    Thanks Tom. You' ve really answered to my question with this video. I wanted to buy a DeLonghi to use it with a pre-grounded Lavazza coffee, yes that recommended for the Moka Pot and I see that, though it works, it's not exactly the result I was hoping

    I would love to see a comparison with a non pressurized filter with the same coffee beans old vs fresh and the same brew receipt… just to compare the crema, and the output amount ratio! Love your Chanel, you was the reason I bought the dedica ec 685 and non pressurized filter holder and basket as well timemore chestnut grinder C3 pro 😊

      Hi there! The result is pretty much going to be like my last video, comparing the pre ground coffee to the freshly roasted and self ground coffee. The older beans will give an extraction with much lower pressure and no crema. It's ugly.

    This is an interesting subject that is rarely covered in enough detail to fully explain what is happening.
    One variable that is rarely discussed is the impact of the amount of coffee used affecting the coffee bed depth which determines the pressure gradient through the puck and the amount of water that passes beside a given piece of coffee in the puck.
    Also, with the type of pump used in a lot of coffee machines (like this one), there is a narrow upper pressure band where the pump is capable of creating flow. If the pressure goes above this the pump cannot produce flow anymore and effectively stalls. It is why a lot of machines have a pressure bypass valve to prevent this from happening. My DeLonghi La Specialista does not have this valve, and if you grind the coffee too fine it sees the overpressure and reduction in flow and aborts the extraction.
    The absolute pressure in the puck affects how much the carbon dioxide released expands whilst in the puck, which is a whole subject in its own right. A lot of "crema" in videos is just white CO2 foam that really does not affect the coffee much if you let it sit to off-gas before drinking. Of course the portafilter diameter is also a factor in all of this. If you want a good extraction with less finely ground coffee you would need a smaller portafilter diameter and a slower extraction, like in a classical machine designed for good single shot extractions. A 58mm portafilter seems optimal at around 18g of finely ground coffee and I can get decent extractions with 14-24g of coffee. If you can get a 58mm portafilter with unpressurized basket to do a good extraction with a traditional amount of coffee used for a single shot, I would like to know the secret.

      Hey Tom, thanks for your thoughtful response! The pressure gradient through the puck is a good visual term, never heard that before. I agree that these types of machines fault out after a certain point of pressure. I think they just use the flow meter to determine that no water, or not enough water is turning the little turbine inside the water flow meter. They do however have a type of OPV, that they term "anti drip valve." If this breaks, the water gets rerouted back into the tank, however I do not believe it regulates pressure in normal circumstances.
      It's funny what you say about smaller portafilters. I worked in a fancy coffee shop part time, and they used Dalle Corte machines, with I believe 53mm portafilters. I think in the industry, they often use smaller than 58mm. Not sure how 58mm got established as the go to norm in the home setting. Perhaps it just has to do with being able to dose 18-22 grams. At the coffee shop, we dosed 15.5 grams, and the extractions were wonderful. I think the machines were just dialed in to get the absolute best out of the 15.5 gram dose (high extraction ratio).
      I don't do much with single shots, since they are a pain in the butt to prepare. The baskets are often tapered, and very small, and hard to tamp without causing a vacuum that tries pulling the puck out upon removing the tamper. That being said, I have gotten a few decent shots from the GCP, while just carefully dosing and tamping. Too fickle for me to do that often though.

      @@TomsCoffeeCorner 58mm probably got established with the popularity of the E61 group-head, which I personally find to be quite an antiquated design for home use. Yes, I would guess that the sweet spot for 53mm would be around 15g with a 2.5:1 extraction ratio. I would love to own a manual lever machine with a 53mm portafilter.
      I am currently using 16g of coffee in a 14g basket with 58mm portafilter and 2.5:1 with nearly all the air removed from the grouphead before starting the extraction with an extraction rate peaking at about 1.5g/s. My results are not particularly sensitive to pressure applied after a complete pre-infusion of the coffee at 1-3 bar, but grind size with respect to coffee type matters a lot, as you demonstrate.

    Hi Tom, off topic but I just removed the pastic insert from the Dedica portafilter and was able to fit in my old non -pressurised single wall doube cup basket that I kept from old Delonghi machine. I just pulled a double shot using the same pre ground Lavazza coffee that I have and I would say the coffee that I extracted was worse than before -very thin texture and no crema, at all. Of course, without the plastic insert the coffee also came out a bit unruly . I shall lkeep expermenting with the tamping pressure next time. I don't want to cut the plastic insert until I am sure that this hack is the way to go. I am not ready to invest in a grinder for this set up just yet and, of course, have the option of reverting to the original configuration. Thanks for all your inspiration and advice!

      Hi Chryseas, well with pre-ground coffee, I would suggest sticking with the pressurized basket and insert. You likely won't get above 4 bar otherwise.

I do plan on getting a bottomless portafilter for my Bambino Plus when I get back to it as I will be using beans in my new Smart Pro grinder there! I will keep watching!

      If you remove the plastic inside the original PF, you should be able to use the non pressurized basket.

    Hi Tom. i am using ec685 with non pressurized basket . I'm wondering whether to upgrade to gaggia classic pro or another device. Will coffee quality improve? Just brew 3-5 cups a day

      The GCP has more potential than the Dedica I'd say, but Dedica has better ergonomics imho.

    3 things I would like to ask: Isn't 14g a bit too much for the Dedica ? If I use on mine more than 12.5g, it either chokes or the shot is bitter.
    Have you tried to fiddle with the infusion time on the Dedica ?
    In your opinion, how much of an upgrade is the Eureka Manuale from the Chestnut C3 or the Baratza Encore ? Is it worth upgrading over any of these 2 or it's better to save up ?

      Hi there! The Manuale is a very good grinder, much better for dialing in than the C3, and better all around than the Encore. The encore is also very slow for espresso. If I were you, I would save up until the Manuale can be bought. I always use 14-15 grams, but I also use an aftermarket basket. Check the description for links. Cheers!

    I tried making coffee with this normcore bottomless portafilter and it produced non-existant cream. Just black water. I put the 'pressurised' basket in the bottomless portafilter and it did what yours did. I guesss with the normal portafilter it prevents the bubbly cream from the jet stream. How can I get creama with a non-pressurised basket that comes with the normcore bottomless?. No matter how well I tamp, there is no difference. Do I need super fresh beans and flawless tamping? The pressurised basket lets you get away with mediocre tamping.

    Tom, how does the Dedica L'arte stack up to your Dedica modified with the Rancillo steam wand. I am curious if there is a notable difference in steaming. Also, how do you rate the Dedica L'arte steaming experience against the Bambino Plus. The Bambino Plus has a four hole steam wand ( the more basic Bambino only has one hole in its wand. ) After using my new Dedica Style ( with the panarello removed) for a solid week now, I am happy with the purchase for what it is and think it compares favourably to the basic Bambino model. I definitely would like to switch to non pressurised baskets in the near future but overall find it to be a solid entry level machine and would have considered buying it instead of the Bambino ( price being a deciding factor) if I was to revisit my purchasing decision. The Dedica L'arte still carries a premium price as it is newer to the market. Thanks for all your detailed videos in two languages!

      If you're able to, increase the hole size one he pressured basket to get rid of the effect. Tom has a video on this. Then going bottomless is a good way to go, I always enjoy watching :) I am now starting to get the itch to do some mods to mine, I have been using the steam wand a bit more now without the panarello and getting better... however its so short and there is not much room for better control.

      ​@@chrispygingerpie Practice makes (near ) perfect with the milk texturizing. I only tried the Dedica panarello once and it is by far the worse one that I have encountered. The rubber wand actually does a fairly decent job if you have good technique. Watch some barista videos on steaming as they help a lot. As Tom knows , I now have three coffee machines,ha,ha! so I have been able to compare them. I know that the Dedica is a decent machine but I really am not a fan of their included baskets! Unfortunately my older Delonghi 51mm unpressuruzed baskets would not quite fit into the Dedica portafilter.....

      Hi Chryseas, I like the Arte better than the Dedica with Rancilio wand. The Bambino Plus has the most steam power of all three however. I would say Bambino Plus > Dedica Arte > Dedica Rancilio.

      @@TomsCoffeeCorner Thanks Tom! That was exactly what I was wondering and suspected. I don't think it is worth voiding my Dedica Style warranty to try and change out the steam wand as I am actually quite happy with the rubber wand for what I will need this set uo for. I think Delonghi listened to you and have modified the rubber wand so that it does not fly off in use ( well, so far!). After using my Dedica Style, I would definitely lean toward buying the Delonghi L'arte model as opposed to the Basic Bambino but I do agree that the Bambino Plus is a great machine and has fantastic steaming capability.

      Hi Nina, I’m afraid so. The non pressurized double baskets do not fit properly in the stock portafilter, due to the plastic insert. But you could also cut the bottom off the stock one with a hack saw, if you like as well.

    I bought bottomless portafilter to use with my delonghi and the espresso shot came out with no creama at all. I USED the same coffee with the delonghi portafilter, it was no problem at all. Not sure what's happening with my bottomless one.

    Do you have an Amazon recommendation for a stainless steel non-pressurized double shot filter basket for the Delonghi? I ordered the bottomless portafilter that you recommended and it works great. I would like a deeper filter basket that the single shot that comes with it.

      Well, there's basically two options that I can recommend. Wood or metal. Normcore is a brand name. The wooden one gets good reviews too, though.

    I now have the Dedica and it came with the cheap delonghi blade grinder, will this work well ? And I have looked around for pre ground espresso but they all say on the back for filter and French press not espresso 😟

      pre ground coffee is usually not for espresso. blade grinders are usually not good enough, you'll have to look for an okay burr grinder as far as I can understand

      Nope, a blade grinder will not cut it. Gotta bite the bullet and get at least a hand grinder or a Graef CM702 burr grinder, which are both under 100 euros.

    I can't get rid off the bitter taste that my Dedida deviler to me.
    I used a Kinu M47 Classic grinder and played with alot of setting: water temperature, grinding size, time of extraction, ratio, coffee, non presurized portafilter... but nothing change, first taste is bitter. Over the six months of attepmts and alot of coffee. This machine is killing me because i am very stubborn.

      @@TomsCoffeeCorner Iulius Meinl Espresso Arabica, Tchibo BARISTA Caffè Crema, some Lavazza and Jacobs all medium roasted and a fresh slow medium roasted coffee from a local coffee shop wich had a good taste to my office automatic machine.
