 1 tsp of chocolate wine. Amazing!
I’m going to have a baby just to get into that schools parent mixer.
ROFLMAO xD
I love how he whispers "small town gossip". I love a good two ingredient fudge!! Love that the Goat gets an opinion. This is such an amazing channel, it's so soothing and calm and reassuring that if ou do manage to mess it up it is not the end of the world.
John you need your own show on the Food Network, I would put you up against the Pioneer woman any day, and I like her too.
Yessssssss!!
2020 or bust!!!
I like the freedom he has to make whatever he wants. I would hate to see him lose artistic control over his show.
Oohhhh....good point Jarod! That never even occurred to me🤔
Using recipes that have been around longer than his grandparents have been alive?
I know this video is old in internet age, but I wanted to tell you that this video made me smile. I really enjoyed your energy and the way you explain the how and why. I'm going to try this for Christmas.
Oh this takes me back! This is the recipe my mother has used since I was a little kid. It is amazing! Even tastes great with walnuts!
Many moms are fudge packers on the quiet, however few share that decadent secret with their daughters. Happy packin!!!!
You are so fantastic and an instant mood-booster!
Thank you for this! Such a great idea for some upcoming holiday gatherings!
I totally agree! He is an instant mood booster! That describes him perfectly 🥰
Just made this with pistachios. The best ever. Thanks.
yayyyy
Found this on Christmas! Fudge was so easy and turned out great. Came for the recipe, staying for the personality. He's just adorable.
I had just bought a salted caramel and peanut fudge, and came across this video, I'm making this, it looks so delicious, and your never to old to watch "The Dark Crystal " 💝⚘💜 thank you, love your channel
I've never wanted to befriend an adult more than this man😃✋
Dip the knife in boiling water then wipe for an easier cut. Should do the job, no prob.
Lovely!
The dark crystal is amazing!!!!!
"The Dark Crystal"! That just brought back fun memories of my childhood. I think I may need to find it online and watch it again, just for old time's sake.
it's on netflix last time i checked
Please never stop being precious, you are one of my favorite channels and a huge inspiration in my journey to becoming a pastry chef
double-boiler makes melting easier if concerned about burning and often I've used the microwave when in a hurry. My mom used to make this every year at Christmas! great recipe! super easy!
I make fudge for all my family and friends at Christmas. White chocolate with cranberries and pistachio is beautiful and delicious for the holiday.

John, Dinner Party Tonight hostess, Randy Sharp, gave your fudge recipe a shout out and made a batch! Yours is the recipe I'll be making for gifts this Xmas. Many thanks!!
Well I just found this channel today and made this fudge within an hour of seeing it. I cut the recipe in half, subbed Cointreau for the vanilla and topped the fudge with chopped Craisins and 1oz of shaved white chocolate. It is DIVINE. Thank you! I can't wait to make more of your recipes.
those eclairs will be the BEST you have eaten or ever will eat. Try them next

I'm 35 years old and I have been in mexico ever since I was 15, and I have never tasted fudge since I was a little girl, I never knew it was so easy, I am making this ASAP!!!!! P.S. I love you videos

“Hello Friend!” This is wonderful! And timed so well for the holidays! I hope the mixer goes {went} well. ⭐️
Thanks Debra! Hope you're having a wonderful November!!!
Do you think almond extract would taste good with sea salt and almond slices over the top?
Just a couple of drops, almond extract is pretty strong
Love your videos. My mom used to make homemade fudge when I was growing up but she would always cook it In an iron skillet. But the thing about the iron she had to be extremely careful, careful about under stirring and over stirring and taking it out just the right time cause it was so easy to burn. So even though cooking fudge in iron skillet is engraved in my brain, I'm thinking maybe that's not the best idea?
Going to make fudge for Christmas day i hope it works out. 🙃
I just bought a beautiful tray for fudge today! For my lovely husband!!!
Yum yum yum, i made 160 little fudges for a charity thing. I added orange zest, gingerbread spices and amaretto 🤩. I cut the fudge with a metal icing scraper, it works really good!! Thanks for this easy recipe 🙂
I made this fudge yesterday to take to a holiday party. Hands down the best fudge ever and very easy. Thanks for the recipe!
My daughter is 40 now. She watched the original Dark Chrystal endlessly. Treated only be Secret of Nimh.
Every single Thanksgiving my kids embarrass me and talk about my "chainsaw fudge."
Yes, a recipe with the candy thermometer.
Wait....chainsaw? 😂😂
We NEED to hear this story!! Tell ALL. You can't just hint at it and leave us hanging, you know
John you always make something I’m interested in recreating!!
Update: I just made this at work. (I work at my dads convenience store) And added mini m&ms! Thanks for the recipe, John!
You could make a fortune making variations on this and selling them.
I love how you give details of the measurements. You made it easy for me, a newbie in baking and making sweets.

You have great energy that I can't go without saying, I felt happy and relaxed while watching (And I immediately subscribed - because why not - you are wonderful)

Thanks for the awesome recipes and I look forward to discovering even more delicious treats!
