This is the specialty dessert of one of my closest friends. She makes this for all the important things. We camped together for years when our kids were still at home & she would bring one to every camping trip. It's delicious! I make one very similar that my mom always made, but it's topped with cherry pie filling!

Sometimes we need a larger pan (9x13) to take to a potluck or get-together, but most days, I would just cut it in half and make in the 8x8, as we showed in the video. One of our family favorites! My dad always wants it for his birthday or Father’s Day. If I tell him I’m bringing chocolate eclair cake, he says “Agaaaain???” He’s too funny. 😂 I’ve never added cream cheese, though - will definitely try it! Thanks!

This is one of my family’s favorite cake! I use a chocolate frosting from a tub and warm it up a little and but it on top!

I've heard of that variety (and we have had other subscribers say that they warmed up a tub of frosting too), but I don't tend to buy tubs of frosting and really prefer to make my own whenever I can. Yes, I think my two favorite summertime desserts are my mom's lemonade cake (which we've made and shown in our weekly dinner videos) and this one. This one probably edges out because number one, it's no bake (no turning on the oven and heating up my kitchen), and number two, hello, Chocolate!! But I do love and adore my mom's lemonade cake. It's really easy and is sort of a "poke" cake, where you poke holes in it and then pour a really lemony glaze over it, so it soaks in and is very soft, just like this one. I needed this . It is so hot in NY right now! A northern girl can't handle this heat!😆 I'm trying to think of things that do not require turning my oven on. Suppose to rain and cool off but it's been 85 here. Not normal in western NY in May.

Thank you for showing this version using unsweetened chocolate. I've never made similar recipes because they use canned frosting, which contains a boatload of calories, sugar, and saturated fat...and who needs that? Using unsweetened chocolate is a healthier alternative and one that I will try.

Yes, I'm with you, I prefer to make my own sauces, dressings and things like the chocolate topping for this easy no-bake ice box cake. I know of people "in real life" who make this using the canned frosting, and we've had several other subscribers comment that they do it that way too, but I much prefer to just make it myself with squares of chocolate that I can easily melt in the microwave. Plus, since I often make the half batch we showed just for us, we don't have most of the can of frosting left over that I have to find another use for, LOL!! @Angie Cantrill - Hi Angie! Thank you so much for stopping by and watching! The graham crackers totally get soft, but not really mushy, as the custard soaks in and they are no longer crispy. It's a really soft and yummy dessert though, but if you are looking for the crackers to remain crispy, then this one is definitely not for you! We've made my mom's lemonade cake in the past, so it should be in a few videos. Let me know if you need me to find and point you to it specifically, it's really good and easy (and is a sort of poke cake, where you poke holes in it hot out of the oven and then pour a lemonade glaze all over it so that it soaks in, so another really soft and yummy dessert!). We are definitely still enjoying our break, and have so many things on the calendar, so the videos will remain sporadic for a while. @Angie Cantrill - ooh, good, I was hoping you were ok with the texture or consistency of them being softer, because that is definitely the outcome. I don't see how the graham crackers could remain crispy while soaking up that custard in the fridge for hours :) I just did a quick search, and it looks like I last shared my mom's lemonade cake when I made it to take to our big family July 4th get-together way back in 2019. I make this but are use canned frosting. I put it in the microwave for a minute. Till it gets a little on the loose side and then poured over the top gram cracker and let her let it harden and boy is it good PS make sure you take the lid and foil off of it.

They aren't wet at all, just softened from the custard/pudding mixture that sets in them. As you could probably tell from the picture at the end, it just all sort of blends in together, the crackers are no longer crispy, just soft. But I totally get texture issues, I have plenty of them myself!!
