- Recreating famous Japanese Shiroi Koibito Biscuits at home.
In today's attempt at recreating famous sweet treats and desserts, I decided to recreate one of my favourite biscuits: Shiroi Koibito which consists of a chocolate square sandwiched in between two crispy langue de chat biscuits. This is a fairly simple recipe that you can recreate at home, you'll need a couple of tools to give you that extra professional look!

My husband had clients from Japan. Every time they came to the states, they brought him a good sized box of these cookies and sometimes they were in a beautiful tin. My husband would bring them home and share these delicacies with us and then we would put them away for a special treat here and there. They were my husbands favorite cookie! Well, we haven't had them in years and we can't afford to buy a few of them for $75 😮

Omg, these cookies are amazing!!! They taste way better after 24 hours. I had such a hard time breaking the chocolate out of the stencil sheet because the chocolate pieces were so fragile. Took several attempts. Will be making another batch again soon. Thank you Mai!!

Yep, got some chocolate fit for baking and tempered :)
for better taste put in refrigerator with closing it or not ?
I like to keep it in a air tight container outside - the humidity of the fridge might make the biscuit soft
According to the formula you wrote:
1 egg white. = grams ???
Doesn’t need to be that precise, but egg whites are usually roughly 35g

Didn’t work for me:( I used stand mixer
At the egg white part it didn’t fluff up
