  • Ingredients
    - 1 red onion, finely diced
    - 5 cloves garlic, finely diced
    - 1 green chilli, diced
    - 2 tomatoes, diced
    - 3 potatoes, diced
    - 1/2 large (or 1 small) cauliflower, cut into florets
    - 1/2 bunch coriander, rough chopped
    - 3 tbsp grapeseed oil
    - 1 tsp cumin seeds
    - 1 tsp turmeric
    - 1/2 tsp chilli powder
    - 2 tsp garam masala
    - 1 tsp ground coriander
    - Salt to taste
    Method
    1. Start by heating the oil in a large pan or wok.
    2. Once the oil is hot, add the cumin seeds and cook for 2 minutes.
    3. Next, add the onion, garlic and chilli and sauté for another 2 minutes.
    4. Add the rest of the spices and sauté for another 2 minutes.
    5. Add the tomato and stir well.
    6. Add the potato, mix well and add 200ml of water.
    7. After 5 minutes, add the cauliflower and stir well.
    8. Stir this every 2-3 minutes and cook until the potato is soft but not falling apart. If it gets too dry, don't be afraid to add small amounts of water to the pan.
    9. Serve with roti and enjoy!

      @@SaoirseVisceral it doesn't look like that in the video cause generally potato and cauliflower are used in the curry after boiling them to a certain level or you can do that process by adding more water to gravy and let the vegetables boil with gravy and spices, by closing the lid for few minutes. In that way they are soft, cooked well and delicious cause spices are properly infused

      That's because we regularly eat it and use it every day. If it had been a traditional Western dish and India hadn't heard of it, then aloo Gobi would've sounded just as strange to us as potato cauliflower

    That aloo gobhi was legit. Never seen a non desi chef/cook make it so authentically.
    I would highly recommend adding green peas to your aloo gobhi especially when they are in season (technically the concept of season is not applicable in North America as all your peas are frozen), it enhances the dish 10x both visually and gastronomically.

    You could also shallow fry the cauliflower in the same oil before adding the tomatoes. Makes them crunchier!

      Shallow fry the cauliflower and boil the potato and shallow fry them too before mixing with the masala.
      Try it out. It works like magic!
