So the insulation cavity in Steve's model is not actually vented? Why would I need to vent the space between two sheets of plywood 1.5" apart?

They are both vented, Steve's model is over vented, as it's built is under vented. It is vented to eliminate condensation and give the roof sheathing drying potential .

You can get the air in either way with a fascia style vent.You could foam and then insulate for more R.Lot of ways to build
